The town is named after its 11th-century church dedicated to Saint Remi, bishop of Reims in 496, who baptized Clovis. For a time, the parish was known as Saint-Rémy-de-Beaulieu-lez-Chevreuse, "lez" meaning "near" and later "lès". Chevreuse comes from the Latin caper, meaning "goat". This suggests that herds of goats used to graze in the area. Neither the Hundred Years' War, nor the Black Death, nor looting spared the village. But the rebuilding of the village gave rise to prosperous agricultural activity: by the 15th century, Saint-Rémy had six mills. It was also at this time that a number of prominent families settled here.
