Boasting an original geographical location, this estate of almost thirty hectares, thirteen of which are AOC Patrimonio, was created in 1850 by the Santamaria family on the edge of Oletta.

Unlike other roadside estates, the Santamaria estate overlooks the picturesque mountain-lined Lake Padula, nestled on the outskirts of the village. The setting sun makes these remote lands seem like the end of the world, and they're definitely worth a visit! Organically farmed since 2014 and using a "culture raisonnée" approach since the beginning, the estate has been developed by Jean-Louis, a5th-generation descendant of the Santamaria clan, supported today by his son Thomas, as well as Matisse, the figurehead of the 6th generation.

In 2016, Thomas gave the family business a facelift and initiated a number of innovative changes: he proposed a new visual identity, which today stands out from the appellation's traditional labels, developed Tranoï (a contraction of Tra di noï, " between us ", in Corsican), a fine range of vins de pays, and in 2018 created "Montre tes yeux", a fresh and surprising red based on cinsault, a most original proposition for the region, but one that has proved popular. The red, white and rosé AOCs are a must-taste. Very popular in Corsica and on the mainland for its more accessible flavors, the range of vins de pays has been a victim of its own success, and certain creations are now impossible to find. The Aghione cooperative, created in 1975, groups together 31 wineries. The vineyards extend over 850 hectares of vines planted directly around the winery, a large part of which are in organic conversion and certified as having a high environmental value. The vine feeds on a clay-limestone terroir, with clay-limestone soils, red sands and rolled pebbles. During the 13th edition of the Mondial du Rosé, the wines of the Vignerons d'Aghione, the only Corsican wines to be rewarded, won 3 silver medals!

Philippe Farinelli, a talented oenologist, has been one of the island's leading winemakers since 1998. But his property was already considered as one of the jewels of Corsica's winegrowing in the 19th century! His range is remarkable and very much in demand. Notably the sublime "Casteddu" cuvée in red, white and rosé, made from selected plots with low yields and aged in oak barrels, ideal as a wine for laying down. The Domaine Saparale AOC Sartène cuvée is also available in all three colours and is the perfect accompaniment to all kinds of meals with its distinctly Sarthe accents. After a few years of operation, Joseph Rioli switched from the traditional press to the continuous chain in 1995. This modernization allows him to press up to 400 tons of olives each year. He runs a 6 ha estate where varieties such as ghjermana, Sabine or picholine are grown. Two PDO oils result from this: the mill of Prunete (olives picked on the tree, a blend of ghjermana, sabine and picholine) and the olive oil of the convent of Cervione (olives picked on a net after their natural fall, predominantly ghjermana).
