The beautiful and large wine domains are often beautiful family stories and Château de Argères is one of them. For five generations now, the Cross- Mayrevieille family cultivates its vineyards perched on a hill in Minervois, between the Black Mountain in the North and Alaric and Pyrenees in the South. An estate of over 105 acre on calcareous clay soils, where grape varieties such as: Carignan, Mourvèdre, Syrah, Grenache and Sauvignon are cultivated. The wines are vinified and made in the estate (cellar of 600 m2) in the greatest respect of tradition in order to offer delicious vintages; red (the three red Argères, Aphrodite, Caille Rôtie, Tellus and Authentique), the three white Argères and the three pink Argères. All these wines have beautiful robes that blend the refinement and aromatic complexities of great wines. Les Vignobles Foncalieu came into being in 1967 out of Union des Caves de Puichéric, Thézan-des-Corbières and Vignerons de la Cité. Since 2007, they have engaged in a sustainable-development approach, commited to respecting the environment, and accompany their members in this transformation. Situated between the vineyards and the garrigue, this former 12th-century convent was taken over as a family property in 1820. Today, Anne and Xavier de Volontat welcome you in the former convent chapel which has been transformed into a picturesque cellar. The vinification is done on a plot-by-pot basis, and the harvest is largely done by hand. To be noted: the Randolin cuvée is regularly awarded a medal at the Concours général agricole. You will be welcomed by Johan, the master of the house, who will kindly guide you to taste one of his 100% Belgian artisanal beers, among the 201 references he sells. In this beer bar and chip shop, you can enjoy eating and snacking, spacious and pleasant with its large oak barrels and tables, you can take a seat to discover or rediscover all kinds of specialities of the flat country (snacking) : so enter Belgitude! Belgian-style French fries, Ardennes brochette, fricadelle, viandelle, croquettes, mixed salads...all at very low prices. More than two centuries ago, the pond of Lézignan was the fishing place preferred by the archbishops of Narbonne, now disappeared, it gave place to many plots of vineyards that Château Etang des Colombes perfectly exploits. Here, for four generations, the work of the vineyard has been guided by the same goal, a quality of the grapes at the harvesting so that the material testifies to the specificity of the ground in the glass. A superb underground cellar was dug for the barrel aging. You can visit it, just like the museum of the property which has belonged to the Gualco family for a century. Gris des Colombes, very fruity in the mouth, a summer wine par excellence, or the sweet wine with taste of honey and jam, walnut with a very good length in the mouth, it is divine with foie gras or roquefort. Since 2001, the method has changed to improve. Inspired the Alsatian late grape harvest, here, the grape is collected at the end of October then it is directly pressed, vinified and put in barrels. Château Etang des Colombes offers a unique wine that is not to miss. Do not hesitate to get there (by appointment) to taste and enjoy rates as sweet as their viognier passerille!

DOMAINE DU GRAND PLANAL

Stephan Roger took over from his grandfather in 1990. The estate is located in the heart of the village and can accommodate its customers and help them discover all the aspects of the exploitation. But beware, visits are only by appointment. On the estate, the wine harvests are mixed, part of them are by hand, the other with machine that sorts and removes anything that can damage the high-quality maceration. The grape varieties are vinified separately, tasted throughout the winemaking and assembled before being placed in barrels for a part: Domaine du Grand Planal "aged in oak barrels." In terms of grape variety, the estate gives way to grenache, carignan, and mourvèdre grape varieties on stony-clay soils, cinsault and syrah on rather sand-clay soils, but there are also merlot and cabernet sauvignon. Stephan sometimes makes his customers taste unassembled grape varieties of the year, to allow them to compare with the bottled finished products, discover different tastes, aromas, and understand the complexity of grape farming and winemaking. Owned by the Boyer family, which has been making wines for five generations, Château de Caux-et-Sauzens is located a few minutes from Carcassonne, on the banks of the Canal du Midi. The château's wines, some of which are award-winning, are made from a variety of grape varieties that cover more than 86 hectares, including 22 hectares converted to organic farming. The AOP Malepère was awarded a gold medal at the 2019 International Wine Challenge, a silver medal at the 2019 Terre de Vins Competition and obtained 3 stars in the 2019 Hachette Wine Guide. Chardonnay and sauvignon produce the round and fruity Pays d'Oc whites, which won a gold medal at the 2018 Challenge International du Vin. The IGP Pays d'Oc red wines, also crowned with gold, are made from a blend of Cabernet Franc and Merlot, they highlight red fruit aromas and woody notes, which persist in the mouth, blending perfectly with meat and cheese. Rosé wines are also in the spotlight at the château, which produces PGIs also made from a blend of two grape varieties, cinsault and grenache, which give the wines fruity citrus aromas. Among the wines proposed, we chose to introduce you to the classic: Jordane de Lauran 2008, a red wine that is homogeneous, well-balanced, supple, delicate, and pleasant. We have a soft spot for the Saint-Marcellin 2007, composed of Syrah, a red wine with a very intense colour, a complex nose of ripe fruits, spices, and venison fur, subtly vanilla and undernotes. The estate has existed since 1900. The ancestor Louis Biscan worked 5 hectares of vines. The estate took the name of Biscan-Pujol by marriage a generation later, and it was in 2000 that André Izard took part in the estate. Marie-Claude and Paul Chefdebien are committed to making the most of nature while preserving it. Currently, it is Louis Colomer who exploits the 24 hectares of shale hillsides, the main part of the grape variety consists of carignan, grenache noir and syrah. Since 2009, the farming has evolved to become organic, and since 2012, it has been the case. The philosophy of this estate is remarkable "Never ask to ground more than it can give. Enhance qualitatively what it gives to you". We particularly recommend you two Fitou wines: Colline des Fées aged in barrels and Vieilles Vignes where syrah and old carignan blend in harmony. The estate also offers a cottage that is referenced as Gîtes de France 3 épis, an accommodation with large capacity and a shaded garden but also its olive oil from the three hectares of olive trees that you can admire.

They met in a cellar of Hérault while they were students, Sophie in oenology and Philippe in agriculture, joined their lives and grew this vineyard of 7 hectares over the years. Two major vintages stand out and invite you to their names, to idleness and to pleasure. The Terrassettes is a assemblage of several varieties and Les Sundays brings together snails and Grenache. Created in 1935, the Les Celliers de l'Aussou cooperative works on the vineyards located beside the Fontfroide, at few kilometers only from Narbonne, and in the middle of the scrubland. The special feature of the wines of the estate is that they are made from selected plots and harvested by hand. With 50% of black carignan, 35% of black grenache and 15% of syrah, you will enjoy the tasting of the red AOC Corbières Chefdebien. After its vinification in carbonic maceration, the wine is aged for 10 months in oak barrel. It goes well for example with cassoulet, the Aude traditional dish, but can also be kept for a few years depending on your patience. Luc Lapeyre is an authentic winegrower who expresses himself through the work of the land he loves so much. For him, the winegrower's work must begin with the soil and its originality. The wine is matured in oak casks and 500-litre barrels, as written in the traditional manuscripts of the vinification of Languedoc wines. Winemakers Champagne from father to son since 1872, Roland Augustin and his son Loïc and Yann made Fabas castle a reference inevitable in Minervois. The 62 acres of vineyards into their roots in a clay and limestone soil. These thin floors give poor are synonymous with aromatic concentrations. After picking off, the red grapes have a long maceration, followed by an aging in oak of the Tronçais forest. The reference of the domain: the vintage Lord, assembly of 60 of syrah and 40 of grenache, high in barrels from 18 to 24 months. Low for wines Mourral (syrah, grenache and 10 discount mourvedre) and Serbolles, high in tank, by traditional winemaking. Our favourite is the vintage Lord - - white, with vermentino, high seven months in burgundy barrel with bâtonnage on the lees. Intense, complex and expressive, wines from the estate bear the name of this local that gives these flavours of authenticity to them.

Heir of the family business founded in 1890, René Salasar makes Blanquettes de Limoux whose reputation extends beyond the borders, at Domaine Beausoleil. The blanquette is prepared from grapes harvested by hand in the Salasar vineyards that grow over 60 hectares at high altitude, on the cretaceous strata of Haute Vallée de l'Aude whose cool climate delays the ripening of the grapes. The rigour in the vine-stock work, associated with careful winemaking, give their wines a remarkable authenticity. You should note a beautiful pallet of cremants and blanquettes-including the must of Salasar, a prestigious crude wine-and a remarkable chardonnay "Domaine Beau Soleil". In 2013, Maison Salasar joined the Bonfils vineyards whose wine heritage already has 17 estates and castles in Languedoc-Roussillon and 3 in Bordeaux one. The Bonfils vineyards have been more seduced by the quality of the effervescent products by Beausoleil, and by the knowledge to make and the fame of the Maison Salasar which remains one of the producers of bubbles - blanquettes and cremants-the oldest ones of the sector.
