Originally from Marseilles, Camille and Mickaël have forged strong links with local producers to obtain their supplies in very short circuits: smoked trout from the nearby fish farm; AOP pélardon from Montméjean, or flour from the Moulin de la Borie. Every day, the two young men make their own bread which they serve as toasted sandwiches. Committed to the environment and to organic or sustainable agriculture, the couple is committed to making from A to Z all the dishes on their menu (desserts, ice creams and sorbets included).

This attractive organic mini-market, located on the outskirts of Clermont-l'Hérault, covers 450^m2. Clarisse and Laurent Nourigat, the happy owners, convey the idea that you come here to do yourself good. Organic products are omnipresent: olive oils, detox and draining drinks, herbal teas, a variety of teas - including one with orthosiphon from Herbier de Gascogne - as well as a complete range of gluten-free and sugar-free foods, dried fruits, nuts, cakes and cereals. On an excellent, high-altitude terroir of predominantly limestone, Raphaël tends 8 hectares of vines using certified organic and Demeter farming methods. "The precepts of biodynamic viticulture reveal our terroirs and enable the wines to express their identities to the full," he confides. Raphaël is a goldsmith of vines and wine, a man in love with and respectful of nature and its cycles. Hand-harvesting, natural vinification, zero inputs... minimal intervention to let the terroir speak for itself and produce natural, fresh and authentic wines. We love it!

Domaine de Roquemale, which means "bad rock" in Occitan, covers thirteen hectares. Here, Valérie and Dominique Ibanez work with a smile and passion on a clay-limestone terroir for a small production, all organic. Among the wines of the Grès de Montpellier appellation, the Cuvée Mâle is a wine with beautiful aromas on the palate. Both powerful and sweet, this pretty nectar finishes on a fresh note. Le Méli-Mélo" is a thirst-quenching wine just the way we like it. Overall, the nine cuvées produced here are as sweet as they are good.

When an Australian man meets an Irish woman while making wine in New Zealand, the butterfly effect gives birth a few years later to two beautiful children and a wine estate in Faugères. In 2010 Nicolas and Amandine decided to give another dimension to the family estate by making their own wines in an organic way. Passionate and respectful of the land and the vines, the grapes are harvested by hand and then vinified in vats to give a nice range of sparkling and still wines in AOP Crémant and Blanquette de Limoux and AOP Limoux white. Its concept, a grouping of local producers giving pride of place to the farmers of Cerdanya and Capcir. Seasonal fruits, vegetables, meats and of course Catalan charcuterie, cheeses from the surrounding farms with goat, sheep or cow, milk and yoghurts, local beers and wines. A very large stall, located near the main entrance of the Halles, where the welcome is very friendly. Christophe Clément offers: fruit, vegetables and complementary organic products (brown sugar, oils, cereals, salt, compotes, jams, spices, soups, cooked corn on the cob). The organic stall offers four or five varieties of apples all year round, for the little ones' stewed fruit, and as many kinds of salads. The rest varies according to the season.

On Thursday mornings, greengrocers, butchers, shellfish, olive and other succulent products are sold in the Cours Mirabeau. That same day the flower market is next door, quai Victor Hugo, with plants and cut flowers. Non-food products are sold on the Promenade des Barques and Cours Mirabeau on Thursday and Sunday mornings. On Tuesday mornings, the "fripe" and Saturday mornings the organic market offering meats, breads, poultry, honeys, cheeses, wines, fruits and vegetables are held Cours Mirabeau.
