A very ancient local aperitif, Jean-Philippe Barbedette's cartagena comes from white grape varieties. Right after the pressuring, the must is mutated with a country alcohol. Aging in oak barrel for several months, lightly worn, it is perfect on the foie gras dessert and of course aperitif. But the production of the estate does not stop at Cartagena, it also finds the crémant of Limoux and various pilgrimages.
