CHÂTEAU FABAS
Vignerons Champagne from father to son since 1872, Roland Augustin and his sons Loïc and Yann made Château Fabas an inescapable reference in the Minervois. The 62 hectares of vines have their roots in an clay-clay soil. Low low yield soils are synonymous with aromatic concentrations. After égrappage, red grapes enjoy a long maceration, followed by an ageing oak barrel of the Tronçais forest. The field reference: the Lord, assembling 60% of Syrah and 40% of Grenache, high in barrels from 18 to 24 months. Small also for the Mourral vintages (syrah, Grenache and 10% mourvèdre) and Serbolles, high in tanks and traditional wine-making. Coup de coeur for the Lord - white -, based on vermentino, high seven months in the Burgundian barrel with bâtonnage sur. Intense, complex and expressive, the wines of the domain bear the mark of this land which gives them these scents of authenticity.
