In the heart of the Roussillon plain, this former gulf filled by the alluvium of three rivers, the Cabestany terroir is composed of a mixture of rich, fatty or silty soils, interspersed with rocky areas. Among the terraces staggered according to the three rivers are the Cabestany terraces, formed by rolled pebbles and alluvium. Inaugurated in 2005, the Cabestany sales cellar, adjacent to the Cave Coopérative, is located in the heart of the village. Its central counter in the shape of a barrel is original and its immense bay windows bring in the sun and the warmth of the smiles of passers-by. You will be seduced by the architecture of the place as much as by the wines you can taste with Audrey. We particularly liked the Master of Cabestany and the Two Lions, two Côtes du Roussillon Villages in red that have structure and hold or simply the Will of a Hom, a very surprising organic rosé in IGP. The Cabestany vault also hosts very beautiful exhibitions (the place is so vast and warm that it lends itself perfectly to it) and has a large car park. Don't forget before or after the tasting to stop by (5 min by foot) at the Romanesque Sculpture Centre in Cabestany, a place to discover.

Mas de Lavail is a vineyard located in Maury. The estate offers a wide range of wines, from "pleasure" wines such as Carignan Blanc and Carignan Noir, to expressive wines such as La Désirade and Le Sud. The vineyard also offers natural sweet wines, such as Maury Expression and Muscat de Rivesaltes.

On the 15 ha vineyard that stretches from Tautavel to St-Paul de Fenouillet, there is a wide variety of soils: schist, schistose marl and clay-limestone. In the 3 colours, Dimitri and Muriel create wines with a concentrated and greedy character. The Château de Péna vineyard is located on the first foothills of the Corbières, at the entrance to a bottleneck of the Agly against which the Roussillon plain meets. The marl and black schist soils are a preferred soil for the production of AOC Côtes du Roussillon Villages, AOC Vins Doux Naturels and Vins de Vépages. The cooperative cellar was founded in 1942 and now has about thirty winegrowers spread over 450 hectares. The range of Minettes en IGP are very gourmet wines, the ideal buddy wine for grilling. Domaine Força Réal has been a family affair for 30 years. The organically grown vines stretch over a wide range of terroirs (schist, limestone and clay). We feel that diversity is the key word for this family of winegrowers. A particular favourite at the tasting was "Les Hauts de Força Réal", in white and red, an ambitious and delicate wine. Finally, 10 hectares are dedicated to the other king fruit of the Mediterranean. The native olive and picholine varieties, hand-picked and ripe, give a high quality, slightly fiery oil.

Domaine Danjou-Banessy, located in Espira-de-l'Agly, is an organic farm offering a range of high-quality dry wines. The owners, Benoît and Sébastien Danjou, took over the estate in 2001 and have maintained a philosophy of respect for plants and expressions of terroir. The estate comprises 18 hectares of vines, mainly on schist, calcoschist, clay-limestone and quartz veins. The wines produced are refined, delicate and energetic, with good tension and vivacity. The Vignerons du Vallespir is a group of 70 winegrowers who have adhered to the values of cooperation since 1949. The vineyard extends from Céret at the gates of Vallespir to Le Boulou and includes some villages in the Aspres at the foot of the Albères. In Espira-de-Conflent, Marie cultivates the spice of the gods in organic agriculture. In the heart of a 40 hectare wine estate planted with centuries-old vines, and which extends its lands on pebbled terraces overlooking the nearby sea, Cathy and Philippe welcome you in 2 gîtes adjoining their house, an authentic Catalan farmhouse. Les Vendangeurs can accommodate 9 people in an independent house, nicely furnished. Les Porteurs, ideal for 6 people, is nestled in the luxuriance of the bougainvillea. Charm and fantasy, warm or acidic tones and beautiful materials will make you want to stay longer.

At the Cellier des Arcades, the emphasis is on the wines of the department and on organic wine. From April to July, two Saturdays a month, in this beautiful house with its vaulted ceiling and stone walls made of Tech pebbles, Henri organises beautiful tastings in the presence of the winegrower to help you discover a domain. When we ask him to name his favourite vintages, he replies: "impossible to answer, I like everything! ». A good address to accompany the good and delicious local products brought back from the famous market of Céret.

The real crunch of St. Paul's! The biscuit factory Le Pastadou has existed for 6 years, once in the village and now at the entrance to Saint Paul. The new shop overlooks the workshop where you can see the Pons family making revisited ancestral recipes: Croquants, Biscotins, Rousquilles and Coque Saint Paulaise. Everything is made by hand without additives or preservatives, faithful to the tradition born in 1870. You will also find excellent organic wines from Domaine Chaluleau-Pons and other winemakers as well as local products.

The Jordi and Dorian siblings have been practicing organic farming for 10 years on 20 ha of vines, 3 ha of olive trees and 1 ha of almond trees. "Organic is hard work" but they are proud of this philosophy and will be happy to discuss it with you during a tasting at the cellar. And speaking of vines, perhaps they will show you the way to this parcel where the majestic juniper tree, which is 1,600 years old, is enthroned in its heart.
