ROQUEFORT CARLES

Regional grocery specialities from Aveyron
4.2/5
18 reviews
Closed - Open to 09h30

Founded in 1927, Carles is a family business, and Delphine, the illustrious third-generation representative of the village's master craftswoman, is its guardian. Carles Roquefort is made entirely by hand, using time-honored know-how. The cubed curds are stirred to prepare the texture of the paste. The grains thus formed are then placed in molds, then sprinkled with the powder of a Roqueforti penicillium grown as in the past on rye and wheat bread. Then comes the draining and, finally, the maturing in natural caves. The latest addition, Roquefort Carles Elégance, is the softest and smoothest, a true delight.

PÂTISSERIE ARTIGARREDE

Patisserie
5/5
2 reviews

Of course, the Artigarrède house is an exceptional pastry that puts on a handmade craft and treats the greedy. But we are not going to lie here, what we love, that we love, that we know, is the famous Russian! Almond biscuit biscuit, topped with a praline cream and a little more that passes from generation to generation, this jewel of gastronomy is here at home. A family case if it is, the cake follows a recipe dating from the th century and holds its name of the ingredients at the time imported from Crimea. In 1925, Adrien Artigarrède added her personal touch and opened his first boutique in Oloron-Sainte-Marie: success is at the meeting. Today, it is his grandson Jean-Paul Bassignana and his great grandson that perpetuate this béarnais, white symbol, such as snow-capped summits, which even has chocolate and coffee flavours. The Rosquille, another emblematic speciality, uses the Pyrenean tradition, this dry cake associated with the white wine of Jurancon was once the festive dessert of the Mountaineers to discover with another flagship signed Artigarrède, the Muscadine, truffle to praline!

WAFU

Delicatessen Asian products
5/5
1 review

Many sushibars have opened on Nîmes in recent years. It was therefore normal for an outlet to the halles - the temple of the greedy products - to have mounted. Before opening his business, the well appointed Wafu (translated "character"), Eve-Laure Pons gave courses in Indian cooking. Then the young stove formed with a Japanese master. So she knows the art of maki rolls, small fish cutting, smooth cooking of Asian rice. At home you can buy or order any kind of sushi, maki, nigiri, uramaki, all made with fish and seafood products, directly from the fish garden. Bento, kind of hot or cold meals, including fish, rice, vegetables, peanuts, algae, etc., are served in a plastic box and sold between 7 € and 14 €. At Wafu, you also have the guarantee of manufacturing non-industrial sushi, which is not negligible for these specialties of raw fish. The réticents can taste the rolls.

The Maison Dauba is a magnificent surprise. The best of the sweet gastronomy is there with: local delicacies like the pebbles of the Gave, original chocolates like the sparkling pearls, but also the favols, jams to accompany the cheeses. On the savory side, you will find balsamic vinegar pearls with truffles, rare oils, rillettes of the sea, chestnut veloutés, cold cuts and risottos... Wines, beers and daring aperitifs also stand out.

Domaine Bonzoms has been cultivating 22 hectares of hand-harvested, organic vines since 2009. It's a family story (5 generations since 1827!) and a way of working that's as close to nature as possible. Their philosophy and their wines reflect the authenticity and respect for the traditions of Côtes du Roussillon Villages Tautavel: expressive, very Mediterranean wines that the Petit Futé loves. MACARON DE LAUZERTE

Patisserie
4/5
1 review

This local speciality can be found at a... delicatessen! The talented Bonnefous family, Jacques, Marie-Josée and their daughter Françoise, are passionate about quality and respect for the best products. They are the only ones to perpetuate this ancient recipe of the legendary Lauzerte macaroon known since the 11th century. This macaroon does not resemble in any way these small fours stilted in their shell of ice. With their ripe wheat colour, they are cracked on the outside, soft and full of sweetness on the inside. The almond flavours take our soul back to childhood.

It's one of the most courted stalls in the halls, and for good reason. Over the last 30 years, the Ribière family has forged a fine reputation among gourmets in Nîmes and its surroundings. Today, Magaly holds the torch of this family lineage. A know-how and an irreproachable rigour in the methods of preparation which is not without underlining the quality of the products put on sale. The other name of this bakery-pastry shop is "la fleur d'orangerie". Low-pressure pressing, fermentation in temperature-controlled vats and air-conditioning in the winery allow the wine to be matured gently and no sulphites are added. Folle-blanche and baco are also grown to produce the famous armagnac.
