At Domaine Michel Prunier et Fille, Estelle has taken over and continues the family values of hospitality in a cellar refurbished for greater conviviality. The Climats are spread over 12 ha between Auxey-Duresses, Meursault, Volnay, Pommard, Chorey-lès-Beaune and Beaune, with 17 characterful crus offering excellent value for money. The domaine also produces a crémant made from Pinot Noir, Chardonnay and Aligoté grapes, elaborated and handled on the estate. ^17th-century cellars.

With 22 ha of vines, the Domaine du Lycée Viticole is Beaune's largest winegrowing estate. It is also a place of learning known as "la Viti", a center for experimentation in viticultural and winegrowing techniques, and a veritable skills platform. The vines are in the Beaune appellation, 40% Premiers Crus, and 5 ha are organically grown. The new 1,500 m² winery produces up to 120,000 bottles in an advanced parcel-based production process aimed at excellence.

Domaine Perrin has been committed to organic farming for 20 years. Yannick and Valérie Panagiotis are rally enthusiasts (Dakar in particular), as well as connoisseurs of fine wines. They took over La Citadelle, a 40-hectare estate certified HVE and BIO since 2016, which promotes respect for the land with eco-responsible methods such as horse-drawn ploughing and eco-pasturing. The wines are powerful and fine, and among the cuvées, those of Gouverneur Saint-Auban and Les Artèmes are aged for 1 year in French oak barrels. Other attractions include the Corkscrew Museum and the Botanical Garden. And Tayac, the place to eat.

A new 450 m² winery built over the historic cellars in the heart of the Clos Foulot and its wooded park will seduce you. A family estate since 1854, Château Penin comes from a highly localized gravel terroir, forcing the vines to dig deep for their resources. The result? Highly concentrated, mature grapes. The Natur cuvées, vinified and preserved without the addition of sulfur, are a benchmark. The estate's wines have won numerous medals. The Union de la Sommellerie Internationale describes Château La Fleur Penin 2015, Saint-Emilion Grand Cru, as "grand art" and "haute couture". Visits by appointment only.

Henri Mutin, best known for his crémants, is first and foremost a farmer. A fervent advocate of organic farming, as for the crémant he produces, he offers AB-labeled organic cereals. These include the rising stars that even top chefs are looking for: coral or beluga lentils, chickpeas and split peas to serve today's cuisine. Chickpeas are packaged in jars for easy consumption. New for 2024: quinoa and chia. Organic spelt, wheat, rye and einkorn flours are ground on the farm.

The Vitteaut Alberti winery, which specialises in the production of Crémant de Bourgogne and sparkling wines, has been located in the commune of Rully since 1951. Today, Agnès Vitteaut, granddaughter of the founders, is at the head of the company. This market-gardening operation employs over 30 people on work-integration schemes, and is expanding again this year with the construction of a greenhouse. Direct sales at the farm support short distribution channels, which Barboulotte promotes with the restaurant Le P'tiot Zinc as a direct outlet. The Relais Bernard Loiseau also fetches certain ingredients from the farm.
