The wine estate of the Matton-Farnet family includes an authentic Provençal property, dating from the 18th century, a chapel and a Napoleon III building. Château Minuty is surrounded by 60 hectares in one piece on schistose limestone soils, completed by 80 hectares on clay-limestone soil in Vidauban and 20 hectares on the slopes of Valderian in Ramatuelle with a superb view of the Bay of Pampelonne. 4 ranges, in the 3 colors, are offered, including "Gold", the emblematic Minuty, vintages that are distinguished by their naturalness.

This confectionery-confectionery manufactures and sells Provençal chocolates and specialities. In particular, Didier Carrié created a unique recipe for the "Agay d'Agay", a white chocolate truffle, flavoured with vegetable liquor and lemon, and rolled in the powder of mimosa.

The 30 hectares of the estate are located in the foothills of the Maures Mountains, on a promontory overlooking Fréjus and the Argens valley, with soils of gneiss and micaschist. For over 30 years, the Rieder family has produced a wide range of AOP Côtes-de-Provence wines, certified organic since 2012. The grape varieties present (mourvèdre, tibouren, syrah, cabernet sauvignon, semillon and rolle) produce wines of high expression and long shelf life. The first plantations of the olive grove of Thierry Olivier, which counts 3 800 trees, date from 1988. The artisanal oil produced is unique in the world, with a blend of 14 varieties of green fruit. In the store, you can buy the products of the domain, oil of course, but also tapenade, Provencal aperitifs, honey from Draguignan, cooked wines, aniseed-flavored aperitifs, cookies from Sainte-Maxime, jams, vinegar and flavored salts. Two cottages are also at your disposal.

The vineyards of this Varnish cooperative are located at the foot of the Maures massif and enjoy maximum sunshine. The land fully classified in the coast-of-Provence AOP produces numerous quality cups, «The Marquets», «The Sketch of Marquets», «The great work of the Marquets», «The terraces of the Gulf», «Excellence», «La Norade», «The Light of the Marquets», regularly awarded in the competitions.

The vineyard, situated straddling the communes of Ramatuelle and La Croix-Valmer, has been cultivated by the family since 1805. It extends over 30 hectares, in the heart of the classified site of the Three Caps. All the production in PDO Côtes de Provence is carried out according to the rules of organic agriculture (AB). The grape varieties are grenache, mourvèdre, carignan, syrah, rolle, semillon, ugni blanc, cinsault, tibouren and muscat. The red wines are light and fruity, the whites are complex and long on the palate and the rosés are elegant.

Since 2000, Julie Ortet has continued to operate this 21-hectare domain, which is steeped in history, modernised in 1998 by Jacques and Bernadette Ortet-Kester. The wines of AOC-var-en-Provence and wines of Var countries, in the three colours, are developed in a traditional way and are for sale in the cellar, as well as different products from the land, olive oil, quenelle, anchoïade… The red wine "Manual Harvest 2006" was selected by the guide Hachette of wines 2010.

This family business continues to produce about ten different honeys (the great-grandfather already harvested honey in 1890!), acacia, heather, chestnut, lavender, mountain, Provence, rosemary, fir, thyme, lime tree, all flowers, arbutus, sunflower, royal jelly, propolis, pollen, and offers at the shop many derivative products, mead, nougat bars, pastry, soap... This cooperative cellar was absorbed in 2004 by La Cadiérenne and is now part of this great family.

Created in 2003, this magnificent wine estate in the heart of green Provence is, since 2011, the property of Gilles Pedini, a native of Nice and above all an epicurean in love with the region. In an exceptional setting, Château Saint-Julien d'Aille extends over 172 hectares, between vineyards, pine forests and olive groves, set against the foothills of the Massif des Maures and bathed by the River Aille. The precious sandy-clay terroir with quartz on the slopes, where the sunshine favors good ripening, produces excellent grape quality. The combination of organic farming and cutting-edge technology contributes to the production of some of the finest, most elegant and aromatic AOC Côtes de Provence wines, which regularly win medals at the most prestigious competitions. Known for their quality, Florence and Philippe Bertin's cheeses can be found on the best tables in the region. They raise cows and goats on the hills of Taradeau and make their excellent cheeses, whose reputation is well established. Fresh, creamy, in brick, crottin, ashy, fragrant, their goat camembert is a must, as is their tasty tomme aged six months in the cellar. Owned by the Paquette family since 1952, this AOP Côtes-de-Provence-Fréjus vineyard is today managed by Jérôme, a graduate oenologist from the Bordeaux Institute, assisted by his daughter Claire, also an oenologist, in the respect of the authenticity of the terroir. The grape variety is composed of grenache, mourvèdre, syrah, tibouren and rolle. It gives expressive wines, like the Osmose rosé born in 2011, a harmony of tibouren and grenache vinified in oak barrels. We also recommend its little brother, the white Osmose, born the following year.

Owned by Roger Zannier since 2011, the estate has about 100 hectares of vineyards. A true wine enthusiast, he has turned this Provencal terroir into a renowned vineyard with gastronomic vintages that produces 90% rosé, 5% white and 5% red. His latest vintage is distinguished by a very high level of quality, like the Clos de Capelune rosé and Excellence rosé 2021, gold medal at the Provence wine competition, as well as at the Terre de vins competition.

The estate covers 80 hectares, including 20 hectares of vines, at the foot of the Pilon Saint-Clément massif. Half of the vineyard is planted with old grape varieties - between 20 and 50 years old - such as grenache, cinsault, and ugni blanc, and the other half with recent grape varieties, such as syrah, semillon, and rolle. Patrick and Sylvie's delicatessen shop is also a veritable Ali Baba's cave of Provençal specialities. You will find a range of preserves made from Solliès figs - various jams, candied figs, compote, coulis, chutney, sweet and sour figs -, natural preserves, jams and marmalades, tapenade, olivade, poichichade, fenouillade, aubergine caviar, black truffles bought directly from the producers in the village, wine vinegar with garrigue plants and a fine selection of olive oils.

Provençal winemakers have understood the importance of experimentation and research for their production. In Vidauban, the Centre du rosé is multiplying its efforts to promote the consumption of rosé wine in France and around the world: conferences (rosé evenings, international rosé meetings), newsletters, intra and inter-company training, scientific publications, organization of tastings, technical articles and interviews in various media... and of course the website!

The Laponche family is in the beekeeping since 1925. Today, it is François Laponche, the fourth generation, which continues the beautiful apiarian tradition of the family. Like its forefathers, it practical every year between great transhumances Roquebrune-sur-Argens, the Maures Massif and Haute-Provence. Bought in September 2010, the second AOP Côtes de Provence vineyard of the De Wulf family, which also owns the Jas d'Esclans estate in La Motte, is cultivated organically. It covers 43 hectares located on the edge of the Argens valley, at the foot of the Estérel, including 23 hectares of vines that produce 60% rosé, 30% red and 10% white. The Château des Ferrages is one of the four fortified places that have marked the history of Pourcieux. Typical of Renaissance buildings, flanked by a large park with trees, it dominated the village. But today its most precious treasure remains undoubtedly the wine estate that bears its name. From these 28 hectares come four vintages, carefully matured in the cellar of the Château des Ferrages. This cellar, with a surface area of more than 1000^m2, combines modern winemaking techniques with traditional ageing.

Created in the 1970s, this estate is above all a family story, that of brothers Pierre and Robert Chauvier, supported by their father. Former summer residence of the archbishopric of Aix-en-Provence, the 110-hectare estate, including 40 hectares of south-facing vines at an altitude of 400 meters and cultivated in sustainable agriculture (HVE), is located at the northern limit of the Coteaux-d'Aix-en-Provence appellation. The clay-limestone soils are planted with Syrah, Cabernet, Grenache and Cinsault grapes for the red and rosé wines, and Sauvignon, Grenache Blanc and Rolle for the white wine. The Domaine la Grand' Vigne has been passed down from father to son for five generations. Today, Roland Mistre, who is also an oenologist, is the conductor of the orchestra. In 2003, he relaunched the vinification at the domain after several decades spent in the cooperative. With the help of his sons, he manages 15 hectares of AOP coteaux-varois-en-provence. La Badiane is a winery located in Toulon, more precisely in Saint-Jean-du-Var, at 22 rue Berthier.

Not really a novice because it has existed for a good century, this cooperative has known how to renew itself and live in its time.
