Just a ten-minute walk from the port and the village, this 35-hectare estate is the result of a happy meeting between the industrialist Henri Vidal, who loved the island, and the Alsatian oenologist Richard Auther, the son of a winegrower. Since 2015, Florent Audibert has taken over the management of the estate; he has since worked brilliantly to raise the quality of the estate's wines. The mourvèdre-dominated vineyard is cultivated using an organic method and has produced two cuvées: La Courtade and Alycastre which are sold worldwide.

In 2017, Chateau Margüi joins the collection of George Lucas' wineries. The "Skywalker Vineyards" includes three vineyards established in California, Umbria and Provence. Located on the last foothills of the Esterel massif, the estate, which has obtained the High Environmental Value (HVE) label, combines exceptional geological conditions, which are extremely rare, since the formation of the soil dates back 220 million years! The estate, which is in the process of converting to organic farming, produces a traditional range of wines in three colors, expressing the best of an exceptional terroir and the passion of a winemaker, Renaud de Saint-Seine, two "terroir" vintages and three "vintage" vintages.

Former trumpet player, the owner Marcus Conrad, chose the oenologist Jérôme Dufour to accompany him and create superb AOP Cotes de Provence and IGP Pays des Maures wines in the 3 colours. He also vinifies 2 cuvées of natural wines without any input, in red and rosé. These are very successful wines, already spotted by specialized journalists and wine guides. On the estate, a Nature and winegrower's trail winds through the woods and vineyards, offering the chance to discover the rich flora and fauna of the area in a very pretty walk in the shade of the immense umbrella pines.

The story is very nice. Eugène Second, a village grower, left the mill he had in Montauroux town. Since 1948, the village has its old mill, the only one in operation, with its stone grinding and hemp scourtins. A a heritage that can be visited during the crushing period, from mid-November to late January. About tonnes of olives are pressed each year.

Of all the mills in the village, this is the only one still in operation. Owned by the commune since the 1830s, it was given a new look about ten years ago. The town hall wished to keep an "old-fashioned" system with the millstone and the scourtins. Here, we are not very concerned about the quantity: with 10 kg of olives, you can leave with your bottle of oil! It can be visited by appointment and during the Olive Festival, organised every last Sunday in November.

This communal mill, managed by the Callians olive growers' association, which dates back to the mid-19th century, was put back into service in 1976. Every year, from mid-November to the end of January, about a hundred members come here to have their olives crushed. The old-fashioned way: with grinding with a millstone and pressing with scourtins. From 200 kg, you can leave with your own oil, fruity green or ripe fruity. Visits by reservation and according to availability.

The Vallon olive grove was replanted at the end of the 1990s. The olive tree reigns again on the sunny foothills of the Cuers bars, whereas it had been decimated by the frost of 1956. These 2,000 young trees come from the varieties aglandau, bouteillan, cayon, cayet roux, petit ribier and salonenque. Their olives are pressed at the Haut Jasson mill to make an AOC Provence green fruity oil (silver medal in 2010 at the Concours Générale Agricole de Paris). You will also find on the spot a green or black olive paste.

A family property with an olive-growing past since 1867, the Domaine du Jasson benefits from a microclimate favourable to olive growing. The olives are crushed directly in the estate's mill. Three oils are offered: a blend stamped AOC Provence in fruity green, and two monovarietal oils (bouteillan and cayon). The estate also offers "agrulives", oils obtained from its olives and citrus fruits (clementine, kumquatou Tahiti lime). It is also an opportunity to admire a magnificent view of the islands of Porquerolles and Port-Cros.

The estate covers more than 20 hectares, in a valley at the foot of the Maures massif. Owned by the Sauron family since 1836, this former farm of the Carthusian monks of the Verne produces red and rosé wines from the traditional grape varieties, grenache, cinsault, syrah, cabernet sauvignon, carignan, mourvèdre and white wines, with semillon, rolle vermentino, complemented by ugni blanc. The Marcel Galfard rosé cuvée represents the heart of the range and the Clos Siouvette, more confidential, represents the most beautiful expression of the terroir.

This 8-hectare vineyard, located in the Salins plain, has the great fortune to live a second life thanks to Laurence Berlemont, an agricultural engineer, and Patrick Devaux, who both, with persistence and imagination, have been able to revive the vineyard, which has been organically farmed since the 2013 harvest and biodynamically farmed since 2021. This private cellar aims at high-end wines and offers exclusive and confidential vintages. As for the 500 olive trees, they produce a very sweet and aromatic olive oil.

This olive cooperative processes about a hundred tons of olives per year. Since 2009, it is certified organic by Ecocert. We go there to buy local olive oil and AOC Provence, available in spray, bottles or cans. Each year, the Tarvernaise boasts a rich record of achievement. During the "journado de l'oli" on the first weekend of September, the Tavernaise opens its doors to the public for visits and sales.

Marjorie and Jean-Sébastien Gros, beekeepers and gourmets, invent and expand their range of products day after day. In their shop, come and taste their local recipes, all homemade: lavender, fir tree and acacia honeys, dark chocolate, cognac and Espelette pepper truffles, salted butter caramels, liquorice anise, chocolate, honey pepper confit, shallots, white nougats, walnut and coffee nougats, almond, hazelnut and pistachio truffles, guanaja cocoa, gingerbread, eggplant caviar, pesto, pesto rosso, olive oil...

Owned by the Rouy family, this vineyard nestling between the Sainte-Victoire and Sainte-Baume regions applies very rigorous cultivation methods to get the most out of it. The grape varieties are diversified, Grenache, Cinsault, Syrah, Cabernet Sauvignon, Vermentino and Ugni Blanc. It is also a castle that dominates the village, set on a rocky spur at an altitude of nearly 400 metres. Its lounges, its medieval vaulted cellar and its gardens lend themselves to receptions. A visit to the estate, followed by a tasting in the cellar is also possible.

Stretching over 42 hectares of clay-limestone hillside land in a single block, between Carcès and Montfort-sur-Argens, the Domaine de l'Estan, worked in sustainable agriculture and certified High Environmental Value (HVE), has been run as a family business for four generations. The Bataille family, independent winegrowers, produce typical red, rosé and white Côtes de Provence PDO wines from six grape varieties, Grenache, Cinsault, Syrah, Cabernet Sauvignon, Vermentino and Carignan, which benefit from a privileged south-facing exposure.

This cooperative cellar, created in 1924, is firmly rooted in the Taradeau terroir. All the wines, made from a dozen grape varieties, are classified as AOP and fully express the richness and typicality of the terroirs. Each year, their wines win a number of medals in the major wine competitions, in all three colors. The cellar also offers a delicatessen with products from local producers. In this 10-hectare AOP Côtes de Provence vineyard, Serge and Sébastien Ramella strive to cultivate the authentic, in the purest respect of the organic charter. Their wines, in the three colours, can be tasted in their shop located in the village centre. The Ramella family is also a family of beekeepers for 3 generations, which proposes to you to discover its honeys of rosemary, acacia, heather, chestnut tree, thyme, lavender, arbutus and savory. Éouve is the Provençal name given to the ancestral holm oak. An exceptional terroir.

Nadine and Daniel Castellan, the 5th generation, run this 28-hectare vineyard, classified as A.O.P. Côtes de Provence, which lies at the foot of the Maures mountains, with a southern exposure. The main grape varieties grown are Grenache, Syrah, Cabernet, Carignan, Cinsault, Mourvèdre, Tibouren, Ugni Blanc and Rolle. The estate offers 2 white wines, 3 rosé wines, one of which is a grey rosé, 2 red wines, including the Alexandre Castellan wine, aged in oak barrels and 2 traditional methods, white and rosé

A family honey house established here in 1972 by Eliane and Jean-Louis Paxé, and managed today by Olivier, the son and his wife Virginie. Passionate beekeepers, they share with their visitors their love of bees, hives, and their delicious profession. Ask for information if you wish to visit their farm; in the meantime, their shop sells honey, fresh pollen and royal jelly, pastries and sweets, candles, soaps, honey vinegar and lots of ideas for 100% local gifts. This cooperative cellar, formerly Les Celliers de Ramatuelle, entirely renovated in 2016, brings together the establishment of Fréjus, which became Ramatuelle D'vins, and that of Ramatuelle, with 120 cooperative members and 265 hectares of vines spread over the communes of La Croix-Valmer, Gassin, Ramatuelle and Saint-Tropez, including 235 in AOP Côtes de Provence and 30 in Vin de Pays du Var. Eight cuvées in the 3 colours are at your disposal: Soyeux, R, Domaine de Jeanne, Domaine du Colombier, Végan, La crique, Ramaterra and Paillas.

Together with his wife Christel, Olivier Etchart, master pastry chef, took over from his parents who settled in the village in 1973. He makes pastries between tradition and originality, and his specialities are the baba au rhum (sold in jars of 14 to 15 pieces), coup de soleil®, the lemon pie, the herb pie and the pavé de Grimaud®. To enjoy these sweet treats, while savouring tea - to choose from a superb collection -, the couple puts at your disposal their terrace and their winter lounge.

This family vineyard, since 1898, opens onto a majestic avenue of three-hundred-year-old plane trees. You will find typical Provencal grape varieties such as cinsault, rolle or ugni blanc, but also grenache and syrah. On the 20 hectares of classified Côtes de Provence vines, two vintages are produced, in all three colours, the traditional cuvée and the cuvée du Prieuré. The estate is organically cultivated and is located in the Gulf of Saint-Tropez. It benefits from a temperate climate and a terroir that is particularly well suited to the Provencal vineyards.

In the heart of Sillans, we like this small and surprising address. Grocery store and microbrewery, you can find local products (organic vegetables in particular) and of course the beer produced on the spot. In high season, the place also serves food with a very greedy bistro type of restoration. The beers produced here are home-made and have names evocative of the region (we love the "Bresque parfaite"). Blonde, amber, brown and even white depending on the season, you can find Gaudinette's beers on the markets in summer.

The little biscuitier here is Romain! A former head pastry chef at Le Petit Nice (with 3 stars to his name), he chose the pretty Rue des Arts to set up shop in 2017 and treat locals and tourists alike to his homemade tuiles, ice creams, diamonds, chocolates and other marshmallows. Everything is made in the traditional way, and the ingredients are chosen with the greatest care. You can sample them as you stroll the streets of Toulon, order a boxed set as a gift, or indulge in a few savoury aperitif cookies, crackers or breadsticks.

The Saint-Marc cellar offers 230 references of wines and spirits, more than 100 domains! From Provence of course but also wines from other regions, some organically grown, natural wines, Italian wines and spirits referenced with care and passion. The cellar is well cared for, with a pleasant tasting area. A must if you are staying in Bormes or its surroundings with colourful, picturesque and fragrant markets awaiting you.On Wednesday mornings, it is the big weekly marketplace Saint-François, in the old village. From May to September, on Saturday mornings, there is a Provençal market at La Favière, in the market car park.In July and August, there are night markets on Monday evenings at La Favière, on Tuesday evenings at Place Saint-François (craft market), and on Friday evenings on the port.
