Explanations: as a cereal grower, miller and baker, he takes care of the entire production chain himself. And as if 100% local wasn't enough, he has also said goodbye to all pesticides and fungicides, in favor of compost made from manure, which he exchanges for straw with organic farmers. Bianca's desire to return to her family's passion for cheese (her grandmother was a cheese maker in Corsica) led her to embark on this wonderful adventure. The Pourraques estate, created around 1300, became in 2015 the property of the internationally renowned chef Joachim Splichal, associated with his sons Stéphane and Nicolas, and was renamed Domaine de Cala.
