Massamier La Mignarde is much more than a wine estate, it is first a history dating back to Roman times, when a Roman legionnaire named Maximus, settled there and gave the name Maximiana to this property which then became Massamier. Today, it is Frantz Vènes who has taken over the family domain of 70 hectares of vineyards in the middle of the Livinière with the names Minervois la Livinière, Minervois and wines of the Coteaux de Peyriac. In the cellar you will discover a range of 2 white, 2 rosé, 7 red and 1 late harvest, wines of character, powerful in mouth and great subtlety. The International Wine Challenge is awarded by the International Wine Challenge in 2005, and is awarded by the International Wine Challenge. During our visit, we had a real stroke of heart for the "Les Garouillas" 2011 developed based on sirah, Grenache and carignan, an elegant wine with a lot of roundness in the mouth and a peppermint finish. In 2016, 250 truffiiers oaks were planted on the property, adding to the richness of this land in the Aude. An ancient dependence of the Abbey of Lagrasse, the domaine de Salitis covers 90 ha of beautiful, rocky and sunny slopes, a superb clay-clay land north of Carcassonne. Only since 1999 and extending over only 550 ha, the name Cabardès (one of the smallest AOC in the Languedoc) is located north of Carcassonne, in the Black Mountain, between Atlantic and Mediterranean. In this respect, this land is both underwater and Mediterranean. As a result, these varieties are a mixture of the Languedoc (Syrah and Grenache) and the Bordeaux (Merlot, cabernet franc and cabernet sauvignon). Provence and servadou iron are also found, two atypical varieties. CHÂTEAU ÉTANG DES COLOMBES

More than two centuries ago, the pond of Lézignan was the fishing place preferred by the archbishops of Narbonne, now disappeared, it gave place to many plots of vineyards that Château Etang des Colombes perfectly exploits. Here, for four generations, the work of the vineyard has been guided by the same goal, a quality of the grapes at the harvesting so that the material testifies to the specificity of the ground in the glass. A superb underground cellar was dug for the barrel aging. You can visit it, just like the museum of the property which has belonged to the Gualco family for a century. Gris des Colombes, very fruity in the mouth, a summer wine par excellence, or the sweet wine with taste of honey and jam, walnut with a very good length in the mouth, it is divine with foie gras or roquefort. Since 2001, the method has changed to improve. Inspired the Alsatian late grape harvest, here, the grape is collected at the end of October then it is directly pressed, vinified and put in barrels. Stephan Roger took over from his grandfather in 1990. The estate is located in the heart of the village and can accommodate its customers and help them discover all the aspects of the exploitation. But beware, visits are only by appointment. On the estate, the wine harvests are mixed, part of them are by hand, the other with machine that sorts and removes anything that can damage the high-quality maceration. The grape varieties are vinified separately, tasted throughout the winemaking and assembled before being placed in barrels for a part: Domaine du Grand Planal "aged in oak barrels." In terms of grape variety, the estate gives way to grenache, carignan, and mourvèdre grape varieties on stony-clay soils, cinsault and syrah on rather sand-clay soils, but there are also merlot and cabernet sauvignon. Stephan sometimes makes his customers taste unassembled grape varieties of the year, to allow them to compare with the bottled finished products, discover different tastes, aromas, and understand the complexity of grape farming and winemaking. Owned by the Boyer family, which has been making wines for five generations, Château de Caux-et-Sauzens is located a few minutes from Carcassonne, on the banks of the Canal du Midi. The château's wines, some of which are award-winning, are made from a variety of grape varieties that cover more than 86 hectares, including 22 hectares converted to organic farming. The AOP Malepère was awarded a gold medal at the 2019 International Wine Challenge, a silver medal at the 2019 Terre de Vins Competition and obtained 3 stars in the 2019 Hachette Wine Guide. Chardonnay and sauvignon produce the round and fruity Pays d'Oc whites, which won a gold medal at the 2018 Challenge International du Vin. The estate has existed since 1900. The ancestor Louis Biscan worked 5 hectares of vines. The estate took the name of Biscan-Pujol by marriage a generation later, and it was in 2000 that André Izard took part in the estate. Yves, Jean-Claude Pujol and himself now vinify about a hundred hectares in a high-tech cellar. The range is wide and diversified, 16 wines in total. For each of them, a golden rule: late harvests for very ripe and sweet grapes. The selection, parcel by parcel, is made by grape variety and by category. Here, we work in sustainable agriculture. These winegrowers, as you will have understood, are passionate and have the desire to always improve themselves. The white is a single variety of chardonnay, and the rosé is a "bleeding rosé". Marie-Claude and Paul Chefdebien are committed to making the most of nature while preserving it. This is why the thirty hectares of old vines (some of which are more than half a century old!) that they have used since 1997 are perfectly maintained with the help of a reasoned and reasonable application of treatments. Harvests are mainly done by hand for red grape varieties, Syrah, Mourvèdre, Grenache, while white grape varieties, Bourboulenc, Vermentino, Viognier, Roussanne, are harvested with a machine to preserve the ideal temperature of the fruit. We recommend the cuvée Augustine 2016, a gold medalist at the Concours 2018 des Grands Vins de France in Mâcon and a silver medal winner at the Concours Mondial de Bruxelles 2018. Do not hesitate to go and enjoy some good wines directly in the cellar; you will have the opportunity to visit the remains of the former abbey restored in 2013.

The domaine de Marijuana and Baptiste Bonnet, wine growers since 1969, stretches over 25 acres, 15 of which are listed in AOC minervois. Located on the municipalities of Ornaisons, Bizanet, Cruscade and Luc-sur-Corbières in Terroir-de-Lézignan, Boutenac and Fontfroide, this vineyard covers more than 37 hectares, of which slightly less than half is in AOC Corbières. The soil is mostly clay-calcareous, with marnes and severe. The predominant vine here is carignan, with Grenache (red and white), syrah, merlot, cabernet sauvignon (some ares of white maccabeu and mourvèdre). This estate was established in 1850 by Emile Rolland. Since then, six generations have succeeded on the estate. Created in 1935, the Les Celliers de l'Aussou cooperative works on the vineyards located beside the Fontfroide, at few kilometers only from Narbonne, and in the middle of the scrubland. The special feature of the wines of the estate is that they are made from selected plots and harvested by hand. With 50% of black carignan, 35% of black grenache and 15% of syrah, you will enjoy the tasting of the red AOC Corbières Chefdebien. After its vinification in carbonic maceration, the wine is aged for 10 months in oak barrel. It goes well for example with cassoulet, the Aude traditional dish, but can also be kept for a few years depending on your patience. Luc Lapeyre is an authentic winegrower who expresses himself through the work of the land he loves so much. For him, the winegrower's work must begin with the soil and its originality. The wine is matured in oak casks and 500-litre barrels, as written in the traditional manuscripts of the vinification of Languedoc wines. Winemakers Champagne from father to son since 1872, Roland Augustin and his son Loïc and Yann made Fabas castle a reference inevitable in Minervois. The 62 acres of vineyards into their roots in a clay and limestone soil. These thin floors give poor are synonymous with aromatic concentrations. After picking off, the red grapes have a long maceration, followed by an aging in oak of the Tronçais forest. The reference of the domain: the vintage Lord, assembly of 60 of syrah and 40 of grenache, high in barrels from 18 to 24 months. Low for wines Mourral (syrah, grenache and 10 discount mourvedre) and Serbolles, high in tank, by traditional winemaking. Our favourite is the vintage Lord - - white, with vermentino, high seven months in burgundy barrel with bâtonnage on the lees. Intense, complex and expressive, wines from the estate bear the name of this local that gives these flavours of authenticity to them.
