La Grave has been part of the holding of Jean-François Orosquette's family since 1978, and the vineyard is mainly located on the territory of AOC Minervois. In the family, they practice reasoned culture but they refuse any labeling, just to remain independent in their choices: a clear and thought refusal to get into the strait jackets. This does not prevent from innovating. As proof, the "O Marie" cuvée, a production limited but has already been awarded, where grenache dominates and syrah underlines. The first vines of Château Capitoul were planted in the ^14th century. It was recognised and elevated to the rank of Cru La Clape in 2015. The wines harvested on the 92.4 ha of the estate have the High Environmental Value label and are part of prestigious appellations. It was in 1938 that the winegrowers of Ventenac, grouped in a cooperative, acquired this winegrowing "folly". When you enter the cellar, you will discover a place full of history, as well as vintages representative of the richness of the Minervois region and of the organic labeling. At the foot of the castle, you can admire "La Marie-Thérèse", the only "boss's boat" still existing in Europe. Built in Toulouse in 1855, it was used to transport goods and wine on the Canal du Midi until 1960.

The domain of Auzines owes its name to persistent oaks whose acorns and small leaves are agitated over the vineyards. All grapes harvested on the field are typical of the Corbières: Carignan, Grenache and Syrah, and Bruno Bernet, the enologist and winemaker of the domain, he focuses on improving the quality of its red vintages, thus; he enhance the soil and limits production to the best mature grapes. Fleurs de Garrigues is the main vintage of the domain, its cassis and blackberry flavors perfectly blends with rosemary, thyme, lavender and broom, which are typical of the surrounding scrubland. Here, for four generations, the work of the vine is guided by the same objective, a quality of the grapes at the harvest so that the material testifies in the glass of the specificity of the soil. Séverine and Gilles Contrepois have been working on a magnificent schist terroir exclusively on hillsides for the past ten years. Recently, the couple broke away from the Fitou, Corbières and Rivesaltes appellations to label their wines "vin de France" in order to obtain more creative and ethical freedom. The cooperative of Camplong winemakers dates back to the 1930s and for almost 30 years only one wine was sold in bulk, red. After many improvements in the cellar and great care to the vines, the cooperative evolved to offer different qualities of wine. In the 1970s, green wine was put on sale and it was a real revolution at the time; the wine growers offer it in white, rosé, and red! Today, the cooperative has 30 member winemakers and proposes six bottles, four in red with the famous C of Camplong in old vines, one in rosé, and one in white. The estate is certified organic (AB) since 2012and equipped with solar panels. It is located in a dry and windy area with sea spray that refreshes the vines planted on a particularly dry soil, thus allowing to obtain grapes with splendid concentrations. Domaine des Maels is a family-run winery that has been offering certified organic wines since 2011. On a 15-hectare estate, winemakers Morgane and Frédéric Schwertz cultivate their vines according to agroforestry principles, with the aim of restoring the biodiversity and landscape of their terroir. The estate offers a range of wines that can be found in the Maison des Vins du Minervois online store. For those who wish to extend their stay, it is possible to stay in the guest rooms of the Bastide des Maels, located on the banks of the Canal du Midi.

Domaine Girard is a winery located in Alaigne. Among the products on offer are white wines such as Chardonnay matured on fine lees and Chenin, red wines such as Pinot Noir Pech Calvel and Syrah, and sparkling wines such as Crémant de Limoux.

Owned by the de Rothschild family and their children, this estate, founded in the ^17th century as a former tenant farm, has undergone extensive renovation of its vineyards and technical facilities.
