Back in 1996, Patrick and Annaïck Hernandez were already "ambassadors" on the markets for the department's signature dish: cassoulet de Castelnaudary. Since 2005, they've been selling the real cassoulet from the capital of Chaur in Narbonne. They've chosen the cassoulet from Maison Escudier, handcrafted with quality products.
