David and Romain chose to set their brewery on the edge of a creek. These beer enthusiasts use malted barley from Belgium, hops from Alsace or European countries. Then, they apply their own recipes to make four beers: two lager beers and two amber ones. They can be locally found, in the market of Thiviers every Saturday or in producer markets.

Thierry Baudry's family property is located on the slopes of Pomport and Gageac-et-Rouillac. It has 32 hectares of vines, of which 20 hectares are white and 12 hectares are red. The farm is run according to agrobiological methods, i.e. without the use of chemical fertilizers, synthetic organic pesticides and weed killers. Harvesting is exclusively manual. The commented walk on Wednesday in July and August is organised in the vineyards on the slopes of Pomport. The visit of about 1h30 is followed by a tasting in the cellar. Located between Saint-Emilion and Pomerol, the 1,600 hectare vineyard of Montagne Saint-Emilion extends among the most prestigious terroirs. The history of this domain is linked to that of a family. In the 19th century, the Grussaute family bought the vineyard and farm. It was at the end of the 1980s that Jean-Marc Grussaute, a very young twenty-year-old winegrower, took over the land and set about planting a programme, a fine and successful effort. He embodied the young guard of Jurançon and accompanied the renewal of the appellation. Discreet and passionate, he gives his wines a little of his personality. A renowned family in the wine world in Bordeaux, the Thienpont family has several areas on the right bank, including this Puygueraud castle acquired in 1946. At the time, the vineyard was almost abandoned, and it was with patience and stubbornness that the Thienpont family turned it off. The first vintage placed in bottle in 1983. Smooth and attractive, the Puygueraud castle wine is the very expression of Merlot, with a touch of quite pronounced Cabernet. Gilles Gérault discovered the rosette and fell in love with it. This cellar master first rented out the Château du Rooy before buying back the buildings and the red and rosé Bergerac plots of land, while keeping the Pécharmant plots for rent. His trick: the production of rosette, a confidential wine that is mellow, fruity and light at the same time. A typical old Béarnaise house seduced the Tessier family in 1993. They bought it and updated the whole thing. It was the start of an exceptional adventure: the buildings were restored, the vines replanted, the winery modernized... Today, the vines, which are twenty years old, are in full production on 6.5 hectares of clayey soil (pebbles, puddings) planted with 70% small manseng and 30% large manseng which give birth to four wines. This is an invitation to discover an authentic 18th century Béarnaise house with its adorable dovecote and pebble-walled inner courtyard. The Despagne family, rooted in the Saint-Emilion region for more than three centuries, has been involved in the vine and wine trades for 11 generations. It was in 1972, by succession, that she took over the management of part of the vineyards acquired by Louis Rapin between 1938 and 1964 in the mountain-saint-émilion, saint-émilion and pomerol appellations, for a total of 51 hectares. Domaine Dou Bernés belongs to the Cazenave family for four generations, and perhaps soon fifth. Exposed southeast, it covers 14 hectares, including 10 in AOC Madiran, 3 in Pacherenc of Vic-Bilh and 1 into rosé. Exploited among varieties, in addition to the classic tannat and cabernet- franc, large and small manseng and courbu, you will also find the arrufiac, a very old local grape which gives a very particular structure to Dry Pacherenc. Nicolas Meylan, the brewer, invites you to discover the secrets of his beers: a visit to the microbrewery with entertaining explanations of the brewing process followed by a tasting of draught beer. On the menu are beers of character, from the mildest to the strongest aged in bourbon or tequila barrels. In addition, there is a traditional lemonade and a red Naùera wine, as Nicolas Meylan is also a winemaker. It is a cru bourgeois with a moulis-en-médoc appellation that appears in the official 1932 classification. Le Château Moulin à Vent extends over 23 hectares of vines. From the road, we discover a beautiful building that dominates the surrounding landscape: it is the vineyard of Mr. Oulié, the Domaine du Crampilh. From generation to generation, the wines retain their exceptional qualities. Here, they each have a well-defined, very tasty character. The madiran mono-varietal 100% tannat are light in the mouth and fruity with notes of black fruit. The dry pacherenc are multi-varietal, composed of large and small manseng, courbu and arrufiac. Round on the palate and invigorating, they reveal citrus and peach flavours. Finally, the sweet wines, made with small and large manseng, have notes of exotic fruits. Each of these wines has been rewarded by the Guide Hachette 2015 for the Cuvée L'Obra et L'Originel. As for the Cuvée Céleste 2009, it was awarded a gold medal at the VIF and Féminalise 2013 competition. These wines, produced in the respect of the terroir, are really to be discovered!

Château Tour Baladoz belongs to Maison De Mour. It is situated on a ridge of slope and offers a superb panoramic view. The estate covers more than 9 hectares. Its wine is considered as the representative par excellence of the limestone plateau of Saint-Emilion.

This small vineyard of 6.5 hectares has been lovingly pampered by the Chastel couple since 1988. Here, 30,000 bottles are produced every year, in red, white and rosé: 100% Merlot and 100% Semillon. In addition, the estate's wine is produced organically, with a first harvest in 2011. A logical continuation for this owner who was already producing using sustainable agriculture! The cellar of Pascal Labasse is nestled in a small valley in the Pyrenees, in the heart of a superb property with its typical house with a béarnaise sauce. Anita and Benoît Gérard produce biodynamic wines. They are famous for their Monbazillac PDO (Le Bois Blanc) but they work well with their red wines (L'Empyrée, Le petit Cluzeau and Le château Cluzeau) and their dry whites. Some rosés (cabernet, sauvignon, merlot) are very pleasant in summer. Etincelle is a sparkling white wine with a fine and regular foam.

The Clos Thou is above all a family story, a domain that is perpetuated from generation to generation. Yvonne Hégoburu is a stunning octogenarian and the most film-loving of moviegoers may have discovered her in Jonathan Nossiter's documentary Mondovino. He, who started a crusade against the standardization of tastes, could only fall under the spell of this estate which, for nearly 20 years, has been working in biodynamics to produce wines from organic agriculture. It goes without saying that in the palette of the jurançons, this vine is a must. Working the soil, hand-picking the grapes by successive sorting, organic viticulture, the work is colossal and the yield confidential: another reason to visit the winery where you can taste the Marie Kattalin cuvée, a wine with a strong identity. Fresh and incredibly well-balanced, this dry and mellow white has a lot of tension and fans of powerful flavours will adopt it like many before them...including Bertrand Delanoë, former mayor of Paris, to name but a few. The distinguished vintages in the Gault et Millau, the Revue des vins de France and the Guide Hachette have a very special palate, with a sharp attack and an acidity that finds a beautiful balance. Château Haut Guillebot is a winery located in Lugaignac. It offers a selection of authentic wines, including sweet wines from the Sauternes appellation, dry wines from the Entre-Deux-Mers appellation and dry wines from the Bordeaux appellation. Former owners in Languedoc-Roussillon, Isabelle and Alain Fabre have all their efforts on the quality of their vintage, the vineyard having been classified as Bourgeois in 1871. Acquired by Chinese investors, the former owner is still responsible for the vinification. The Gazin Castle has a very old history. In 2005, the group of private investors Winevest acquired this family property and operated it since then to produce high quality wines, in the continuity of the Sun family. 

The family estate is located on the northern slopes of Bergerac, in three blocks. Production is divided between white and red. The range of wines is divided between Bergerac red, dry and rosé and a speciality called the Rosette. This wine, hand-picked, vinified and matured in oak barrels, received the gold medal at the Concours Régional de Paris.

Château Belingard is one of the jewels of the French vineyard. It's a prestigious location, from which view is wonderful. In 1980, Laurent de Bosredon, supporter of reasoned culture, took over his father by working on this clay-limestone terroir to give it its former glory. The equipment of the cellar uses the highest technology but also tradition. 65% of the sale is made for export. The production is divided between red and white dry wines of Bergerac as well as liqueur wines of Montbazillac. The owners are Sylvie and Laurent de Bosredon.

Germain Joly has swapped his life as a sommelier for that of a wine merchant, which have some similarities. He therefore knows his universe perfectly, the sure values and latest discoveries. He a lots of things to say on the wine universe and the wine-growing regions, with a particular affection for the South, Bordeaux, the Côtes-du-Rhône... and Périgord, of course. More than 300 references can be found in his reserves, small owners to discover, champagnes, whiskies, alcohols, not to mention 150 Belgian and local beers (Le Père L'Amer from Thiviers, Les Deux Ours from Nontron, Périgord Beers from St Saud-Lacoussière, BAM from Marsac-sur-L'Isle). Regulars appreciate the friendly atmosphere, the opportunities to taste, for example Beaujolais charcuterie evening, and the destocking sequences at friendly prices. Germain regularly participates in local events, particularly those of the Pôle métiers d'art.

On this former estate, the tasting takes place in a room offering a superb panoramic view of the Sauternes region, from which the prestigious Château Yquem can be seen. Château La Rame flourishes on a good terroir. Well-structured, aromatic and fresh, it gives off notes of candied citrus fruit. This wine is found in prestigious establishments, including the Louis XV in Monaco, Taillevent, Caves Legrand, Le Crillon, Le Negresco, L'Arpège, Chez Laurent, Pierre Gagnaire...

The Bordenave estate is one of the oldest in the Jurançon appellation. Indeed, its history dates back to 1676. However, it was in 1993 that its first vintage was released for sale. He is held by the dynamic Gisèle who, already at the time of his parents, was in charge of the vines. It has completely restructured wine production by modernising the cellars and rethinking the work of the vine, now in organic and sustainable agriculture. The management is done in family, always in the respect of the soil and traditions to obtain the best quality. The grape variety is composed of small and large manseng, traditionally linked to Jurançon, but also of older, typically local varieties such as Caramalet, Courbu and Lauzet. Sweet wines with aromas of honey and candied fruit, very good dry wines, very fruity: the estate is a reference of choice that aims for excellence in each vintage. The wines have poetic names: Souvenirs d'enfance, Les Copains d'abord, Le Cercle des Amis or Terre de Mémoire, all applauded by critics in specialized magazines. The estate has a beautiful view of the great starred restaurants in Paris and around the world.

Claudine and Claude Caillard give special attention to harvesting and wine-making, but also to work on the vine to obtain a quality raw material.
