This cannery of Briscous invites you in its workshop and its store. Here, it is an essentially feminine team that officiates, recalling that the initiator of this project was Anne Rozès, which explains why we have kept her name to the cannery which at the beginning worked only with duck and vegetables cooked with duck fat, in the old way. Foie gras, confits, puddings with Espelette pepper, pâté, cassoulet, duck ravioli... Beautiful signatures.

Thérèse and Michel Lacombe are on the orders of a typical Périgord farm where they raise and rinse geese and ducks with the cereals they produce. The visit of the farm, with demonstration of gavage at 18 p. m., then allows to taste the dish of specialities in full knowledge of things. Rillettes, foie, conflict conflict, salad, walnut cake. You can also buy farm-made, traditional, goose and duck-based products and dine every day of July and August except Sunday evening or all year on reservation to enjoy traditional cuisine.

In their shop you will find all the preserves from their workshop in Castels: semi-cooked duck foie gras, blocks of liver, pâtés, rillettes, duck sauerkraut, quail with foie gras. We like the aperitifs (5 tins of 65 g of duck foie gras with fruit to make toast as an aperitif). The house also has another point of sale in Domme in the Grand Rue (05 53 28 31 54).

Château de Garbes, located in Gabarnac, is a winery offering a range of quality wines. Visitors can taste the château's wines in a cosy tasting cellar overlooking the vines and barrel cellar. We had to dare… Florence Boyer-Rey, from Sarrazac, did so. She left the school at Sarlat's professional school to pick up her aunt's grocery store, which had exploited her for 40 years and then sold to two other people. The young woman only works with local producers: Laupilière farm for duck, Ferme farm for pork and veal, Le Délice de Lionel pour le boeuf, Florence Coste for chickens, Chaminade Vergers for fruit, Sisters Nicolas for organic vegetables, and every Thursday batch of fresh fish. Bread is provided by two Bakers bakers. Florence Boyer-Rey offers vegetable and/or meat season baskets on the weekend. She also manufactures her own jams with the region's fruits and complemented them with some decorating ideas. On Sunday morning, in July and August, a producer will have a free taste of the region's products.

Lucette and Michel, the owners of this beautiful walnut grove with its hundred-year-old trees, open the doors of their farm from March to November. On the program: a visit to the certified organic orchard, which they've been tending for several decades, and to the meadow where the Limousin cows graze, ending up at the farm where all facets of the business are explained. The tour ends with a tasting of walnut products (available for sale). In summer, the farm hosts a gourmet market every Thursday, to showcase local produce.

The Carbonnière family raises goslings fed without animal meal or fat. Farmers for several generations and settled in Tursac since 1983, they are producers, breeders and feeders of geese. The animals are force-fed with non-transgenic corn, sown, harvested and dried on the farm. The preserves are made in the pure tradition: foie gras, confits, stuffed necks, etc. During the period of force-feeding, from September to June, you can attend the force-feeding from 8am to 10am and from 4pm to 6.30pm, do not hesitate to call before.

Preserving local produce is a true Lagrèze family tradition. Even today, Sylvie and Pascal keep the tradition alive. Whole duck foie gras, stuffed goose neck, quail with foie gras, pork anchaud rolled in its rind, duck confit, and Marie-Louise's famous dishes such as wild boar sausage with three beans, or coq au vin de Bergerac simmered with porcini mushrooms. Succeeding his parents, Olivier Dandieu is at the head of this poultry company, which was founded in Brassempouy over 50 years ago. The site includes a slaughterhouse, a cutting room, a production unit for processed and preserved products, and a boutique.
