In their workshop on Rue de la Résistance, Jean-Marc Ledot and Olivier Devant practice the trade of saurisseur. Here, the finest fish is filleted, salted, smoked with string, and sliced by hand. The flagship of the house is the Flacky salmon pavé: a Label Rouge Scottish salmon which, once trimmed and skinned, is cooked and smoked simultaneously. A pure delight. Le Saumonier's expertise can also be enjoyed in downtown Bayeux, thanks to the opening of a new boutique on Rue Saint-Patrice.
