Since 2018, Tiphaine and Stéphane's chocolate shop has been located in the town of Ouistreham. With your nose glued to the window, you give in to temptation: dark chocolate, milk chocolate, garnished chocolate... The range, made with Valrhona - the professional brand - and grands crus (pure Brazil, pure Madagascar), includes a variety of creations (mendiants, roses des sables, lollipops, tablettes, orangettes) and confectionery (fruit jellies, caramels, marshmallows). Each season, each holiday on the calendar is an opportunity for a sweet pleasure. From macaroons to "pièce montée", from nougatine to marshmallow! Here, we don't manufacture, we sculpt. We even saw pumps and lily of the valley more real than life in chocolate. This chocolate and pastry maker is an artist. An artist so passionate that he organises workshops to share his secrets. In turn, you will amaze your friends who will melt with pleasure.

We can't talk about the production of this organic cider farm without evoking the history of the Château de Canon. Built in 1745, its farm was designed to allow its inhabitants to live in autarky, as advocated by the "Physiocracy" (an economic and political doctrine that bases economic development on agriculture). Nearly three centuries later, the same philosophy is applied to the cider farm as to the adjoining educational farm. The orchards, planted with ten hectares of tall apple trees and three hectares of pear trees, produce some 50 tonnes of fruit per year. The apple juices and organic drinks are made on the farm and are traditionally prepared with many varieties from the Pays d'Auge : raw organic cider, semi-dry organic cider, sweet organic cider and traditional organic cider - drier and less sparkling than raw organic cider -, organic Halbi (Norman speciality, a blend of apples and pears), perry, organic apple juice, organic AOC calvados, organic cider vinegar... Many of these products have won medals in various competitions.

He fell into a Château Gloria at the age of 16 and made it his profession-passion! Sébastien, the enlightened owner of this cellar, shares with us his favourite sin. Trained at the same school as the well-known John Coleaux, sommelier-caviste in Rosel, Seb opened a place that he wants to be atypical and endearing. A cellar that hosts wine, beer, whisky and of course calvados tastings. An evening, on the first Friday of the month, allows everyone to get together for a time of discovery. Boards complete this moment of exchange and make Chai Seb a bit of a home.

Jean Barbey is one of the essentials! A real charcuterie with real dishes and a good cooking smell. Mrs Barbey is always impeccable: coat, tail and little collar, one of the charms of the sign. If the house offers an average of four different dishes each day, rotation varies each month. During our passage, it was chicken stew in lemons, paella, beef tongue tangy sauce (add sauce after weighing), stuffed tomatoes. Add to this the ham and other sausages, pork and pies (especially at the Intermarché), a good choice of salads (the one on curry is to fall, but Piedmont is excellent). Still not barbés of this Barbey!

Next to the Halle aux Grains, in the heart of Bayeux, a world of sweets opens up to you. With your nose glued to the window of LadyNath, you will discover nougatines, meringues, lollipops, caramels... Here everything is handmade and reminds you of the smells of your childhood. We fall in love with the pretty pastel berlingots with fifty flavours. Nathalie did not forget to bring back from the coast, where she was based, the ancestral recipe of the famous Gui-Gui, a soft candy twisted around a stick. There is Charlie and the Chocolate Factory but there is also "Nathalie and the Confectionery"!

At the Ferme du Village (little sister of the Grande Ferme in Fontenay-le-Marmion), you will therefore only find local products and extra vouchers. Who doesn't know the Viviers du Becquet? Here, for years, they have been producing countless shellfish in basins - including incredible lobsters, and the giant crab which alone is worth a photo! The whole thing is of course excellent. For a few months now, the place has opened its own store, with the possibility to come and buy on the spot. Thus, you can now, from Tuesday to Sunday, come and buy directly from the producer.

It is the westernmost of the bakeries of the well-known city. The tradition of the Querqueville district is not lacking in the tradition that makes Toulorge an unfailing matter: large hours, a choice which is equally important, whether it be pastries, pastries, bread, but also snacks for small faims. You will find here the direct sale of cider and perry products, with free tasting. Finally, Sébastien Guesdon is a distiller: with his still, he perpetuates the tradition of making calvados from farm to farm.

À La Conscience du Sommelier has recently undergone a facelift, and the wine cellar is going strong! The new owner is determined to breathe new life into the cellar... sorry, a new wind! Since its inauguration on the day of the Beaujolais Nouveau, the cellar's projects have continued to multiply: first and second growths from our great wine regions, en primeur wines... Ah, that P'tit Chou, what would we do without it and its specialty: the famous petit chou topped with an old-fashioned pastry cream, so light and tasty that it never weighs down the stomach, just like its price. While the store on Rue Saint-Jean is more centrally located, it doesn't have a bakery (yum... lemon or chocolate cake!), nor any delicious savoury treats. On the former industrial site of Notre-Dame-de-Bondeville, a branch of the ESAT du Pré de la Bataille has been set up. It is a workshop-boutique where the ESAT workers, the confectioners, make sweet specialities, including the famous Rouen apple sugar, once sold by apothecaries to relieve sore throats and ward off melancholy, but also chocolates and candied fruit. An interesting visit to this establishment, which won an award at the Trophées de l'Attractivité touristique in the category Valorisation du Patrimoine.

Away from the small village of Triqueville, the Jaouen family has been cultivating a 14-hectare orchard for 25 years, where about 9,500 apple trees are perfectly aligned. A lot of work was needed to get the farm back on its feet, especially after the war and the passage of the Germans, but this challenge did not scare the Jaouen couple, who were determined to change their lives.

A challenge won since today, the Domaine de Ponctey, like a Norman bocage overlooking the valley, is gaining in reputation while working its 9 varieties of apples in accordance with the history and authenticity of the farm. Last but not least, its Normandy AOC pommel (3 years old and over) won the gold medal at the 2018 General Agricultural Competition.

The apple trees, all carefully replanted by the Jaouen family upon arrival at Le Ponctey, now deliver their delicious fruits picked, sorted by hand and then transformed into pure juice and pure fruit farm cider, into exquisite pommeau or even into calvados aged in oak casks. In a shop, in an old stable, the gourmet aesthete will also be seduced by products that combine know-how and tradition, such as unfiltered cider vinegar in the traditional way, but also original creations such as homemade apple jelly, which goes perfectly with foie gras, and a surprising cider brandy, which will delight mixologists in their quest for new products.
