Salmon preparation and sales workshop in Bayeux
In their workshop on rue de la Résistance, Jean-Marc and Olivier, our two passionate salmon-makers, transform fish into a veritable culinary art! The process is fascinating: meticulous filleting, delicate salting, traditional smoking with string, and manual slicing that reveals all their expertise. Their pride and joy? The Flacky salmon pavé, a Label Rouge delicacy made in Scotland, carefully trimmed and boned, then cooked and smoked simultaneously. A treat that can also be enjoyed in downtown Bayeux, with the opening of their boutique on rue Saint-Patrice.
