They took over La Citadelle, a 40-hectare estate certified HVE and BIO since 2016, which promotes respect for the land with eco-responsible methods such as horse-drawn ploughing and eco-pasturing. The wines are powerful and fine, and among the cuvées, those of Gouverneur Saint-Auban and Les Artèmes are aged for 1 year in French oak barrels. This bastide takes its name from the nearby stream that runs through Cadenet before emptying into the Durance. Léo has joined his parents Carine and Roland Coupat on the certified organic estate. They farm 4,000 olive trees on 15 hectares formerly planted with vines. 95% of the trees are of the aglandau variety. Salonenque and picholine complete the orchard. Concerned in every way with the quality of the oil they produce, they crush their own olives. The result is a fruité vert or "intense taste" AOC Provence and a fruité noir tradition with black olive aromas.

Anne and Pierre Chancel have started a new life by creating, 4 years ago, this preserved domain of 30 hectares at the foot of the Ventoux (12 hectares cultivated in organic way surrounded by 12 hectares of wood). Their first vintages are promising in the 3 colors and already on the best tables in Paris and the region. The hilly estate offers superb views with a marked circuit called "Chemin Sensationnel", a stroll marked out with activities (well-being workshops, readings) which ends with a picnic and wine tasting.
