For 53 years, the philosophy of the Grande Confrérie du Cassoulet has remained unchanged: to serve the prestige of Cassoulet, to spread and defend its reputation, and to ensure respect for quality. And to maintain the recipes of this culinary tradition, the Confrérie organizes unrivalled festive events around cassoulet: the Grand Chapitre in spring and the Fête du Cassoulet in summer! Created in 1932, this artisanal pastry and chocolate shop is now in its fourth generation. The welcome, in this beautiful store located in the heart of the city, is warm and the advice judicious. All the cakes and chocolates made, if possible from products in short circuit, are pure delights. The house specialties are the fouace aux pignons, the classics such as Paris Brest and Saint Honoré or more trendy ones such as the Royaltie, chocolate mousse and praline crunch. There's a before and an after when you taste bread and pies from Tout autour des Moulins. Everything is delicious, and the indulgence seems to do us good because there's little sugar, quality local flour, and a project of educational workshops that makes you want to come back. The team's aim is to promote respectful, quality agriculture by offering organic, sustainable bread and flour. As part of the social economy, the team has received social utility accreditation for its production building and bakery.

In the heart of the pond, the shellfish farming area has existed since the early 1960s. Eighty percent of the shellfish is sold directly in the Grau de l'étang and in the surrounding villages. The Leucate oyster, the very famous "Cap Leucate", is an oyster with recognized virtues: it is very hollow and its flesh is very firm with a pronounced taste of hazelnut. But the oyster is not the only star of the pond, also rich in clams, mussels and other shellfish!

Installed in the middle of an industrial zone, Sylive Garcia has brought a feminine touch to these places with a well thought out decoration and layout to highlight the excellent wines she offers. Her cellar is composed of multiple references, the best of regional wines highlighted, as well as nice bottles of Burgundy, Bordeaux and champagnes. The advice she gives is precious and will allow you to choose the ideal vintage. You will also find a wide range of beers, such as the Ciutat, made in Carcassonne.

Passionate about the land and its history, Elena Anton divides her time between her truffle field of 1,350 oak trees, her olive grove and her authentic gites. On her farm, she offers her products for sale in her small store, as well as local products such as salt with Gruissan truffles. She also offers educational activities. As for the gites, nestled in a coomb, in the middle of holm oaks and olive trees, they are classified 3 or 4 ears of corn and can accommodate 4 people each. All of them are built according to eco-environmental standards.

The Odyssey of the Olive Tree, within the Oulibo cooperative, combines staging, sound and light, educational tours, multimedia screens, sound effects... to discover the king tree of the Mediterranean. The 1h30 visit begins with the olive grove, then a sound and light show that retraces the stages of oil production will be shown. If you want to know the different virtues of the oil, the symbolism of the olive tree, the jobs related to the olive (scourtinerie...), this is the place to go.

La Belle Chaurienne is aptly named. Established since 1964 in Castelnaudary, it is the main spearhead of the local gastronomic know-how. In addition to its famous cassoulet, the company has developed various recipes that showcase local cuisine. The ingredients for its preserves (duck confits, foie gras, pâtés, rillettes...) are 100% natural and carefully selected. The Fromagerie cheese factory is a traditional mountain farm. The farm houses about 1 dairy cows of the rustic race (Abundances and Brunes of the original Alps) which pastured the grass of the Massif du Madres between 2 100 m and m in the Pyrénées Pyrenees in mid-May), without going down in the barn. You'll be able to taste the wines of Argeliers' winegrowers free of charge, discover the story of Marcelin Albert, leader of the winegrowers' uprisings that shook the Midi in 1907, thanks to a video documentary detailing his life, and meet the team of enthusiasts who will share their favorite products with you. Auntie Juliette, Edouard's great aunt and proprietor, was a farmer in Peyriac-Minervois. It was in her honor that our epicurean at heart created this cheese bar, creamery, delicatessen and wine cellar in the heart of old Gruissan. You'll find a fine selection of goat's cheeses, regional affineurs and various cheeses from France, as well as Occitan specialities on the delicatessen side. For centuries, seven generations have worked on the 30 hectares of the estate to produce wines with original aromas that reflect the generosity and strong character of the local people. Defenders of a strong ethical charter including the HVE standard, Pierre Fil and his son Jérôme offer three original ranges, from vineyards shaped by the wind and the Mediterranean climate; the "pleasure" wines, wines of friends as they like to say, the "authentic", Minervois reds and signature wines with the flagship wines of the domain, "Dolium" and "M".

At the heart of a vineyard situated between 200 and 450 m above sea level in the Aude department, Pierre Fabre has inherited his winemaking spirit from the five generations that preceded him. At Château de Gaure, this passionate winegrower and talented painter creates organic AOP Limoux and AOP Languedoc wines. He produces 6 cuvées: two single-varietal and four blended wines that enhance the typicity of the plots and the harmony of the grape varieties. Three white and three red wines are sold. It is at the gates of Narbonne that the Ortola family works its domains; Château Notre Dame des Quatourze, Château Tapie, Château de Lunes, Château Ymis, as well as a domain located in Canet d'Aude. Passionate winemakers, they offer red, white and rosé wines, of excellent quality, vinified without sulfur, organic and organic dynamic. The estate's vines, once cultivated by Marthe's father, were given a new lease of life when Benjamin, the grandson, decided to take the estate in hand. Franck and Ellen are the proud owners of this delicatessen, which opened in 2020: a den dedicated to gourmet delights for these two Belgian-born enthusiasts of the Aude region. Château Le Bouïs is one of those estates that leave no one indifferent. The vaulted cellar, combining tradition and modernity, is one of the largest and most beautiful in the region. The grape varieties grown on the 35-hectare estate, which is currently undergoing organic conversion, benefit from a gentle, low-intervention winemaking method. The co-operative of Camplong winemakers dates back to the 1930 s and for almost 30 years only one wine was sold in bulk, from red. After many improvements in the cellar and great care to the vines, the cooperative evolved to offer different qualities of wine. In the 1970 s, green wine was put on sale and it was a real revolution at the time, the wine growers offer it in white, rosé and red! Today, the co-operative has 30 member winemakers and proposes six bottles, four in red with the famous C of Camplong in old vines, one in rosé and one in white. The estate is certified organic (AB) since 2012and equipped with solar panels. It is located in a dry and windy area with sea spray that refreshes the vines planted on a particularly dry soil, thus allowing to obtain grapes with splendid concentrations. The estate is located on the best lands of the plain from La Palme to Fitou. As Domitius said in 118 B.C.: "Here are the stones, the dryness and the wind, but we dominate the Mare Nostrum which bathes the Roman shores".

Located in Fleury, in the Languedoc-Roussillon region, the Courtal Neuf winery is a must for wine lovers. Here you can sample a wide selection of quality, locally produced wines. Les Bugadelles estate and Château Auris Maison Albert are also part of SA de Courtal Neuf.

Founded by Abbé Jean d'Alibert in the 16th century, these cellars played an important role in the region's economy by promoting the Caunes-Minervois marble quarry. Domaine des Maels is a family-run winery that has been offering certified organic wines since 2011. On a 15-hectare estate, winemakers Morgane and Frédéric Schwertz cultivate their vines according to agroforestry principles, with the aim of restoring the biodiversity and landscape of their terroir. The estate offers a range of wines that can be found in the Maison des Vins du Minervois online store. For those who wish to extend their stay, it is possible to stay in the guest rooms of the Bastide des Maels, located on the banks of the Canal du Midi.

Domaine Girard is a winery located in Alaigne. Among the products on offer are white wines such as Chardonnay matured on fine lees and Chenin, red wines such as Pinot Noir Pech Calvel and Syrah, and sparkling wines such as Crémant de Limoux.

Owned by the de Rothschild family and their children, this estate, founded in the ^17th century as a former tenant farm, has undergone extensive renovation of its vineyards and technical facilities. An impressive barrel cellar helps to further sublimate the wines produced from this promising terroir. Combining excellent working methods and Rothschild family know-how adapted to the Limouxin terroir, the estate produces three AOC Limoux wines, Domaine de Baronarques Grand Vin red or white and La Capitelle.

In the heart of Cathar Country, this beautiful estate of the Upper Valley of the Aude extends over 150 hectares. It cultivates vines on 14 acres, and, since 2001, a limestone plateau is planted with 500 olive trees. It is a charming place to discover the wines of the region. Fourteen acres of vineyards with various grape varieties make up the vineyard: You will find chardonnay, chenin and Mauzac which are used to make the blanquette stew, but also syrah, Merlot, Cabernet Sauvignon, or Cabernet franc. Located in Antugnac, Domaine Delmas has been a family-run winery for four generations. The domain of Camplazens is a wild island in the heart of the limestone massif of La Clape where garrigue and vines have been married for 2000 years. Château Maylandie is a vineyard located in Ferrals-les-Corbières, in the town of Ferrals-les-Corbières. The vineyard offers a variety of wines, such as Cabanon rosé 2020, Cabanon blanc 2020, Carnache 2018, Exquises Esquisses rouge 2020 without added sulfites, Cabanon 2020 in white, rosé and red, Exquises Esquisses rosé 2020, Villa Ferrae 2018, Férals 2019 and Cabanon rouge 2020. Château Maylandie offers AOC Corbières rosé wines, AOC Corbières white wines, AOC Corbières-Boutenac wines and AOC Corbières red wines.

Located in the Massif de la Clape, the Château Laquirou vineyard is home to 40 hectares of organically grown vines, surrounded by 60 hectares of garrigue. Château de Luc, located in Luc-sur-Orbieu, is a winery owned by the Fabre family. Its vineyards, planted on the stony terraces of the Orbieu and the windy foothills of the Alaric, produce wines characterized by concentration and harmonious balance. The château welcomes visitors to its stables, now converted into a tasting cellar, where they can discover the 14th-century underground cellars, a unique historical testimony in the region. Sarah and Lionel Landauer, welcome you to their shop with a thousand delicacies in the heart of town. They offer a range of dishes, each more appetizing than the last: Limoux specialities, regional dishes, home-made duck and goose foie gras, desserts and charcuterie, but also gourmet delicatessen products, such as gingerbread, jams, mini meringues, roasted coffee from Lézignan Corbières... In short, you will find everything to delight your taste buds from starter to dessert, with service and a smile to boot!

From the basket to the plate: you can find all the seasonal products and the food trades in this hall with a friendly atmosphere. The concept is to bring together in one place a market of local producers and a brasserie restaurant: Les Tabliers Bleus. Don't feel like cooking? You're sure to find what you're looking for at l'Ensoleillade in the halles de Saint-Pierre. A leading caterer since 2005 in Saint-Pierre and Narbonne-Plage. Mathieu Bernard, a trained butcher and chef, offers traditional and typically Mediterranean dishes such as boles de picolat, paella, bouillabaisse (to order), matured prime rib and other grilled sausages and kebabs. You'll also find prepared dishes in jars, Occitan charcuterie... A must!

L'Hippocampe, is a completely renovated oyster farmhouse that looks great with its wooden facade, the interior room and a pretty terrace overlooking the channel. Here you will be served oysters accompanied, if you wish, by mussels, clams and a glass of white (or rosé) Leucate. Lovers will revel in the Petula Spectacular, an oyster (no. 0) of extraordinary dimensions that has spent no less than 4 years at sea. A very pleasant address held by a team that is just as pleasant, where you can enjoy the sunny and sheltered terrace.

An unconditional love of the land, the desire to bring out the soul of the terroir and a working philosophy based on intra-cellular vinification are the guidelines of the Ciry Cattaneo estate, created by David Ciry, an oenologist by trade, and Marion Cattaneo, a chocolatier. You will enjoy Sang Neuf, Malabestia, Les Petites Choses and Les Hirondelles, all produced in limited quantities.

Back in 1996, Patrick and Annaïck Hernandez were already "ambassadors" on the markets for the department's signature dish: cassoulet de Castelnaudary. Since 2005, they've been selling the real cassoulet from the capital of Chaur in Narbonne. They've chosen the cassoulet from Maison Escudier, handcrafted with quality products. You'll find it in cassole or vacuum-packed (fresh cassoulet), as well as canned. Other gourmet products are also available here, as well as free-range poultry, for pick-up or delivery.
