Created in 1928, this aperitif based on cinchona, spices and herbs has been part of every meal and festive evening. Today, almost a century after its creation, Aurélien Carrelas, a native of Audois who loves his land, has developed the product in three versions. You can enjoy them on the premises as cocktails or just chilled, accompanied by boards to share. Local beers and wines add variety to the experience. DJ night on Thursdays in July and August. Entering the lair of the Cabanel house is to discover the Carcassonne of the 19th century with, in its courtyard, the superb ironwork marquee designed in 1868 in the Eiffel style. A historical place not to be missed, the place has inherited the secrets of the famous Micheline, a recipe dating back to the 4th century, and of the Or-Kina, a plant-based aperitif. It also produces a pastis 100% Carcassonne and the famous "Crème de Menthe" and "Crème de Citron".

Set on gently sloping hillsides, this 50-hectare estate with its maritime influences is a marvel of its kind! Until 1781, the sublime château was called Ancely. After that, it took the name of "Nerly" and finally became "la Négly" in 1807. Nowadays, Jean Paux-Rosset and his family take care of the beautiful development of this vineyard. His cellar will welcome you for an unforgettable tasting with a background of wine stories. The estate expanded in 2006 with the purchase of the neighbouring estate of La Boède and offers a range of sustainable wines.

The Foussat family has been established on the Malepère massif for two centuries. In 2009, the^5th generation rolled up their sleeves to extract the very best from their grapes. The 43-hectare estate, which includes Merlot, Cabernet Franc, Cabernet Sauvignon, Malbec, Grenache, Chardonnay and Pinot Noir, has returned to its roots. Promising vintages and light, mouth-watering wines: côtes-de-prouilhe (whites and rosés), AOP malepère (rosés and reds), pays d'oc (reds) and malbec.

Among the 250 or so producers of Blanquette de Limoux, Maison Guinot is an estate worth mentioning for its friendly, human-scale approach. Since 1875, blanquette has been produced by hand in a family-run business, with bottling on site and manual riddling of 30,000 bottles daily. During the 45-minute "Bulles et Lumière" tour, you'll discover the cellars and all the stages involved in making this sparkling wine. The tour is completed by a 3D video, and your visit ends appropriately with a tasting.
