In the heart of the pond, the shellfish farming area has existed since the early 1960s. Eighty percent of the shellfish is sold directly in the Grau de l'étang and in the surrounding villages. The Leucate oyster, the very famous "Cap Leucate", is an oyster with recognized virtues: it is very hollow and its flesh is very firm with a pronounced taste of hazelnut. But the oyster is not the only star of the pond, also rich in clams, mussels and other shellfish!
