DOMAINE CAUVARD

Winery
Closed

The Cauvard family has been working the vines for 400 years but it is only for 40 years, or 3 generations, that the estate exists as a winegrower producer. The rather contemporary house hides its treasures well. The first is Clos de la Maladière, a 2 ha monopoly in a red and white village, located behind the house that houses 800 m² of cellar where the estate's wines, produced from the 20 ha of vines cultivated, are aged. When we know that Henri Cauvard, assisted by his son Julien, is the president of ODG "Les Vins de Beaune", we can only imagine their love and passion for the Beaune Appellation, which they produce so well. Their First Growths, Beaune Teurons, Beaune Cent Vignes, Beaune Bressandes and Beaune Grèves are sufficient for this demonstration. The wines outside Beaune, are among others Corton Charlemagne completed by Villages Chorey les Beaune, Aloxe-Corton, Pommard les Noizons, Volnay... The cultivation of the vines is in rational control, the harvest can be manual but also automated. The 2018 vintage was vinified in the new 400 m² winery, whose cellars join the house's through a tunnel.

The BIVB, Bureau Interprofessionnel des Vins de Bourgogne, a 1901 association, founded in 1989, brings together under its umbrella all the players in the region's wine industry: winegrowers, cooperators and négociant-breeders.

The BIVB aims to give a common axis to the wines produced in the region. Raising awareness, promoting, organising, selling and making known, this is the credo displayed. To preserve the assets, the quality and the specificities of Burgundy wine in a context of increasing internationalization of markets. The initiatives are aimed at both branches of the industry (production and sales) as well as at both ends of the chain (from producer to consumer). The website www.vins-bourgogne.fr has become a veritable encyclopaedia for everyone's use. Discover the Burgundy of wines, understand the aromas, the Climates, manage your cellar, know the agenda of wine festivals, know who are the winegrowers members of the Charter "de Vignes en Caves" who pamper their visitors, in short, know everything.

The BIVB runs "L'Ecole des Vins", which offers fun but studious training courses for wine lovers who want to learn more.

The BIVB will be in charge of running the future Cities of Wines and Climates of Burgundy in Beaune, Mâcon and Chablis. Opening to the public in the spring of 2022

MAGNUM

Sale of wines and spirits

The wine cellar of the Hospices is ideally located in the city centre of Beaune. The great speciality of the house is the sale of old vintages, purchased from individuals or regional areas. The Cellar des Hospices offers over 3000 wines from all over France. Here you will discover beautiful discoveries in bourgognes, in Bordeaux, in champagnes or in spirits… Attention! Connoisseurs know this well, but we prefer to specify it: the old vintages are not guaranteed because their conservation cycle is not set. However, you can find here bottles dating back to… 1906! Of course, the prices are not within everyone's reach, but the Cellars of the Hospices also offer some more recent bottles at very reasonable prices. From April to October, the boutique is also a wine bar with a pleasant terrace overlooking hospices: the ideal place to enjoy a wine from the selection of the week around a cheese board or charcuterie. Francisco Palazon and his team always greet you warmly and offer wine in bottle, magnum or boxed. A place for researchers of treasures… to offer or to offer!

DOMAINES ALBERT BICHOT

Winery

Since its birth in 1831, Maison Albert Bichot has become a world renowned wine house. Owners of 100 ha of vines through Burgundy and 6 Chablis domains in Chénas, a commune of northern Beaujolais, passing through Nuits-Saint-Georges and Beaune, the House completes its production by the trading of grape or must for an equivalent of 300 ha cultivated in a reasoned or biological manner. Vinifiant and raising its wines out of 4 vat, are more than 2 million bottles produced each year for a palette of 150 names, from the Bourgognes to the most famous Grands Crus. The wines of Domaine Tivities begin to be well known to the individual, many are specialized guides that reward him for good grades. It is always a pleasure to meet Jean Luc Boudrot who integrated the Domaine Tivities in 1994 and took over the entire operation in 2004. Do not hesitate to "get off" in Cadus because the estate is located right behind the church and near the castle. By visiting him, you will have the pleasure of discovering a former farmhouse where he has set up his cellar, his cellar and his cellar which reflect his ambitions to make beautiful things, beautiful wines. The 6 ha mined vines concentrate on Cadus, Aloxe-Corton and Savigny. The well-rounded ploughing culture allows the area to offer a range consisting mainly of red wines in village names, first crus (Cadus and Aloxe-Corton) and finally in large vintages: Corton-Bressandes and Cortons Renardes. The new plots of Cadus Blanc start producing their wines. Thus, the Cadus White Village "Toppe d'Avignon" comes with its first vintage 2014. Do you feel like enjoying a fruit flavour? Think of the products of Emmanuelle Baillard! Coulis, fruit juice, jams and jellies, syrups... Blackcurrant, raspberry, mango, vine peach, mirabelle prune, guava, tomatoes... Whether they are from here or elsewhere, they are from France, Emmanuelle selects them himself; he does not hesitate to travel to the other side of the world. Three fruit nectars come from organic agriculture: the blackcurrant nectar, the apricot and the mirabelle one. He made two exquisite products for the Bernard Loiseau group: the Morello cherry nectar and blackcurrant buds, the Lorraine mirabelle and grapefruit nectar. This year, the range has extended with a salted butter caramel and blackcurrant of Burgundy. As sweets or in spreads... A delight. As for the salted dishes, find vinegars with fruit pulp, confits, spices like the pepper with blackcurrant, made from blackcurrant buds harvested in February. A noble product, with vegetable and fruity flavour. Our favourite? The Reunion mango confit and the shallot of Brittany. A great combination.

DOMAINE JEAN-CLAUDE BACHELET ET FILS

Winery

Domaine Bachelet covers 10 hectares of vines between Saint-Aubin, Chassagne-Montrachet and Puligny-Montrachet. The work in the vineyards is rigorous and respectful of the environment, with ploughing and the implementation of sustainable viticulture. The quality of our wines is the result of producing healthy grapes with moderate yields. The estate has over 20 different vineyard plots. Vinification and ageing are carried out in such a way that each wine reflects its unique terroir. Vinification is natural, with indigenous yeasts and slow fermentations. The wines are aged for 18 months in French oak barrels on fine lees. Two winters in the cellar contribute to the finesse, depth and structure of the wine, necessary for its ageing capacity. The estate's roots go back to the mid-17th century. Today, Jean-Claude and his sons, Benoît and Jean-Baptiste, manage this heritage. The approach is traditional, from vine-growing to vinification and ageing. Preserving the heritage and cultivating wines that express their terroir of origin: that's the domaine's philosophy. Domaine Bachelet offers a wide range of white wines, such as Chardonnay, Saint-Aubin Premier Cru and Puligny-Montrachet Premier Cru, as well as red wines. Visits to the estate are possible by appointment.
