For over 35 years, Thierry Prat has been building relationships with Burgundy's finest estates to offer a wide range of wines. Maison Chanson that has existed since mid-18th century is set on the historical site of the Oratory bastion, one of the ancient defensive towers of the city of Beaune, a former military buildings built in the 15th century. Since 1999, Chanson belongs to the Champagnes Bollinger family group. Chanson produces more than one million bottles per year on more than 100 appellations, distributed between Beaujolais, Mâconnais, Côtes de Beaune and Côtes de Nuits and Chablis. The wines of the estate are produced from the 45 ha of vineyards whose group is owner in Côtes de Beaune, with a majority of Premier and Grand Crus. These vineyards, in reasoned culture, provide 25% of the supplies, other grapes come from harvest made in the climates of the partner wineries. Domaine Jean Monnier is undoubtedly the one of a passionate… And because of this, this is an area that has been run by the same family since 1720! Today, Jean-Claude and his son Nicolas are head of 16 hectares of vine from the Beaune Coast. Their catalog consists of white as red and Burgundy appellation, Villages or even First Cru swith names that make it dream more than one: Meursault Les Charmes; Pommard Fremiers or in Puligny-Montrachet village Little Nosroyes… In short, very beautiful products often recognized as such by specialists. Avintures is a whole new world for the wine-curious. Thomas Turner, a wine connoisseur trained in Viti and the Asian wine trade, is joined by Jingjing, who is at the cutting edge of new technologies. This is the story of three boys: Alexandre Faupin, Mr Technical, Nicolas Seyve, Mr Production, and Jean-David Camus, Mr Image, who had in common the love of beer and their beloved town of Beaune. He belonged to Philippe the Bold, son of King of France Jean the Good and Duke of Burgundy (1342-1404). This is why it is commonly called the Château Philippe le Bold. Today, the wine sector covers about 98 hectares and is known as one of the most important in Burgundy. It offers a wide range of designations: Chardonnay Old Vines, Mercurey, Clos La Chaise Dieu in monopoly and first two vintages of Santenay for whites. After having represented Burgundy's wines for twenty years, Yvonnick Debray bought a vineyard in 2006. The 1,000 m²-fermenting room and cellars are situated in the heart of Beaune, at a stone's throw from the hospices. Between properties and marketing grapes from a reasoned culture, it is the equivalent of 20 hectares of vineyards, spread over Côte de Nuits and Beaune that are transformed. The wine-making is entrusted to Jean-Philippe Terreau, a cellar master whose experience guarantees the elaboration of quality wines.

The typicality of each area is respected, and it is as many whites as reds that are offered. The whites range from Aligoté to Corton Charlemagne Grand Cru through Mercurey, Savigny, Meursault or Chassagne-Montrachet. The range of the reds stretches from Gevrey-Chambertin to Santenay. Domaine Mestre, which cultivates the quality of its welcome as much as its vines, has let a breath of fresh air blow over its organisation and its labels. The estate covers 17 hectares of vines spread over five villages in the Côte de Beaune in the appellations of Santenay, Aloxe-Corton, Ladoix, Maranges and Chassagne-Montrachet. In 1957, it all began in a small village on the Hautes Côtes, in the hamlet of Orches, with 10 winegrowers. Today, it has 80 associate winegrowers working 350 ha of vines from Maranges to Marsannay on 1,472 plots. It is the only cooperative winery in the Côte-d'Or region to have earned the Vignerons Engagements label, selling 3 million bottles a year of sustainable, organic and eco-designed cuvées. 40 references, from regional appellations to grands crus and Crémants.

This small private mansion houses on its ground floor a wine shop that offers a selection of both quality and affordable wines in an intimate setting.  Christophe Meux puts his knowledge of wine at your disposal to advise you and even to make you taste his selections of the moment. An enomatic allows you to keep under nitrogen the bottles of 4 whites and 4 reds opened for their discovery. Friendly, La Maison de Maurice has also a wine bar with the possibility to accompany the wines with charcuterie boards and cheeses prepared with regional products for a gourmet moment. The small inner courtyard offers a real charm between the shop and the bar. The wines of Maurice are Burgundian, from the Rhone valley of the Jura or the Loire. They are preferably organic and sometimes natural. You have at your disposal a catalog of more than 250 references at prices as fair as possible.

The wine estate is located on the terroirs of Meursault, Pommard, Puligny-Montrachet, Beaune and the hill of Corton. The old vaulted cellars of the Hospice de Meursault from the 15th and 17th centuries house the vintages of the house since the 19th century, founded by Jean Ropiteau. In 1988, Jean-Luc Aegerter acquired a winery in Nuits-Saint-Georges, and in 1994, he bought his first vineyard plots of 1.17 ha. Brasserie de France, 10,000 hectolitres/year, has created a "Bière Expériences" workshop open to individuals and employees. The concept is simple: 20 people brew their own beer for 4 hours. After 21 days, they get their beer back. Understand the differences between beers, find out what an IPA is... The first vines of the Maison Jadot were planted in 1826, three generations of this family succeeded there. In 1984, Jadot became an American property but retained its Burgundian soul. Today, Maison Louis Jadot controls 220 hectares in Burgundy, including 80 in Beaujolais. Since the spring 2013, Maison Louis Jadot has been open to individuals. Its shop is installed in the north of Beaune, in the heart fermenting rooms. The architecture of the fermenting room of Rouges is impressive; it is reminiscent of a cathedral. That of the white, equally large, is more contemporary and contrasting sharply with the previous one. The long raising cave of a hundred metres, houses nearly 4,000 references. The tasting that closes this memorable visit allows you to discover the Louis Jadot wines. The tours are only in small groups; the shop is accessible without the visit.

Christophe Gremeaux, a sommelier of training and experience, has created a veritable temple dedicated to Spirits since 2011 in the heart of Beaune. Domaines et Maison Famille Picard, owners of 140 hectares of vines, produce some 60 appellations, including such nuggets as Chassagne-Montrachet Premier Cru, Corton Grand Cru "Clos des Fiètres" and, of course, Chassagne-Montrachet Clos du Château.
