You can visit the roasting workshop, the exchange with Matt is very pleasant and open. Taste the coffee of the moment, fresh, subtle, like the Jimma-Agaro Biftu Gudina, prepared in a filter (30 g coffee and 500 g water), a coffee with flowery flavors (lily and lily of the valley) with fruity flavors like strawberry, blackberry and blood orange. Tucked away on a quiet village lane, Matt’s coffee shop is easy to miss but an absolute gem. His focus on light-roasted organic Ethiopian coffee, combined with a French wine-inspired approach (balance, terroir, traceability), offers a unique and delicious coffee experience.
Matt was warm and chatty, making the visit even more enjoyable. We couldn’t resist taking home a variety of coffee beans! You can also find him every Sunday at the market in Beaune.
