Sylvain Pasquier, for more than 11 years, has been our very own Marcel Pagnol in this renovated village of St JO. The bakery (ex-Fournil de St Jo) has moved 20 meters away in bright and brand new spaces on rue Barbara. 150 bakers in France offer this Bagatelle recipe and Sylvain is one of them! Natural leaven, slow kneading, traceability... all the ingredients are gathered to make an exceptional traditional baguette. It is in the same spirit that Sylvain elaborates his other breads. His 2 kilo wheel cake made in the old fashioned way is a great success. Wrapped in a cloth, it keeps for a week. His buckwheat bread and his bread with olive oil are also very popular. New: organic breads have made their appearance for our happiness with the big spelt or the organic wholemeal bread. As for the pastries and cakes, they are still 100% homemade with delicious croissants to start the day. The beautiful creations vary according to the season and are tempting. The Saint-Jo (cake with three chocolates), the kouign-amann, the small soft pastries, and many other sweets to enjoy. Cime is the ambitious project of Esther and Gregory. The three friends and associates chose this evocative name and the hot-air balloon that represents the brand because they intend to take you on a journey over the mountains and volcanoes whose slopes are ideal for growing coffee. This is Nantes' first artisanal specialty coffee roaster. In this pretty coffee workshop, the beans of prestigious Arabicas are selected with the utmost attention to quality, freshness and respect for producers and the environment. Sacks of green coffee occupy the back of the establishment, coming from Rwanda, Bolivia, Panama, Honduras, Ethiopia, El Salvador... thanks to the shortest possible circuits. And it's the Giesen roaster who roasts the beans in a way that's adapted to each production: the coffee beans gain in volume, lose their moisture, release their aromas... The beans are then left to rest for 24 hours to allow the gases to evaporate. This artisanal roasting process produces coffees of the highest quality, with transparent traceability from producer to cup. The coffees are sold as beans or ground to order, and are also available to catering professionals: Meraki and Arlot Cheng have already adopted them. Each coffee is accompanied by an explanatory sheet to learn more about its identity, profile and origin: for example, Finca El Encino from Honduras seduces with its milky texture and chocolate-hazelnut notes. Or Karambi from Rwanda, whose sweetness underlines its citrus notes. El Salvador's Divina Bourbon, whose natural drying process reveals notes of honey and caramel, will also surprise you. In 2017, cellar master Benoît Chaigneau founded Distiloire, an artisanal spirits producer that makes Gin 1924, Pastis Meskad and Vermouth Douce Folie from local wines. Some of the plants are organically grown and sourced locally (Val de Loire), and the alchemy occurs to create authentic spirits with a flavor far removed from that of industrial beverages. While gin is essentially made from juniper berries, coriander seeds, angelica root and chamomile, pastis features no less than twenty plants, including the essential licorice and anise, as well as Tonka bean, cardamom, Sichuan pepper, lemon balm and thorn shoots, a nod to its Vendée origins. Benoît is the only professional to produce these beverages in the department, and one of only a handful in the West. Now certified organic, the passionate cellar master won two prizes at the Concours aénéral Agricole Paris 2020: gold for Gin 1924 and silver for Pastis Meskad. The latest award: Spiced Rhum 5.5. The smiling Chloé embodies the Nantes shop and we feel her happiness to welcome us in her fair trade grocery store (that's her name), a militant and radiant grocery store! The place is surprising. Two areas invite us to indulge in gourmet food: on the ground floor, the grocery store specializing in bulk, very complete with useful products for our daily lives. Upstairs, in a warm space with comfortable and colourful furniture, the lunch restaurant and the tea room! This light-filled place is perfect for stocking up on good seasonal fruits and vegetables as well as market produce, thanks to the market gardener's section at the entrance. Very fashionable and very practical, a large section devoted to bulk food is there: we also stock up on legumes, rice, lentils, buckwheat but also on good cereals, muesli... for our balanced breakfasts or snacks for the children. The zero-waste policy is also here again with hygiene or household cleaning products, by weight. We come with our own containers and refill them with laundry detergent, soap and dishwashing liquid. Bulk is also found with everyday products (flours, pasta) and other more exotic products (ginger, raisins) with a desire to clearly show French or foreign origins.
