Saint-Hilaire's history is closely linked to that of its abbey, built in the 3rd century. Originally called Saint-Sernin, in the 10th century it took the name of the first bishop of Carcassonne. During the Hundred Years' War, the abbots built fortifications around the village, which suffered from plague and famine. Then, in 1547, the village was burnt and partly destroyed by Protestants. The abbey closed its doors in 1748, just over two hundred years after the monks developed the world's first sparkling wine (1531), blanquette. Saint-Hilaire's last troubles came during the French Revolution.
