Christine and Jérôme Menarello open their small grocery store next to their bar restaurant every day from 5pm. At the Caveau de Saint-Gengoux-le-National, an authentic wine cellar attached to the Cave des Vignerons de Buxy since 1976, you'll discover the Côte Chalonnaise AOCs at a very good price/pleasure ratio: Côte Chalonnaise, Montagny, Rully, Mercurey, Givry, not forgetting Crémant de Bourgogne or Mâcon Saint-Gengoux-le-National. She prepares her pastries in the former monastery school of the town, a place highly frequented by tourists, and a tea room is now open. Gabrielle, with her pastry chef's diploma in her pocket, but above all with a certain maturity regarding customer service and a real passion for good food and pastry, has found a niche for her productions. She prepares cakes according to her inspirations and especially at the request of her customers.

On the banks of the Nohain river, the oil mill has been producing for over 150 years in a most enchanting setting. The Robbe family, they are craftsmen since 1924, of preserves of all kinds! The specialty is the snail, but you will also find terrines, fruits in syrup, jams, mushrooms and various prepared dishes. Between Auxerre and Avallon, at the aquaculture farm you can go for a walk or fish for trout (equipment provided), or even refresh yourself in the shade of the two hundred year old plane tree. If you're a fan of short circuits, you'll want to go directly to a well-known producer, Gaec Pardon. It's a family business run by Guy and his two sons Pierre and Sébastien, nestled in the hamlet of Chavannes. Over 150 Alpine goats are part of the herd. The family farm also boasts 70 Charolais cows and 50 dairy cows, making it possible to multiply the number of creamer mixes and offer numerous cheeses and Charolais meats for direct sale. You can also visit the facilities and see the animals.

Bar and cellar in one, here you have everything you need to taste before you buy! There's a vast choice of beers, wines, rums and whiskies. From Burgundy, France and Navarre! All the know-how of the Monts et Terroirs brand can be found, among other things, in the Comté cheese with a maturing period ranging from 5 to 34 months. The other regional appellations are very well represented. On the delicatessen side: Jura wines, syrups, beers, lemonades, jams... Really a very nice gourmet address.

This cooperative, located a few miles from Vouglans Lake, is made up of 21 dairy farmers who joined the municipality of Arthenas in 2010. They deliver 7 million litres per year. These are processed on site, mainly into Comté PDO (700 t./year). This workshop also produces butter, cream and cottage cheese. The adjoining shop, all rounded, has a wide range of other regional cheese specialities. A selection of local delicacies completes the offer. Finally, there is an organic Comté cheese.

This craft brewery stands out for the quality of its products, which are all made from local ingredients. The result is a range of beers, from light blondes to full-bodied brown ales, with original names that make you dream. Like "L'Encre sympathique", "Nymphéa" or "Heindrun", for example. Guided tours are also available. And La Perle Noire is particularly committed to the environment, to the point of having implemented various measures to reduce its carbon footprint.

Vineyard between the Loire and the Allier, the Domaine de la Perrine spreads over the village of Livry, in the south of the Nièvre. On a surface of 3 ha, the vineyard takes root on clay-limestone soils favourable to an organic viticulture and dominating the Allier Valley. The vines are shared between Chardonnay and Pinot Noir, and these Nièvre wines are expressed in three colors: "Domaine La Perrine" red, white and rosé. The comté is a raw milk cheese with a baked pressed cheese. It is handcrafted in the Jura Massif (Doubs, Jura and part of the Ain), and has had the Appellation d'origine contrôlée since 1958 and the Appellation d'origine protégée since 1996.

History. The County Interprofessional Committee was born on June 11, 1963, it was then called "Comité interprofessionnel du Gruyère de Comté", and took its first steps in 1968, when a major societal crisis broke out throughout France. It ensures that consumers' expectations are met in terms of environmental protection, non-industrialized artisanal processes, natural and authentic products. And it allows producers, cheesemakers and ripeners attached to a difficult terroir, the Jura Massif, to exercise a sustainable economic activity, a factor in land use planning and landscape protection.

The Comté sector now includes 2,600 agricultural holdings, more than 150 production workshops, small cheese dairies in villages called "fruitières", and 16 specialised ripening houses: each one according to its site, its cellar atmosphere and its expertise, provides the county with a ripening method that is specific to it and adapted to the cheese it has been delivered.

The products. The county is the first French PDO cheese in terms of tonnage (63,243 T in 2016). A county cheese wheel weighs an average of 40 kg with a diameter of 60 cm and a "heel" (thickness) of 10 cm; it requires an average of eight months of maturing, but the duration can range from 4 to 24 months. 400 litres of milk are needed to make a 40 kg wheel. A Montbéliarde producing about twenty litres in two milkings, so you need the milk of twenty cows to obtain a county cheese wheel, and also twenty hectares of minimum meadow, because each cow benefits from a minimum of one hectare of meadow.

Employment. The number of direct jobs in the County sector is estimated at nearly 7,600. The average annual milk production is about 580 million litres.

"Le Moulin d'Arnaud" offers breads kneaded and baked on the spot, and it is a pleasure to see the wide range of choices: the pavé de rye, the pavé de châtaigne, or the Pain du Mineur with wheat and chicory, the Pavé d'Eon plain or with chorizo, without forgetting pastries, such as apricot oreillettes or mini donuts filled with strawberry or chocolate/nut. From "La Tentation", Arnaud's other address (located rue de l'hôpital) to the "Moulin d'Arnaud" there is only one step that gourmets will easily take!

This young domaine is located in Buxy. Laurent Cognard bought his first vines in 1997, and settled here in 2006 with 5.5 hectares. Today, he manages almost 18 hectares of vineyards, from the Côtes de Beaune to the Mâconnais, including 6.4 ha in the Montagny^1er cru appellation. The estate, which produces white, red and crémant wines, limits its phytosanitary inputs to a minimum, earning Terra Vitis certification for the 2020 vintage.

Maison Marc, named after the grandfather, is the last remaining artisanal pickle producer in France! First of all, there's plenty to be amazed about. Here, gherkins are grown without pesticides or herbicides, harvested by hand from the 16 hectares planted, and packaged in Chemilly. A truly local product! And a crunchy family story. Products range from gherkins and asparagus to veloutés and mustards. A list of their many sales outlets can be found on their website.

If you're a beer lover, then it's impossible to pass through Vézelay without taking a break, down in the village, at this independent microbrewery installed in 2019. Here, all the beers are brewed and bottled by hand in small quantities. Thus, each vintage is unique and composed of ingredients from organic farming. Among those proposed, we like the "Cuvée Blonde bio" with ginger, as well as the brunette with spices. Two very nice discoveries, among a generous and tempting offer!

This establishment is a constant invitation to indulge. It's hard not to fall in love when you pass in front of this tempting window display Chocolate is king here, and the assortments will have everyone in agreement. As for pastries, all the classics are brilliantly executed: from macaroons to éclairs and millefeuille. Dandelion is an aromatic and medicinal plant farm that came into being in 2013 under the impetus of Chloé Fourcault, "nature lover and earth worker" as she likes to define herself. Some twenty plants (hawthorn, hyssop, thyme...) are grown, picked and dried here, while others are harvested directly from the wild. Working in the organic circuit, everything is done by hand. Subtle blends, comforting flavors that you can find on the farm or in local outlets.

The Mont d'Or: this is a very famous seasonal cheese. It is marketed according to a strict calendar, from September 10 to May 10. Its characteristic is already in its circular box covered in spruce. The cheese itself is encircled by a strap of the same wood which gives it that special taste. The Maison Arnaud has taken over this cheese factory to make it. You will also find many local products. Here it is a reflection of an ancestral know-how.

Monts&Terroirs started more than 70 years ago with the first cooperatives of maturing in Franche-Comté, then with partnerships of big families. Also established in Savoie, it is part of the heritage of these regions and of the producers of the SODIAAL dairy cooperative. Comté, Beaufort, Morbier, Abondance, Reblochon for the PDO*, French Gruyère, Savoy Tomme, Emmental Grand Cru and Raclette de Savoie for the PGI**, or organic Emmental are all flagships. Numerous cheese producers in the Jura Mountains work with Monts&Terroirs.

Like its counterparts, the Biocoop des Grandvalliers only sells organic and fair trade products, refusing GMOs. Highlighting about forty regional producers, 5 market gardeners and 4 bakers. 150 references are listed, food, cosmetics, baby specialties and cleaning products. Most can be obtained in bulk. The store stands out with the selection Bio je peux, references of current consumption at small prices, in order to twist the received idea that the bio is accessible only to the well-to-do wallets.

This is a beautiful gourmet shop run by the Benoit family. These professionals spare no time and effort to ensure that their establishments (one of which is located in the Epenottes area of Dole. Here, the ancestral Jura tradition of turning milk into cheese continues. In the past, Jura farmers were looking for a way to preserve milk in winter. Cheese-making required large quantities of milk, so local farmers banded together. The cooperative is the image of the desire to preserve know-how and an authentic product, which can be found in this point of sale on the Champagnole-Salins axis.

We never tire of stopping by this beautiful shop where chocolate is king. Completely redesigned recently, in a glance you have the excellent creations of Damien Benetot. The quest for the best aromas to marry with the chocolates remains essential and innovation is a signature of the house. It is an airy and very bright space of 350 m². The range of products has expanded, but the spirit has not changed, it is still the same, while maintaining this notion of cooperative. If the word "raw" has a meaning, it is here that it is proclaimed and claimed loud and clear. This small cheese dairy above Poligny is dedicated to raw cheese specialities: butter, cream, fromage blanc, comté and the house monopoly: "Le bleu de La Marre". It is to the credit of the cheesemaker Paul Jeusset to have created this product. Produced in 2 kg tomes after 15 days of maturing and pricked by hand so that it is blue, this raw blue is softer and creamier than its predecessors. 2 Comté cheeses are also available, one sweet and one fruity, with Martine's smile as a bonus.

Les Galeries Morvandelles, a charming delicatessen, offers a very wide choice of Burgundian products (but not only), both savoury and sweet: Morvan snails, craft beers, 80 types of tea, spirits, wines, chocolates, local foie gras... You'll also find kitchen accessories and small decorative items. In short, everything you need to treat yourself. And even with a sweet tooth. A great place to bring back delicious souvenirs!

The small farm is surrounded by meadows as far as the eye can see. The heliciculturist does his utmost to ensure that his "horned beasts" evolve without stress: they spend 45 days in a greenhouse nursery, then "graze" in the open air until they reach their optimum size. They are processed in the farm's laboratory, buttered in the form of "croc'apéro" (with wheat paste, porcini mushrooms, wild garlic...) or in verrines short-boiled in Arbois wine, to spread, with wild garlic, candied in duck fat...
