The Foussat family has been established on the Malepère massif for two centuries. In 2009, the^5th generation rolled up their sleeves to extract the very best from their grapes. The 43-hectare estate, which includes Merlot, Cabernet Franc, Cabernet Sauvignon, Malbec, Grenache, Chardonnay and Pinot Noir, has returned to its roots. Promising vintages and light, mouth-watering wines: côtes-de-prouilhe (whites and rosés), AOP malepère (rosés and reds), pays d'oc (reds) and malbec.

Among the 250 or so producers of Blanquette de Limoux, Maison Guinot is an estate worth mentioning for its friendly, human-scale approach. Since 1875, blanquette has been produced by hand in a family-run business, with bottling on site and manual riddling of 30,000 bottles daily. During the 45-minute "Bulles et Lumière" tour, you'll discover the cellars and all the stages involved in making this sparkling wine. The tour is completed by a 3D video, and your visit ends appropriately with a tasting.

Would you like to travel back in time to medieval times? In their shop full of character, Céline and Renaud make game and beer lovers happy. In total, they have nearly 350 references in both fields! In the shop, you will find beers of all nationalities, role-playing games and various accessories on the theme of the Middle Ages (medieval jewellery, drinking horns, olifants, clothes, mugs...). The duo also offers tasting evenings and game demonstrations. Finally, the curious can venture into the Antre de l'Echoppe, the shop's little brother, where it is possible to discover many beers and spirits.

We've been dreaming of a local beer with an Occitan name! Xavier Benoist has made it. A brewery engineer, he produces artisanal beers in Carcassonne, using French wheat, barley and hops. La Ciutat ("the city" in langue d'oc) comes in seven varieties: white, blonde, brown, Pils, amber, Ladies and Éphémère. Three local sodas round out the range, in the tradition of brewer-limonadiers, including the famous Carca-Cola (caffeine-free). Laurent Maynadier, winemaker, and Marie, his wife, oenologist, work their wine with great passion in this four centuries old estate, whose exposure to the sea allows the grapes to benefit from the sea spray all year round. In the heart of the village, enter this Ali Baba's cave with a thousand Oc treasures taken over by Gérard Mas. In 2010 Nicolas and Amandine decided to give another dimension to the family estate by making their own wines in an organic way. Passionate and respectful of the land and the vines, the grapes are harvested by hand and then vinified in vats to give a nice range of sparkling and still wines in AOP Crémant and Blanquette de Limoux and AOP Limoux white. L'Antre de l'Echoppe is both a factory and a beer tavern, located just a stone's throw from its big sister, the Echoppe Médiévale. Located next to the Place des Quatre-Fontaines, in Narbonne's pedestrianised city centre, the address has an amazing setting. A newcomer to Narbonne, Stéphanie Asco's highly attractive shop is a concentrate of good taste and gourmet delights, and it's because she doesn't want to be like everyone else that you'll find everything here that you won't find anywhere else. First of all, you'll discover a fine selection of wines from the region and beyond, all organic or biodynamic, but also spirits, gins, rums, digestifs... And what can we say about the selection of gourmet products such as Kalios smoked olive oil! A bit of literature and the very enlightened advice of Fanny the epicurean.

Here's a temple to wine that's a dream come true, with its wide choice of products and attractive presentation. This cooperative cellar brings together 45 passionate winegrowers on 280 ha, all of whom have put their grape varieties on the map: Les Pujots, Les Vignerons, le Grussius, IGP Les Sens de la Garrigue, IGP Les Sens des Etangs and AOP La Clape Alta Vinha. The first vines of Château Capitoul, were planted in the ^14th century. It was recognized and elevated to the rank of Cru La Clape in 2015. The wines harvested on the 92.4 ha of the estate have the High Environmental Value label and are part of prestigious appellations. These are the ones you can taste at the cellar or at the restaurants of the Château.

It was in 1938 that the winegrowers of Ventenac, grouped in a cooperative, acquired this winegrowing "folly". When you enter the cellar, you will discover a place full of history, as well as vintages representative of the richness of the Minervois region and of the organic labeling. At the foot of the castle, you can admire "La Marie-Thérèse", the only "boss's boat" still existing in Europe. Built in Toulouse in 1855, it was used to transport goods and wine on the Canal du Midi until 1960.

Amandine has taken over the reins of the estate and creates magnificent terroir wines, imbued with the salinity of Peyriac de Mer's maritime soils. A visit to her new cellar in the medieval streets of the historic village center is a must! As you taste the wines, you'll hear all about the Corbières, the Mediterranean grape varieties, the history of the area, the influence of the ponds, the winds and the sun... Not to be missed!

The domain of Auzines owes its name to persistent oaks whose acorns and small leaves are agitated over the vineyards. All grapes harvested on the field are typical of the Corbières: Carignan, Grenache and Syrah, and Bruno Bernet, the enologist and winemaker of the domain, he focuses on improving the quality of its red vintages, thus; he enhance the soil and limits production to the best mature grapes. Fleurs de Garrigues is the main vintage of the domain, its cassis and blackberry flavors perfectly blends with rosemary, thyme, lavender and broom, which are typical of the surrounding scrubland. The domain offers a warm welcome, and the tasting of their AOC is a pure delight.

Here, for four generations, the work of the vine is guided by the same objective, a quality of the grapes at the harvest so that the material testifies in the glass of the specificity of the soil. A superb underground cellar has been dug for barrel breeding. You can visit it, as is the property museum that belongs to the Gualco family for a good century. The pond did indeed exist: Two centuries ago, he was the favourite place of fishing of the archbishops of Narbonne, before leaving to beautiful vineyards. You will discover a wide range of wines reflecting the Corbières appellation. The Gris des Doves, very fruity in mouth, a summer wine par excellence, or the sweet wine with taste of honey and jam, nuts with a very good length in mouth, it is divine with foie gras or roquefort.

After having made the Montpellier oenology school, Sophie started in 2000 in the great Vigneronne adventure. It works with respect for the environment, fits into a "bio" logic, planted trees, stocked nest, sheep of passage… and is inspired by traditional methods of wine development. Château Pech-Latt is one of France's pioneering organic winegrowing estates, dating back to the ^8th century, in a landlocked area nestled in the Corbières mountains. Since the 80's, the Greuzard family dreamed of making wine. This was done in 1987 with the purchase of parcels of carignan in Sallèles-d'Aude. The development of the farm continued in 2001 with the purchase of the Domaine de l'Herbe Sainte. On their land, the winegrowers produce in a reasoned and environmentally friendly way. Built in 1620, the family estates of the Château de Pennautier covering 200 ha are rich in history linked to the recognition of its wines, long served at the court. Thanks to Nicolas and Miren de Lorgeril, this Cabardès has a deep garnet color, a black currant and garrigue nose, both powerful and deep. The cellar combines modern winemaking techniques with the naturalness of a winemaker's architecture. The Domaine J. Laurens, with its exceptional and even confidential vintages, never ceases to exalt the senses through the chenin, chardonnay, pinot noir and mauzac grape varieties that make up their blanquettes and crémants de Limoux. Jacques Calvel at the head of the company, remains modest about the shower of medals that crown his superb vintages, the fine connoisseurs are not mistaken, taste quickly "le clos des demoiselles", "le moulin" or "la rose n°7" with notes of lemon, mandarin, almond and brioche, for a unique sparkling experience!

The cooperative has 130 members and a vineyard of 1100 ha. Its modern winery produces H.V.E-certified AOP Fitou, Corbières, Muscat de Rivesaltes, Rivesaltes and vins de pays. Séverine and Gilles Contrepois have been working on a magnificent schist terroir exclusively on hillsides for the past ten years. They have chosen organic farming and, without a doubt, with good reason. Recently, the couple broke away from the Fitou, Corbières and Rivesaltes appellations to label their wines "vin de France" in order to obtain more creative and ethical freedom. Ingenuity allows to create wines that are different because they are fine, fresh, elegant, complex, harmonious. They are the reflection of the terroir.

Family property since 1804, this castle was built by the Viscounts of Narbonne in the ^12th century. On the 32 hectares of stony or clay-limestone soil, exposed on the south-eastern slopes of the Corbières maritime massif, we find the characteristic grape varieties of the Languedoc: syrah, grenache noir, carignan and mourvèdre. These soils produce wines of excellence, with low yields. Proof of this is the AOP Corbières Ermengarde, the flagship of the estate, which regularly wins awards, including two stars and the "coup de coeur" in the Hachette guide 2021.

On this rocky soil, exposed to the Cers wind, the Sarrat Goundy estate has given birth to small wines of character resulting from the marriage of stone and different grape varieties, as witnessed by the Cuvée du Planteur, including a mineral, racy rosé, 60% Grenache and 40% Cinsault. A fine tribute from the son to his father, known as a vine planter. The winery is located just outside Vinassan, in the commune of Armissan. In the 1970s, the villages of Peyriac de Mer, Sigean and Portel-des-Corbières joined forces and founded the "Rocbère" brand, a nod to the rock that overlooks the Berre River. The cellar took a decisive turn in 1993 with the old gypsum quarry of Portel, 80 meters under the ground, where the wine is aged. Pierric Blum, an artisan brewer, has created this microbrewery, which holds the Organic Agriculture label. The name of his brewery is inspired by the Cathar citadels, and 90% of the products used in his beers come from the Occitanie region. Three beers are the fruit of his labors. The blond Belgian Blond Ale is light, round, honeyed and caramelized. Red: Irish Pale Ale, copper-colored, flavored with Ornaison d'Oc red pomegranate. White: Witbier, smooth and dry, flavored with lemon thyme and juniper berries.

The former Palais de la Micheline, a listed building, is now home to Vignobles Foncalieu. Upstairs, the Art Nouveau-style Belle Époque room is the perfect setting for wine events.
