Château La Gorce, recognized as a Cru Bourgeois in the 1932 classification, has been in operation since 1822. In 2018, as soon as they arrived, Emmanuel and Mana Martin initiated the conversion of the 48 hectares to organic farming, which was completed by the 2022 vintage. Beyond this conversion, the entire identity of the estate has been revisited and modernized. At Les Halles des 5 Cantons in Anglet, discover Maison Balme. THE reference for truffles in the Basque Country. The truffle is a mushroom, an underground cousin of the morel. There are over a dozen varieties of truffle in Europe. From olive oil to ham, cheese (Brie, Brillat-Savarin, Gouda), fresh produce (risotto, purée, etc.), foie gras, fleur de sel and truffle butter, you'll find every possible variation on the website. Just outside Tonneins on the road to Marmande, Jérôme Fronteau's boulangerie pâtisserie is well known in the region for more than one reason. For its breads and delicious cakes. Jérôme Dumoulin is one of the three Master Mustard Craftsmen of France. He cultivates in his field, near his shop, 4,000 feet of chilli pepper, in the old-fashioned way, respecting nature, along the Vézère river. He makes all his products: mustard of course, which he uses in all sauces, but also chilli jelly, chilli pasta, and even nettle pasta, and from the vegetables in his garden, including tomatoes: ketchups. The daughter of farmers, Stéphanie Siberchicot took over the family farm where she grows organically grown cereals and oilseeds, which she transforms into oils, flours, cookies and natural sourdough breads. Château Haut Colombier, located on one of the highest hills in the Blayais region, represents a centuries-old winegrowing tradition. It was in June 2023 that Aurélie Mallet decided to take over the old grocery store backing onto the Saint-Sever abbey church. From its origins in 1946, only the good products remain! Among the teapots and a few useful accessories for our daily lives, we find fresh fruit and vegetables grown a few kilometers away, farmhouse and artisan cheeses, jams, pâtés, wine... The young woman also prepares beautiful fruit baskets and cheese platters, organizes tastings and welcomes you in tea room mode.

During the spring production season, generally from mid-April to early June, you can order your asparagus and pick it up at the farm on certain days. But the Bidans don't just grow asparagus, they also produce organic table grapes of the Exalta (sweet white seedless) and Muscat de Hambourg varieties. So the harvests come thick and fast in September, and so do the sales.
