Jérôme Dumoulin is one of the three Master Mustard Craftsmen of France. He cultivates in his field, near his shop, 4,000 feet of chilli pepper, in the old-fashioned way, respecting nature, along the Vézère river. He makes all his products: mustard of course, which he uses in all sauces, but also chilli jelly, chilli pasta, and even nettle pasta, and from the vegetables in his garden, including tomatoes: ketchups. He tried the experiment of butternut squash pasta and nettle jelly. To taste!
