From the restaurant business, Sandrine Muller moved on to fruit and vegetables. She took over this business in the centre to give it a 100% organic orientation. Her products fill the room with fragrance and come from local and regional farms; always from the producer. A short circuit that you will appreciate. The shopkeeper has also diversified with coffees, an impressive collection of spices and dried fruits. In addition, she favours bulk products. For a festive event, put her creativity to the test for remarkable and appetizing compositions.

MAGASIN DE L'ENILBIO

Regional grocery cheese and cream shops

More than 300 students are trained in milk and milk derivatives at the Dairy Industry School (ENIL). Put into professional situations, they make Comté, Morbier, cottage cheese, organic yoghurts and even organic beers recently. All of these products are sold on site. However, 4 cheese specialities stand out. The oldest, Le Pénitent, launched in 1938, is a soft cheese. The "Saint-Savin" is a close relative, as is the "Polinois" which, with its orange rind, has a more pronounced taste. Finally, try the "Grimont", a pressed uncooked cheese made from raw milk.

LE SAFRAN BLEU

Exotic delicatessen

Saffron conquered the Jura 20 years ago thanks to Claude Ancedy, who tamed it on the Loue plain. A revelation on the road to Compostelle, discovering plots in the Lot. His garden covers 20 ares. The precious pistils are fragile (and 200 flowers for 1 gram of finished product!). Their bright red color and powerful aroma are a delight to cooks. Try this flavor enhancer even on simple dishes like omelettes or mashed potatoes. Claude also makes fruit jams and jellies, such as apple and green tea.

Guardians of the northern vineyard, Joëlle and Gérard work in this picturesque village, all sloping along the Loue river. The entire harvest is sold from the cellar. The hillsides produce mainly white wines and are sun-drenched at sunrise, like "En Grimorin" and "Aux Plantes", near the conservatory vineyard. They are floral for the chardonnay, much more typical for the savagnin, with a minimum of 18 months in barrel. The vineyard is managed using sustainable methods, and the wines are aged in barrels in the museum-cellar, according to traditional methods.

It is an excellent idea to set up a Comté cheese dairy in Poligny, at the southern roundabout, not far from the A39 motorway exit. It is a merger of the Tourmont/Saint-Lothain dairy, and each year it transforms 3 million litres of milk into Comté, thanks to its 8 members. It works in partnership with Monts & Terroirs. In the heart of the millstones you will find other dairy products: butter, cancoillotte, yoghurts, creams... And other Comtois delicacies in the shop.

LA MAISON DU BOIS

Foie gras producer

At the gates of Champagnole, Valérie and Philippe Coulombe raise fat and lean ducks. A discipline that is not very traditional in the region. The couple offers cooked or semi-cooked foies gras. Their specialities with olives or prunes and chestnuts have nothing to envy to their delicious confits and grattons, rillettes, terrines (with yellow wine, hazelnuts, apricots). The dried duck breast, smoked or filled with foie gras, the stuffed neck... sublimate their flavours. The products made on the spot call for a free tasting and precious advice.

If the stones of Nevy are appreciated, its wines are no less so. The Courbet estate was only 4 years old when its illustrious namesake, the painter, died in 1877. The estate was devoted to mixed farming. Jean-Marie gave it its full measure. He passed the baton to his son Damien, just long enough for him to learn the ropes. Damien is now at the head of 7.5 hectares of the most envied vineyards in Château-Chalon: "Sous-roche", "Puits Saint-Pierre", "Sur Lyo", "Les Isles"... A perfectionist, the winegrower has now turned his vineyard into a biodynamic one.

BRASSERIE LA FRANCHE

Craft brewery and microbrewery

This craft brewery was one of the first to be established in the Jura. This was in 2005. It started from the friendship of 2 friends, Jean-Yves Nauroy and Régis Barth. Initially set up in the barn of a neighbouring village, the path taken by the small limited company is worthy of the reputation it has earned, with the "organic" approval as its crowning glory. The 2 associates bet a lot on hopped beers that draw on the bitterness, all made in top fermentation for more complexity. The range of the beginnings was declined in 4 colours: white, blond, amber and brown with well marked titles: Franche d'en bas, Franche Galle, Franche Forte, but also the Fausse blonde and the beer with yellow wine; that the amateur can also savour in barrel at the bar. For the Franche is also one of the few bars left in the countryside. There are now about fifteen of them, including 4 seasonal and 8 creations (La Franche profonde, la Triple blonde, la Saison coco,...). So many to choose from.

The cellar "des 2 fûts" sees 3,000 liters of foam coming out monthly. 5 of them are permanent (blonde, white, amber, IPA and a golden blonde more typical than the first one) and generally low in alcohol. DOMAINE FREDERIC LAMBERT

Winery

Frédéric Lambert "titillated" the vine in 1993 with 40 ares and then trained in "vine sciences" in Dijon. The oenologist has since taken advantage of this, since his estate now covers 10 hectares. They have the particularity of being spread over six different communes, including 60 ares in Château-Chalon. But most of the winegrower's vines are not far away, in the hamlet of Fangy and on the hillside of Toulouse-le-Château. The vines are pruned short to limit yields. The 5 Jura grape varieties grow for the rest in Côtes-du-Jura, but the vast majority of the white wines are white. Voted Winemaker of the Year in the Hachette guide in 2018, the winemaker saw his Blanc Tradition 2016 receive the "coup de coeur" of the 2020 edition. Our curiosity leaned towards a rosé crémant, pure Trousseau from bleeding. Very red fruit on the nose with dominant Burlat cherry and a remarkable suppleness in the mouth.

PEGGY ET JEAN-PASCAL BURONFOSSE

For Etienne Peggy and her husband Jean-Pascal Buronfosse, the Jura was first the dream of "return to earth": farm farm in Polyculture. While Jean-Pascal teaches in agricultural high school, Peggy embarks on the project of a farm, discovers Jura wines and… decides to specialize! The domain grew rapidly, the young woman became oenology, désherbé her 3,5 ha, and invested fully in the wine-growing world of Jura, which is now an essential figure. It has never abandoned its credo: ' wine is a cultural matter, not an industry '. So it grows in bio. His husband joined him and now works half-time in the field. The couple can welcome the renewal of the vineyard in the south of Jura! LA BRASSERIE DU DOLEN

Craft brewery and microbrewery

3 friends, François Mittaine, Emmanuel Bon and Laurent Greffier, experienced sportsmen of the Union Sportive Doloise, had taken the habit of enjoying a good beer after the effort . Their favourite drink led them to create their own beverage with this "Dolen". This Celtic word designating a meander reminds us of those that the river Doubs forms around the city, but can also evoke the privileged moment that one puts to savour a drink of great quality. There is no extended range in this traditional unit. The 3 "accomplices" will only offer you 3 vintages, but oh so many worked with the most meticulous care. The "Dolen" comes first with a "white" (La Baby Dole) of 5 degrees with a pale yellow colour and aromas of citrus and tropical fruits. The second (La Rageuse), a 6.5% amber colour, is complex with a mellow body and notes of toast and caramel. The third expression (La Dolen) is 6 degrees and is a golden blonde with a taste of malt.

DOMAINE CLAUDE BUCHOT

Winery

This passion for good wines has only one objective: the harmony of wines and nature. In 1974, with his father, he converted the exploitation into organic wine growing. There are only three "organic" areas in the entire Jura! Precursors! It is therefore more than 41 years since the 6 ha appellation of Côtes du Jura is worked without a chemical, by breaking one in two. In 2000, it goes even further than organic farming, with biodynamia: enrichment of the soil with natural compost, treatment by infusion of plants (herbal tea, orty…). For the past three years, to further strengthen the natural defenses of the vine and the environment, it has replaced the Bordeaux boiling with essential oils, mainly citrus fruits (citrus, grapefruit, orange bark…). One of the few winemakers in France has abandoned it! Its principles also extend to vinification without chemicals to target zero sulfite. Exception wines (Yellow Wine, Savagnin, Poulsard, Chardonnay), raised in oak barrels according to the Jurassian tradition, very requested.

DOMAINE PHILIPPE BORNARD

Winery

It is a beautiful family home perched on the heights of Pupillin. The view is breathtaking but it is from the cellar that you have to go down! The master of the house, Philippe Bornard, happily shares his passion for wine, flying alone since 2005. He used to deliver his harvest to the fruit farm. He explains the cultivation of organic vines, the natural vinification, in the mind of a pioneer like Pierre Overnoy. There, he remembers how his grandmother prepared the "ratafia", a kind of ancestor of the macvin. It evokes the vine of before, tells how it allows a wine to ripen naturally... long macerations and maturing in tuns. The winegrower, whose fox is the mascot, gives amusing names to his wines: the Bodyguard, the Ginglet, the Chamade, the Point barre, the Point barre, the Tant mieux... Winery

From his serene and honest personality, his taste for the true and his much appreciated wines, Jacques Puffeney has a great reputation in the region and not only, it is called the Pope. But the Pope is going. After all these years, this is the time of rest and without successor, the domain Jacques Puffeney was almost entirely bought (4,5 ha out of 6) by Marquis d'Angerville, a famous area volnaysien that has for some time had the Pelican domain in Arbois. Are Burgundy investing in the Jura in the absence of being able to afford vines at home? Pay tribute to the work done by Jacques and Monique Puffeney since 1962. For three years, the duration of the biological transition, it is the domain of the Pelican that will look after the vines. JULIEN LABET

Winery

The Labet family illustrates the evolution of viticulture in the south Jura. The ancestors were polyculteurs-winemakers, i. e. they cultivated vine plots among other cultures. In the 1970 s, Alain Labet and his wife Josie specialize and expand their winery, which now covers 12 hectares. Since 2003, Julien, who is still working in family, has developed his own production in a separate area of 3 hectares, which bears his name. The two domains Labet produce all the Jura wines: all varieties and designations. The family has acquired a good reputation among connoisseurs… She's very well deserved!

You can also discover the area at wine shows in Paris, Lyon, Toulouse or Lille.
