From the restaurant business, Sandrine Muller moved on to fruit and vegetables. She took over this business in the centre to give it a 100% organic orientation. More than 300 students are trained in milk and milk derivatives at the Dairy Industry School (ENIL). Put into professional situations, they make Comté, Morbier, cottage cheese, organic yoghurts and even organic beers recently. All of these products are sold on site. However, 4 cheese specialities stand out. The oldest, Le Pénitent, launched in 1938, is a soft cheese. Saffron conquered the Jura 20 years ago thanks to Claude Ancedy, who tamed it on the Loue plain. A revelation on the road to Compostelle, discovering plots in the Lot. His garden covers 20 ares. They are floral for the chardonnay, much more typical for the savagnin, with a minimum of 18 months in barrel. It is an excellent idea to set up a Comté cheese dairy in Poligny, at the southern roundabout, not far from the A39 motorway exit. It is a merger of the Tourmont/Saint-Lothain dairy, and each year it transforms 3 million litres of milk into Comté, thanks to its 8 members. It works in partnership with Monts & Terroirs. In the heart of the millstones you will find other dairy products: butter, cancoillotte, yoghurts, creams... And other Comtois delicacies in the shop.

At the gates of Champagnole, Valérie and Philippe Coulombe raise fat and lean ducks. A discipline that is not very traditional in the region. The couple offers cooked or semi-cooked foies gras. Their specialities with olives or prunes and chestnuts have nothing to envy to their delicious confits and grattons, rillettes, terrines (with yellow wine, hazelnuts, apricots). The dried duck breast, smoked or filled with foie gras, the stuffed neck... sublimate their flavours. The products made on the spot call for a free tasting and precious advice.

If the stones of Nevy are appreciated, its wines are no less so. The Courbet estate was only 4 years old when its illustrious namesake, the painter, died in 1877. The estate was devoted to mixed farming. Jean-Marie gave it its full measure. He passed the baton to his son Damien, just long enough for him to learn the ropes. Damien is now at the head of 7.5 hectares of the most envied vineyards in Château-Chalon: "Sous-roche", "Puits Saint-Pierre", "Sur Lyo", "Les Isles"... A perfectionist, the winegrower has now turned his vineyard into a biodynamic one.

This cooperative was founded 70 years ago. It is the supplier of materials to professional and amateur beekeepers, but also a tool for technical information. Its "beehive school" is very popular (queen rearing, mead making, etc.) The shop is open to the general public, attracted by the virtues of honey. Royal jelly and pollen are sold alongside confectionery. The Haut-Doubiste from Pontarlier claims to brew beers that are sparkling with joy and that appeal to the eye as well as the palate. Romain Branger and Julien Maillot launched this brewery 6 years ago. Their "Baboon", which comes in a variety of flavors, is all the rage. Dimitri Morin opened his brewery in 2009 on the Jura plateau. He strives for balanced flavors and avoids bitterness: his range comprises a dozen references, including 5 main ones named after their characteristics. This craft brewery was one of the first to be established in the Jura. This was in 2005. It started from the friendship of 2 friends, Jean-Yves Nauroy and Régis Barth. Fond of "mousses" from various horizons, the 2 brewers from Bisonne elaborated their first vintages in Déservillers, this village of the Haut-Doubs plateau which claims to be the cradle of Comté. Since 2019, Loïc and Marc Fusillier have come down from the mountains to develop their brewing activity. Organic" beers, because the 2 accomplices pay extreme attention to the ingredients they use. Frédéric Lambert "titillated" the vine in 1993 with 40 ares and then trained in "vine sciences" in Dijon. The oenologist has since taken advantage of this, since his estate now covers 10 hectares. In the land of the very rare "Marsotte" cherry, which offers one of the most subtle kirsch in France, Daniel Longval runs this brewery, which is already twelve years old. The beers here are "organic", unfiltered and unpasteurized, thus leaving a very special character in the family of regional breweries. The beers have their own names: "Indian", "Eau de pierre", "Inuk", "Merry Chris", "Mouss native" and even "L'Artiste" in reference to the local painter Gustave Courbet. Pierre Overnoy may be "against the cult of the individual", but he is the reference for many Jura connoisseurs and natural wine professionals around the world. Since 2001, he has handed over the running of the estate to Emmanuel Houillon-Overnoy, who joined as an apprentice in 1989. Here, everything is organic: from the vine to the bottle, including the cellar: organic and biodynamic wines, with no added sulfites, living wines that live up to their name. For Etienne Peggy and her husband Jean-Pascal Buronfosse, the Jura was first the dream of "return to earth": farm farm in Polyculture. While Jean-Pascal teaches in agricultural high school, Peggy embarks on the project of a farm, discovers Jura wines and… decides to specialize! This Celtic word designating a meander reminds us of those that the river Doubs forms around the city, but can also evoke the privileged moment that one puts to savour a drink of great quality. The "Dolen" comes first with a "white" (La Baby Dole) of 5 degrees with a pale yellow colour and aromas of citrus and tropical fruits. The young brewer seeks out the taste of cereals with water from the small local spring of Vieux Mont, which used to supply the village with drinking water. There are 4 slightly bitter references: white, blonde, amber and brown; between 4.5° and 6.5°. The range has been enriched with a "Christmas beer", but above all an "Indian Pale Ale" (IPA), a fruity beer that appeals to young people.

It is a beautiful family home perched on the heights of Pupillin. The view is breathtaking but it is from the cellar that you have to go down! The master of the house, Philippe Bornard, happily shares his passion for wine, flying alone since 2005. He used to deliver his harvest to the fruit farm. He explains the cultivation of organic vines, the natural vinification, in the mind of a pioneer like Pierre Overnoy. There, he remembers how his grandmother prepared the "ratafia", a kind of ancestor of the macvin. It evokes the vine of before, tells how it allows a wine to ripen naturally... long macerations and maturing in tuns. The winegrower, whose fox is the mascot, gives amusing names to his wines: the Bodyguard, the Ginglet, the Chamade, the Point barre, the Point barre, the Tant mieux... A man to meet, endearing, who will perhaps play you a guitar tune.

From his serene and honest personality, his taste for the true and his much appreciated wines, Jacques Puffeney has a great reputation in the region and not only, it is called the Pope. But the Pope is going. After all these years, this is the time of rest and without successor, the domain Jacques Puffeney was almost entirely bought (4,5 ha out of 6) by Marquis d'Angerville, a famous area volnaysien that has for some time had the Pelican domain in Arbois. Are Burgundy investing in the Jura in the absence of being able to afford vines at home? Pay tribute to the work done by Jacques and Monique Puffeney since 1962. For three years, the duration of the biological transition, it is the domain of the Pelican that will look after the vines. At the foot of the remains of the 12th century castle, you will find Joseph Dorbon's winery. He has been working on 3 hectares since 1996 with rigour, respecting the soil (grassing every other row) and hoeing with a Comtois horse. The manual harvest is subject to a very strict sorting. The professional has thus obtained the "organic" approval. The same discipline drives him in the cellar, which produces 70% white and 30% red wines. The star of the Cybelline field, created in 2004 in organic farming, is jument Kigali. Thanks to this beautiful comtan, Benoît Royer, an oenological engineer, can work the soil of its vines without chemical intakes. The four hectares of the estate have ancient vines, over 30 years old and young plants. They are divided into areas called Arbois and Jura coasts. The five Jurassian grape varieties are represented and enter the production of white, red and macvin wines.

Maison Heima is a distillery located in Abbans-Dessous. The Labet family illustrates the evolution of viticulture in the south Jura. The ancestors were polyculteurs-winemakers, i. e. they cultivated vine plots among other cultures. Since 2003, Julien, who is still working in family, has developed his own production in a separate area of 3 hectares, which bears his name. The two domains Labet produce all the Jura wines: all varieties and designations. The family has acquired a good reputation among connoisseurs… She's very well deserved!

At Geneletti, we were able to settle where the Jura wine is best. This is the domain at Château-Chalon, at Etoile and Arbois, AOC in character, which allows the family to develop very different wines on land with specific characteristics. This is to say if, in the Geneletti domain, you will be able to understand the differences between the many Jura wines, and in particular the elegant subtlety of the wines of L'Etoile that it produces from savagnin alone or assembled with chardonnay.
