LE THÈME

Belgian restaurant €€€
5/5

For thirty years, Le Thème has been creating a buzz. And with good reason: Michel Bebelman changes his "theme" every two years, in collaboration with a team of decorators. The atmosphere is warm and romantic, and the cuisine original, fine and well adapted to the themes. The menus change every month, always in keeping with the setting of the moment and accompanied by their selection of perfectly matched wines, as the owner is a trained sommelier. We go there as lovers to share a moment out of the world and out of time.

MÉTISSES

Senegalese restaurant
5/5

Two very courageous owners have embarked on this original and exotic project, which is a welcome change from traditional Liège cuisine. Ndeye Mour N'diaye is Senegalese and masters her cuisine perfectly: acras, moambe or oclombo chicken, duck with mango, thieboudienne, grilled sea bream with Senegalese herbs... The sun (even in the middle of winter) and the flavors of Africa and the Caribbean are reflected in the dishes, which are copious, appetizing and affordable. As for service, Fabienne Servais is on hand to advise guests. What's more, the mixed-race setting is very cute.

FRÉDÉRIC MAQUIN

Frédéric Maquin is one of the most discreet, focused and perfectionist chefs in Liège. The menu changes regularly with the seasons, accompanied by a suggestion of the moment. Inventive and imaginative, it revisits the classics. Dishes that reflect her cuisine include filet de biche served with poivrade, cranberries, parsnips, chanterelles and chicon, or cod with cabbage, charlotte crush, ginger and peanuts. The lobster menu is available by reservation only, and must be ordered 48 hours in advance.

LE SHANGHAÏ

Chinese restaurant €€

Here, no Asian kitsch decorations. The atmosphere is muffled and the setting current. Shanghai (open since 1963) offers refined dishes. We let ourselves be tempted by the lobster sauté flavoured with ginger or by the matchstick beef sautéed with onions, house specialties. The outstanding wine list offers more than 40,000 bottles in a ripening cellar located under a church. We don't say whether the wine is blessed there, but the hygrometric and temperature conditions reach the heavens! Each dish is thus matched to the wine that suits it best.

In an elegant setting, chef Philippe Burton offers classic but well-crafted gastronomic dishes: beef tartare and hollow oysters from Brittany flavored with lemon oil, aubrac entrecôte, "bordelaise" potato mousseline... For several years now, he has even been developing a low-calorie, slimming menu. It's one of the few French gastronomy restaurants in Liège that holds its own, with quality service. On the downside, it's best to book in advance.

The dining room of this Sicilian restaurant is vast, luminous and colored without too many frills. The welcome is smiling and friendly. Here, we work as a family. In the kitchen, the owner offers 100% homemade dishes, such as fresh Sicilian pasta: spaghetti with squid ink or octopus or the famous Ricci di mare (with sea urchins). Michaël, the pizza maker's son, makes his wood-fired pizzas under lyrical names: Vivaldi, Rigoletto, Norma... A sure sign: the Transalpines regularly sit down at the table.

In Rue Roture, this restaurant exudes charm. A subdued, intimate atmosphere in a dining room with an open fire. The specialities are, of course, charbonnades, with a choice of beef, poultry, lamb or mixed. All accompanied by a succulent gratin dauphinois, sauces and crudités. Other dishes on the menu include grilled duck breast with honey and lavender sauce! Big eaters can opt for the three-course menu, with the charbonnade of their choice as the main course.

AU POINT DE VUE

Since 1971, the Point de Vue has been aptly named for its views of the Opera House and local bustle. The building is a former stagecoach station dating back to 1652! Here you'll find a love of traditional Liège cuisine and quality produce. The extensive menu features all the specialties, including boulets, served in cocottes, rabbit à la liégeoise (juniper berries, cork syrup and pèkèt), and asparagus, available in a variety of recipes. The place is also famous for its zakouski platters for aperitifs. Lovely terrace and brand-new summer-winter veranda.

This brasserie, unchanged since the 1970s, is open 24 hours a day, 7 days a week. An institution, especially for the night owls, but also for the little grandpas who come to remember the good memories here. The decor, unchanging, gives us the impression to be in the cabin of a captain in full expedition at sea. They serve honest double boulets (two boulets liégeois instead of one), salads, croques, vol-au-vent, stews, grills, burgers... All served copiously, washed down with fries, good Belgian beers and at union prices.
