Founded in 1717 from its church, Quillota really began to develop in the second half of the 19th century, when businessmen from Valparaiso acquired farmland. It has the charm of a peaceful country town, its main square boasting numerous palm trees and a large cypress tree, which fell during the storms of 1980: the tree's roots were used to create an original sculptural work. Near the square are two churches: the Convento de Santo Domingo and the Parroquia San Martin. The Museo Historico Arqueológico preserves a sample of Quillota's history and archaeology.
