Of all the small villages in the Itria Valley, Cisternino is, along with Locorotondo, the most authentic, despite the tourist crowds in the summer. You come here without prejudice, but you want to stay. Because it is bewitching with its small whitewashed houses and its streets animated in summer by jazz bands. The village has remained virtually untouched for centuries, with its Torre Amati, a Norman tower (via San Quirico), its hidden courtyards, its narrow streets and its little staircases leading to the terraces. At the entrance to the town, Piazza Garibaldi offers a panoramic view of the surrounding countryside with its hills and conical trulli.
