This village, a simple cluster of a few houses at the strategic crossroads of the roads between Black River and Mandeville, is known throughout the island for its shrimp. Middlequarters, a small river fishing center, is south of the famous Cockpit Country. He never forgets to point out to passing motorists what he is known for, " You're entering shrimp country ". Wisps of smoke rise from the small wooden stalls that house the pots in which the famous shrimp are cooked in an extremely spicy chili sauce. The merchants, seated in small groups along the road, watch for the vehicles in the shade of an umbrella or a shelter of palms, ready to brandish at arm's length the small plastic bags which contain the cooked shrimps as soon as an engine is heard.Be careful, to be sure to eat fresh shrimp, it is recommended to stop at the stands where the shrimp are cooking rather than buying them in ready-made bags. The last piece of advice: bring a drink and a piece of bread before tasting this unforgettable specialty!
