On the Aunis plain, the town owes its fame above all to Hélène de Fonsèque, known as Hélène de Surgères. Maid of honor to Queen Catherine de Médicis and Ronsard's last muse. She retired to her château before dying there in 1618. Surgères has a much longer history, linked to the river Gères which gives it its name. Surgères enjoyed a golden age thanks to its wine industry, but the ravaged vineyards were bought up by peasants who abandoned wine in favor of butter. France's first dairy cooperative was founded here in 1888 by Eugène Biraud. Today, Surgères butter is AOC.
