Philice Colace can boast of having been world champion of the fashionable tripe of Caen! In 2017, he won the Tripière d'or, after having refined his recipe - traditionally made up of a cow's stomach, a bull's foot, a bouquet garni, carrots and salt and pepper - for more than ten years. Did you know that it takes between 6pm and 24 hours to cook this dish? So you come to his shop for this flagship product, but also for his fine selection of artisanal charcuteries and Label Rouge meats. A safe address.

It produces more than 300 tons of oysters per year and is becoming increasingly famous: La Calvadosienne is both the name of the educational shellfish farm in Asnelles, created in 1991, and the name of the adjoining store where you can do your shopping. Practical, after the visit of the oyster beds, you can offer yourself a tasting accompanied by a white wine or take away a basket. Otherwise, there is a 24-hour vending machine! The open sea oyster of Asnelles is regularly rewarded at the Concours Général Agricole de Paris (silver medal 2022). Bravo!

So all right, this bakery is franchised, but that doesn't take away the artisanal aspect of the products. Breads made on-site every day with traditional French flour, without additives, it's already quite good, isn't it? The same goes for pastries, pastries (um puff pastry...) and sandwiches, everything is fresh and made day by day. But what gives the establishment the ultimate smartest thing is undoubtedly this traditional self-service wand dispenser: whether you finish your work late, have a craving, or are just in a hurry, at any time of the day, you will always have bread to eat!

Everyone knows Nicolas - but did you know that the house Nicolas is one of France's first wineries and that Nicolas on Rue Bellivet has over 60 years? For the moment, Alain and Martine, the owners, are remarkably well-preserved… No, in fact, they have only been there since 1995! This is still a pretty career. Alain has an oenological background and mentors the future managers of Nicolas. His advice is simple: Do not hesitate to send you to the competitor if they don't have what you need and do not stick a bottle out of price for a barbecue between friends. Instead, he proposes the rosé of harvesting that he keeps at the expense for last-minute purchases (he has white and champagnes also). Besides, between two bottles, we spotted our Norman wine Les Arpents du Soleil… We feel we're dealing with good people! They offer you a gift box when needed, and if you get a scooter, we love it! We also love customers talking about Nicolas (the day we came, it was an ex-Parisian) as they would talk about an uncle or a good friend. That means everything…

Valérie and her husband Jean-François Lemoisson have been in the profession for generations. Her parents had a bakery in Trouville. The Lemoisson family has always been in the hotel-restaurant business - his great-grandmother had even created Hotel Notre-Dame in Bayeux. After several years of training and work in renowned establishments (Bernachon in Lyon, palaces in Switzerland, Caen… among others), they returned to the countryside, "where the great uncle was a colonel of the fire brigade." If you step into this esteemed place of gourmet sweets, you will succumb to some works of art that you will hardly dare to put in your mouth. The story began in 1877. The Witness family is located in the heart of Caen. Master chocolate makers from generation to generation, Witnesses passed the torch in 2007 to Étienne Dolfi (famous for its confectionery establishments at the Mother of Family). However, the original sign has been preserved as well as the specialties of the house: The Toucan (hazelnut pralines with cocoa curved nougatine), True Normands (with calvados), Ladies of Caen (orange paste with orange-flavoured grapes) and of course Caen Bisous (pink chocolate in the form of a mouth, white chocolate foam also flavoured with calvados). Yes, we are well in Normandy and the flagship alcohol of the department is to honour, but rest assured here, it complements and does not overwhelm! And when the winter season arrives, you'll have the opportunity to buy their delicious frozen marestas, certainly they are not cheap, but considering the quality and the short production time of this delicacy, it would be a sacrilege to miss out on it!

Jean-Yves took over the store a year ago (after rolling his boss at Coutances, Cherbourg and Bayeux) and actively dedicated himself to presenting the fruits of local know-how. Orge of barley, jellies bay jellies, Mous-sur-Mer soft caramel, bouche-sur-Mer, and a thousand dry cakes are de pêchés of delicacies from the delicacies of delicacies in Caen fashion, terrine of farmer's bay, as well as rillettes of moutardées mackerel, as well as crystallized of moutardées mackerel, with crystallized jelly cider. As soon as you enter this promising little shop, you are torn between the colourful and well-stocked shelves and the smile of the saleswoman. About fifty varieties of jams will make your head spin and countless calvados, as the name of the shop announces, will add to your dizziness. The jams are the work of Dame Rhubarbe, a good fairy who officiates a stone's throw from Honfleur, and who only buys her nectars from local producers. Stop on the flower of salt milk jam, much more subtle than salted butter caramel and definitely divine! Calvados are also more than fifty in number, divided between the Domfront tradition - a blend of pear and apple -, the Pays d'Auge PDOs with double distillation, and the classic and essential single-distillation calvados. From this visit, we keep a sweet taste: we dipped our finger in the jars or almost, and the welcome leaves a smile on our lips.

Did you know that Monoprix is a Norman brand, born in Rouen in 1933? The second store, the eldest of a long dynasty, arrived in Caen in 1936. Something to be proud of, right? Monoprix is the symbol of longevity, diversity and sure values. The shelves, neat and tidy, offer products that can hardly be seen anywhere else. In downtown Caen, underground parking is an asset that saves both time and money. And, in addition, we find the loyalty card, the time slot, the opening on Sundays, the many promotions nice. All this makes it an excellent local service on a human scale. Parapharmacy, hygiene, beauty, and food, stationery, toys, bookshop, press. As for clothing, the various collections are both trendy and almost timeless. The bakery and pastry department is full of special breads, pastries, sandwiches and pastries. The food also holds the top of the basket. Special mention to the wine and local products departments, tied with fruits and vegetables, the catering department, crying out for good things and freshness and the wide choice of products from around the world, including this little Anglo-Saxon corner with lemon curd, baked beans, marshmallows paste, peanut butter and even crumpets, um... We also like the "Grande Epicerie" and its fine products such as Albert Ménès' gingerbread.

This is Ali Baba's cave of gourmet pleasure! There are ignorant who pass without even conceiving what they are missing and connoisseurs who are working extra hard to not miss a crumb of it. Lovers of sweets, biscuits, macaroons, soft and financiers, the traditional biscuit factory of Sannerville is a place of treasures where you absolutely need to enter and where you will not leave unscathed. A tuile (with almonds), once served, finishes delicately in your mouth! Macaroon salted butter caramel, soft chocolate, noisettin, crunchy, old-style biscuits, frosted Norman hole in the calvados, financier with fig, financier tatin, old-style shortbread, almonds and peanuts sweet, with chocolate... it is so good that it makes us melt. The sweet values having now a well-established fame, their sweet little sisters could quickly reach them. Guests will be surprised with, for example, the latest, the P'tit Gaulois which is served with foie gras or the P'tit Gaulois with algae that you like to take with seafood. Try, you will surely be one of the precursors before the biscuit becomes "trendy". To stir our gluttony, Nadine and Loïc Vautier open their workshop endearingly installed here in the heart of Normandy countryside since 1992. Their traditional and family know-how can create a sensation during your banquets and weddings. Opportunities for which the workshop is increasing its efforts to achieve, for example, a beautiful wedding cake, a metre high, composed of 500 macaroons among others! The visit is essential as tasting is available free of charge. If, as we think, you succumb to the temptation, cookies will keep the freshness and flavour, carefully packaged in their beautiful presentation box. Futé affair: although you are a goldsmith, small imperfections can always slip into completion. So, jump on the "displaced" with identical taste but available at discounted rates.

The hotel is very close to the train station and the bus station. In addition to the Foie gras, the house has many other specialties, such as the candied. "The future of life will go through many." We enter this cellar to discover a true defender of nature and natural. Useful, the map of vineyards, displayed in the store which gives the impression of seeing it more clearly and learning about the wines of Burgundy, between Côte de Beaune and Côte de Nuits, Côte Chalonnaise and Macon… for example. The champagne has no secret for him either: He tells you the story of this piece of land or the little square metres that make it possible to make a unique champagne. We also love the selection, more restricted but also selected of whiskies, calvados and rums and the "troubleshooting" side, located in the basement cellar. Ask to eat. No matter where you are, no matter what your hunger - small or large - this is as important as it is welcome. In the heart of the city centre or in front of the Zenith, the quality is the same. For our part, we are looking for Saint-Pierre Street where the choice is a little more varied and a warmer frame. The building has been hosted by the bakers for a hundred years and has kept its stamp, almost smells. Exposed stones, chandeliers, panelling, a large fireplace, old-fashioned tiles, the shop is of the greatest effect. It contains the entire range: breads (several cooking in the day, which make it possible to have croissants all the time), the fougasses, the benoitons, the sandwiches (can be eaten on the ground with the formula of the debout), the pastries (the sugar pie… yum), the small salted or sweet furnaces and other pastries (chocolate fluffy, really mellow). At the Zenith, if weather permits, you can enjoy the terrace. We are still cracking for the cramique, the speciality of the North and Belgium (that with sugar…) and the square to the cream, a thousand sheet, without laminated in the middle, but with much more cream! Everything to soothe the greatest and immediate gourmet desires. "Greed begins when you are no longer hungry," said Alphonse Daudet. A wise word to meditate by regaling! Still a small bite?

We like to walk through these places where we find, at random, a preserved farm in the Pays d'Auge. On the Route du Cidre, a few kilometres from Cambremer and Beuvron-en-Auge, Repentigny is a hamlet where you can pass if you do not show a little observation. It cannot be repeated often enough: on winding country roads, take the time to stroll at the risk of missing out on wealth. Ferme de la Vallée au Tanneur is one of them. Back in Normandy to perpetuate the family tradition, these cider growers have followed in the footsteps of the best to develop their land. Ginette and Jean-Luc Cénier are authentic dairy producers, certainly, but also cider producers. On 70 hectares of orchards full of grass, they will be delighted to welcome you. Do not hesitate! A tasting is offered where you can enjoy homemade products, including many medals from renowned competitions: Cambremer PDO Pays d'Auge cider (half dry), raw farm cider, pommeau de Normandie AOC, calvados AOC, white drop, calvados liqueurs (pear, apple, black currant), farm perry, apple juice, cider vinegar. Nothing but treasures. A cottage awaits you not far from where you can prolong your pleasure and roll in the grass of our green meadows. Don't forget to fill up with memories for your friends!

The second shop established at 5, rue Eugène Maës (also accessible by Detolle boulevard) makes tobacco and is well-deserved. It must be said that in this famous house, they know how to make bread, so taste the crisp wand Father Toulorge (wheat, malt, and leaven flour) or the Zélie with three crusts and its flour with the delicate hazelnut taste to convince you. In the case of pastries with Isigny PDO butter or pastries, you can only recommend them too: Sumatra (brownie biscuits, feuilletine, creamy and black chocolate foam) and the other 3 chocolates are excellent, the Tahiti with exotic sweetness (Bavarian vanilla and white chocolate, red fruit jelly, and pistachio biscuit) will delight you and not to mention the delicate dessert cassis purple, in the shape of the ear, enhanced by a white cheese point, if not pleasantly surprised by its taste buds. For a quick and cheap meal - useful when time is running - the midi formula with a sandwich, drink, and dessert proves to be a very efficient and smart plan. Think about it...

GAEC BOISSEL PÈRE ET FILS

Cider grower

Christophe and Delphine will be pleased to present their operations, property of the Boissel family since 1792. Located in the heart of the Auge country 1880 kilometres from Deauville and Honfleur, Cidricole manufacturing has been transmitted from father to son since. Production comes from the only processing of apples harvested on the 15 hectares of orchards, the quality of products resident in the assembly of some fifty varieties of apples. No name for this stuffy stuffy cider: for five generations, know-how has been a reputation for excellence. The Alliance of New Technologies and respect for traditions makes this cider an authentic beverage that meets everyone's taste: raw cider (rather bitter, perfect on dishes and especially cheese in raw milk), half-dry cider (fruity slightly sweet for aperitifs and desserts), sweet cider (very sweet and scented very little alcoholic alcoholic ideal for desserts). Particularly attractive, "Arsène" is typical of the house: it is a cider whose crushed apples steeped a week in their juice before pressing. The fermentation takes place, then in small oak was new to bring a vanilla note. Produced in small quantities, it is a function of vintage and is not (unfortunately) produced every year. Calvados AOC Country of Auge, pure juice juice, cider vinegar, cider jam, pommel and perry are all other productions in this area which also houses a cottage that can welcome up to 13 people every year.

Located in the heart of the Pays d'Auge, on the Route du cidre, Geneviève and Dominique Denis open the doors of their cellar and offer you the opportunity to taste their products of the Cambremer vintage. Opened to the public in 1989, their cider house reflects their passion. These producer-growers have taken over the family torch and pay tribute to this know-how by winning, almost every year, titles and medals (gold and silver) for their farm and appellation ciders, on the occasion of regional and national competitions and festivals. A visit to the cellar, the old wine press and its granite tower, followed by a tasting are essential to appreciate the value and quality of the products produced, carefully balanced. The range is completed by calvados with a registered designation, perry, "cidraigre" (unpasteurized cider vinegar), apple juice, jellies and jams.

FERME DES ROCS

Nestled in the valley, at the confluence of the Orbiquet and the Cressonnière, south-east of Lisieux, it is beautiful landscapes and pretty farms to discover. In the heart of this green valley: La Ferme des Roches. To access it, you need to be able to sneak into the paths of the back country. As much as it can be seen as a stop imposed in the tourist circuits… Joël Most manufactures its raw, highly fruity peasant cider - since 1987 with varieties of local apples that it itself has grafted: Bisquet, Rimbault, Putting, St. Martin, Small kind, Cow's skin, windmill… Names of poetry… No legend or label on this custom production that really deserves a stop. Small frustration for groups and buses, will you say. But you can always enjoy a walking or digestive walk. The efforts will be rewarded, the best and most appreciated tasting, is offered by the owner who will be happy to deliver you some home secrets.

In the heart of Auge country, 23 minutes from Lisieux and a few kilometres from the nearby Eure department, Benoît Charbonneau installed his family farm in Moyaux years ago. High-stem apple trees, low-stem apple trees, orchards have ten varieties of apples with evocative names - the Bisquet, the Red Fruit, the Bedan, the Saint-Martin… - selected for the development of its ciders: farmer (soft and raw) and AOC Auge country. During a visit, you will tour the owner with, in the programme, a presentation of the manufacture of cider before the stage of tasting and the passage (near) forced to the shop which contains other products of the range (vinegar and candied cider, pommel, calvados, apple juice). If cider is the main activity, the farm has other strings to its arc to keep you. Here you also enjoy animals (hens, donkeys and horses are among the residents) and many rural cottages will allow you to spend an excellent weekend in the countryside.

LE PRESSOIR

Cider grower

Closed - Open to 08h00

In the Serrée family, here is the father, Rémy, and his sons, Ludovic and Axel. It would take a book to write their story. As conscientious and passionate heirs, they share the work to get the best out of their orchards - Cambremer terroir and Pays d'Auge vintage - the best of the best. The case is not new. Because in the tight family, we must not forget the grandfather with eloquent titles: producer, harvester, distiller and itinerant distiller. That's all said and done. All you have to do is push the door of the "Pressoir" and imagine that not so long ago, cider was made in the old-fashioned way, in the press (hence the name of the farmhouse). To say that the family was born in an apple is only a step away. From family consumption, Rémy went into business (in 1999) with a passion and know-how that was carefully balanced. No medals here! Word of mouth is more than enough for reputation. Let's add some authenticity to it. Not the one you read in the books but the one you see in your eyes. The virus is naturally transmitted since Ludovic and Axel have, in turn, taken over in recent years. Very raw, very dry, semi-dry and sweet cider are among a wide range of ciders that you will have to taste before leaving the region. You will be welcomed with open arms for a (free) tasting of cider but also calvados and pommeau (AOC), in the heart of a small house by size but big by talent. A house at man's height and at soul's height...

From harvest to sale, everything happens in the heart of this 17th-century farm. In the refurbished cellars, Philippe Marie and Thomas Pelletier invite you to discover the production and processing of apple cider. Several generations have succeeded one another in developing the family business, which produces a wide range of sweet beverages. The star here is the semi-dry farm cider "Vach'Ment Bon". A house creation with generous aromas that is left to age for two years so that the cider can express all its tannic structure.

Everything is good in the pig! A visit to the Caillouet farm will convince those who still doubt it, especially at a time when the traceability of meat becomes the criterion of choice. Elevés on the farm itself, without antibiotics, on good beds of fresh straw, the pigs of Caillouet give a remarkable meat. And yes, as the slogan of the exploitation says so well, "The room is great! '. And the price side? will you ask us- And no nasty surprise, the prices are below those on the large surface, which is worth the move. And for those who do not like or do not eat pork, beef, lamb, poultry - guaranteed from local farms - are also present on the shelves of the shop. Prepare your freezer or invite the family!

The chocolates come straight from their artisanal factory in Lisieux, where visits to the workshop are organised, allowing you to discover the secrets of their specialities. This family property, created in 1923, is located at the gates of Pont-L'Evêque. The planting of 45 hectares of orchards now allows the production of 500 tons of apples. All products are processed within the estate, a place of production and processing from apple to bottle. Michel Bréavoine and his team have been concentrating their know-how for 30 years (1989) to extract the best from each harvest. Enriched year after year, this high quality production - among the best in our opinion - contains raw and sweet top-of-the-range Normandy farm ciders (PGIs) of recognized consistency. Farm ciders, with their very fruity taste, breathe nature and go particularly well with cheeses and desserts. Domaine du Lieu-Gosset is also a producer of famous Normandy perry, pommeau, cider vinegar, apple juice and calvados (Fine, Reserve, Hors d'Age). The company is affiliated to the "Saveurs de Normandie" label, the regional collective signature that identifies Normandy's quality products.
