After having worked in the great restaurants of Catalonia and the Basque Country, Jorge Maestro and María Viqueira have opened this excellent restaurant where they revisit local products to offer a quality fusion menu. The patio is very pleasant and the rather modern decoration blends in perfectly with the Casa del Doncel, one of the beautiful medieval buildings in the city centre. A nice gastronomic discovery where you are welcomed with a smile. Very nice wine list and possible food and wine pairing.

Right next to the Cervantes Theatre in Alcalá's main square, this modern address with its refined decoration, undoubtedly one of the best in the city, offers quality dishes prepared exclusively with fresh produce. The menu, with some Asian-inspired fusion touches (the tuna tataki is excellent), is a success and perfectly revisits the great regional classics. The wine list is also of very good quality. A beautiful and very popular address with an excellent price-quality ratio.

In an enchanting setting, a sturdy stone house, where customers used to come by boat to enjoy a potato and green pepper tortilla. Very fashionable since it served as the setting for the film Ocho apellidos Vascos in 2014 ("Eight Basque names"), this restaurant remains true to its roots by offering fish, seafood and meat grilled parilla style, and tasty vegetables from its own vegetable garden. Sea bream, turbot, monkfish, sole... the best fish are prepared in their simplest apparatus. A charming address!

As the name suggests, the focus here is on fish and seafood. The inventive cuisine blends the flavors of the sea (but not only) with great success. We particularly liked the langoustines with mango and the steak tartare. And this quality address, much appreciated by the locals, offers a superb contemporary setting and a small terrace to enjoy the fine weather. La Pescaderia's success has since been emulated, notably in the Salamanca district, calle Hermosilla.

Founded in 1921, it's a classic Calahorra. The Casa Mateo restaurant offers carefully prepared local dishes, especially the tasty vegetable menestra with artichokes, peas and asparagus. You can also opt for a piece of meat (beef, lamb, pork) or one of the fish on the menu that day, unless you prefer a lighter salad (especially as the small vegetables of the region are incredibly tasty), all to be accompanied by good wine. La Casa Vieja - Etxe Zaharra is an excellent place to enjoy traditional Basque cuisine, with a magnificent pig or suckling lamb cooked over a wood fire as the ultimate speciality! La casa is also famous for its codfish, in salads or stewed in a squid sauce. You dine in a medieval atmosphere - the rustic decoration has been thought out down to the last detail - just behind the church of Santa Maria. The wine list is generous and lovers of sweet delicacies will find something to put in their mouths at dessert time!

The most prestigious table in Vitoria, run for more than 30 years by chef Patxi Eceiza (holder of a Michelin star for 14 years). If we appreciate this restaurant, it is first of all for its privileged location on the ría de Mundaka and its panoramic views over the beach of Laida. Fitted out in a rustic caserío, the restaurant has been extended with a modern extension and a large terrace. This restaurant, which was Hemingway's favourite, has been in the neighbourhood since 1941 and has always had a good reputation. The house specialty? The bull tail. Because this is a bullfighting establishment, as the local customers say. Madrilenians who are, moreover, once is not customary, often much more numerous at lunchtime. Pasteleria Mallorca is a catering chain present in the chic districts of Madrid. It is above all an institution in the Spanish capital. Specializing in seafood grills, this restaurant, founded in 1964 by Pedro Arregui, is a Getaria institution. His son Aitor has taken up the torch and perpetuates the art of parrilla grilling. This is how freshly caught lobster, crawfish or sea bream masterfully pass over the coals before ending up on your plate. In 2014, it was awarded a Michelin star, while in 2019 it made it into the World's 50 Best Restaurants ranking. A stone's throw away, the charming Elkano bar (Elkano, 13) serves pintxos and raciones.

An Ordizia classic founded in 1890. Located in the heart of the village, just a few metres from the famous market, the restaurant is run by the chef Xabier Martínez, who serves very good seasonal cuisine as well as good classics: hake with garlic, oven-roasted lamb... The dishes are served with a smile, and the good value for money is sure to whet your appetite. In the bar area you can enjoy pintxos and raciones in an informal atmosphere. On Wednesday, market day, it's crowded to taste scrambled eggs with mushrooms!

This restaurant, with its charming rustic atmosphere and beautiful enclosed terrace, offers the specialities of the sierra, high quality meat, roasted or grilled, excellent suckling pig, Burgos blood sausage and perfectly cooked lamb. In any case, it is one of the best places in the area to eat after a long day of walking. And whether it's under the blazing summer sun or under the snow in winter, the welcome is always absolutely charming. A beautiful gourmet address.

Between a canteen and a small tavern for regulars, this simple and unadorned space, whose first vocation was the traditional tapas bar, has seen the arrival of a restaurant in the back room. Here you can eat good raciones and pintxos, including the excellent Bellota ham, canutillo (a kind of flaky stick) filled with cheese and anchovies, artichokes with ham and poached egg, scrambled eggs with mushrooms... But what makes the reputation of La Viña is its excellent tarta de queso (cheesecake), simply the best in Spain!

This is undoubtedly the best table in La Granja! Here, the regional specialties are honored and it is so much better. In fact, there is no better place in the region to eat the big white beans (the famous judiones of La Granja). The rest of the menu is also very tasty, the wine list very correct and the cheeses well chosen. The intimate and warm atmosphere of the establishment, with a piano, a fireplace and wooden floors, adds to the promise of a delicious lunch or a successful dinner.

In one of the small streets leading to the Plaza Major, you can eat there for really cheap! For 3 €, you can choose between a squid sandwich or fried chorizo, blood sausage, bacon... La Ideal is the meeting place for young people with no money (who keep their money to make the night last as long as possible) and the workers of the neighbourhood. The place is not very attractive and it is always crowded at mealtimes, but it is a good option to eat on the go while strolling around Plaza Mayor. Typical Madrid.

The Trotamundos and Sep7ima restaurants treat guests inside the Only You Atocha hotel. Headed by chef Javi Mora, this Madrid address offers a fusion of inventive cuisine. During the day, it's on the first floor where you'll find a simple yet effective menu (including burgers, wraps and poke bowls), and in the evening, on the top floor, it's at Sep7ima, with a menu featuring Spanish and Latin flavors. But before you indulge, there's a great cocktail menu not to be missed!

Reference chef Paco Roncero, a disciple of Ferrán Adriá, concocts original gourmet cuisine, with 2 Michelin stars, on the top floor of Madrid's casino. This historic building dating from 1910 is simply magnificent. And it's on the top floor that you can enjoy Roncero's highly creative cuisine. Decorated in pastel tones to give it a contemporary, elegant touch, the dining room is already a delight. And what about the terrace, open in summer to admire Madrid from its rooftops? Breathtaking!

For more than twenty years, Casa Carola has offered its visitors a unique menu with a glass of wine or a light aperitif, the classic cocido madrileño, a dessert and a coffee. On the menu, we find a modern and creative cuisine and some beautiful and well-crafted proposals. In a very pleasant traditional setting, with checkered tablecloths, large wooden chairs, earthenware and old black and white photos, this is an authentic table that deserves a stop, a little away from the main tourist routes of the Spanish capital.

Next door, the Original Bar offers a more informal atmosphere for sharing tapas.

Here, the Navarrese culinary tradition is in the spotlight. In well garnished plates, enjoy stuffed asparagus, accompanied by cod or crayfish. Meat is also well represented, with deer, duck breast, lamb chops a la plancha or a beautiful entrecote steak with roquefort sauce on the menu. The desserts are rather tempting too, whether it is the fresh cheese mousse with raspberries and honey ice cream or the fig ice cream with coffee sauce. Simple cuisine, old-fashioned decor, good value for money.

An excellent address, known for its authenticity. In fact, Túbal is a family story. The current owner, Atxen Jimenez, readily recounts that from a young age she helped her parents run the Bar Túbal, also located in Plaza de Navarra. Nowadays, her children have taken over and are renewing the traditional Navarrese recipes with imagination. The dishes can be enjoyed in an elegant dining room with a piano bar area. Some suggestions? Mushroom risotto, duck confit, roasted lobster...

The Asador Mediavila is a grill restaurant located in the medieval centre of Sangüesa, which seduces with its rustic décor and huge stoves visible from the restaurant hall. Lovers of good bidoche will be in heaven here, and to accompany your meats, you can choose from several wines from Rioja and Navarre.
