CHATEAU TOUR DE FARGES

At the top of a hill planted with muscat vines, a grove hides the Tour de Farges. The history of the estate goes back to the establishment of Jacques de Farges, an apothecary of Montpellier on these lands in the 15th century. Rom the old building, there are only three towers left and they are the testimony of famous people who had seen them. Indeed, in the 19th century, François Sabatier d'Espeyran married the singer Caroline Ungher and the couple received at the castle many cultural personalities, including the painter Courbet and Karl Marx. In 1960 Guy Tesseron, a great name in Cognac, took over the 17th century property but everything was in ruins, or almost. He renovated the cellars and the vat house and decided to demolish the château. In its place, he built a residence based on the plans of a chartreuse. The Musset-Roullier vineyard vinifies the famous loire slopes, but also red and white, rosé-de-loire, traditional method in bubbles and cabernet-anjou. As they say: " Even if the winemaker "domicta" nature and the truth is in the wine, the solution is in the ground. They therefore carried out a condition of the different soils in order to understand how they operate, the type, the state of health and do everything in their power to feed them, to manage the vigor of the vine and thus to achieve an optimum vine/soil balance. Red Anjou The 9 Twenty 2010 (4,60 €). Black cherry dress. Open nose, wide, plant. Wide mouth, warm final, a little animal, raced, spicy. Tannins tight but melted, very pleasant on a veiled veal to the morilles and vegetable gardener.

Anjou traditional rosé method Indocile 2009 (5.90 €). Nice burst of bubbles, nose and clean. It is a well balanced nectar, tender, very well done, without heaviness. Drink with pleasure!

Stéphane Defraine has been breeding Fontenille wines since 1989. This Château de Fontenille, you will find it a few hundred meters from the Abbey of Sauve-Majeure. Here the gravelly soil of the Entre-deux-Mers is exploited with technique and talent to produce quality wines. The master of the estate actually cultivates a true passion for his terroir and vines and thus applies its experience and new technical means at the service of his Grands Vins de Bordeaux, Entre-deux-Mers. Château de Fontenille has 49 hectares of vines, 17 of which are white and 32 red, with a real concern to limit the environmental impact and respect the vines. Chemical weedkillers have thus been eliminated for about 12 years. You can therefore enjoy an AOC red Bordeaux, an AOC Entre-deux-Mers and an AOC Clairet Bordeaux. Note that this castle is regularly rewarded!

Château de Fontenille Grand Vin de Bordeaux, 2011: brilliant dark red color. Fresh and fruity nose, notes of raspberry, redcurrant, beeswax, toasted bread, smoked. The attack is fresh, the tannins are of a beautiful maturity, the final is fruity and lively.

Entre-deux-Mers, 2012: pale yellow color. The nose is fresh and intense. A few notes of pineapple, grapefruit, pear and banana. The palate is fresh and fruity with a beautiful aromatic persistence.

Terrats is a small town of 600 inhabitants located 4 kilometres south of Thuir, at the foot of the Aspres, a land of legends and fairies! Its economy is entirely devoted to the vine. The cellar can be seen from miles around, with its famous Bottle Tower (the highest in Europe), reminiscent of a spaceship on its launch pad. The sales and tasting area is bright and welcoming. We like to chat with the winegrowers and as the manager confirms, "more than a place of sale, it's a place of life! ». Just like the Fourques cooperative, the Terrats cooperative vinifies, raises and markets a nice production, and above all Terrassous is the first producer of AOC Côtes du Roussillon Villages les Aspres. LES CELLIERS D’AUSSOU

Created in 1935, the Les Celliers de l'Aussou cooperative works on the vineyards located beside the Fontfroide, at few kilometers only from Narbonne, and in the middle of the scrubland. The special feature of the wines of the estate is that they are made from selected plots and harvested by hand. With 50% of black carignan, 35% of black grenache and 15% of syrah, you will enjoy the tasting of the red AOC Corbières Chefdebien. After its vinification in carbonic maceration, the wine is aged for 10 months in oak barrel. It goes well for example with cassoulet, the Aude traditional dish, but can also be kept for a few years depending on your patience. The special feature of Les Celliers de l'Aussou lies in the union of the vine and fruit: your table will be full of conviviality with the "innovative wines" which are the aromatised wines such as red-raspberry, white-nectarine and rosé-grapefruit. Luc Lapeyre is an authentic winegrower who expresses himself through the work of the land he loves so much. For him, the winegrower's work must begin with the soil and its originality. He seeks complexity in the production of his organic wines and obtains fresh and delicate nectars. The wine is matured in oak casks and 500-litre barrels, as written in the traditional manuscripts of the vinification of Languedoc wines. However, the wine does not remain marked by wood because Luc knows how to remove the wine from its containers at the right time. The cuvée is composed of reds, including the remarkable "Les Clots 2007", whites ("Nuit blanche"), rosés and a sparkling wine: "La buble pas pâle"... Another particularity of our winegrower: he does not lack humour and so much the better, because this quality ideally goes with the wines of the estate. You will notice the label of "L'Amourier" which will remind you of the cover of a famous book publishing company, or "Le vin à boire" which awaits only one thing: that you taste at the estate with Lucques olives that will be served to you by the owner.
