He will advise you red wine Tradition to accompany the cassoulet and duck magret, the red Old Vines for meat in sauce and game, Lou Parpalhol rosé ("the butterfly" in Occitan) for barbecue, red for charcuterie and dry white for fish. The flower of Autan, the soft white, is tasted at the aperitif, with the foie gras and the roquefort.

Lionel Michelin took over in 1994 the location of the famous wine merchant Jean-Baptiste Besse and he still likes to breathe the aromas of the wines he makes discover. A beautiful neighborhood address where you will find beautiful references and pleasant, rare, old or surprising wines. Favourite wines to drink with friends, fine bottles to share in a small group, party wines. The master of the house is a bargain hunter, and he is so happy to share his discoveries - and gift ideas are not lacking here. If you have the opportunity, do not miss the visit of the cellar dating from the 17th century: both levels are simply exceptional.

CHÂTEAU SAINT ROCH

Winery

The vines are planted on 44 hectares, at the foot of the Cathar castle of Quéribus, twenty kilometres from the Mediterranean, in the Agly valley, near the village of Maury, on clay-limestone and schist soils. Since 2001, Jean-Marc Lafage has decided to produce wines that resemble the Mediterranean terroirs from which they come, authentic and distinguished. The Vin de Pays des Côtes Catalanes Pink, a press rosé, vinified by skin maceration for 6 hours, is a good example.

CHÂTEAU RÉAL-MARTIN

Winery

A former estate of the Counts of Provence, the estate, which practices organic farming, extends over 230 hectares at an altitude of 350 metres. The Provençal bastide built in three distinct eras - 16th, 18th and 19th century - overlooks the 40 hectares of old vines and olive trees of the property. It is in the heart of the winery that the wines are made, while in the underground cellar, two hundred oak barrels allow the maturing and ageing of the Optimum, the prestige cuvée. All the Côtes-de-Provence AOP wines can be tasted in the cellar, located in the former farmyard of the château. Château Réal-Martin also produces its own extra virgin olive oil, the first cold press, from the estate's old olive trees.

CHÂTEAU BEAUMONT

Winery

Just above Margaux's lands in Cussac, Château Beaumont, built in 1854, is a jewel of Mansard-style architecture. It is one of the most beautiful residences in Haut-Médoc. The castle would take its name from Louis de Beaumont who appropriated the lands of the Lord of Cussac during the Hundred Years' War. It was in 1773 that the estate was cleared by its owner Henri Labarthe, who intended it for the vineyard. It took 50 years before the vineyard was born. The estate now belongs to the GMF group, which, in 1986, joined the Japanese group Suntory and together created the Société Grands Millésimes de France. The group also owns Château Beychevelle and the Bordeaux trading company Barrière Frères. The vineyard, which has been engaged in sustainable viticulture for several years and is Terra Vitis certified, covers 114 ha, between Margaux and Saint-Julien. It makes it possible to obtain elegant and harmonious wines. You can taste or buy this cru bourgeois, a member of the Alliance des crus bourgeois and the Union des Grands Crus during your visit.

VIGNOBLES FAGARD

Winery

The castles Cornemps and Lajorine represent 27 hectares, respectively, producing superior Bordeaux and 3,5 hectares at the heart of the lussac-saint-émilion appellation. The success of these wines is to be attributed to the quality of conservation, in a rock-mounted cellar that supports a th century chapel and fermentation, in a modern and sophisticated cuvier. In a warm tasting room, Mr Fagard, artisan winemaker who succeeded his father in the 1980 s, presents kindly his wines to introduce the beginner to the subtleties of the tasting. Judging by the satisfaction and loyalty of the customers present, but also by the prestigious and prestigious prices at the bottom of the room, it is clear that we have stumbled on a good address. Opinion of oenologists: Château La Jorine, Lussac-Saint-Emilion, 2006. Ruby robe garnet, dominant nose vanilla, nose, small black fruits, exotic herbs. Round mouth and fleshy, very accessible, fresh and fruity. Château de Cornemps, Henri-Louis Fagard, Bordeaux Superior, 2006: beautiful dark ruby dress. Dominant nose of jam jam, oriental spices, cumin, vanilla. Beautiful mouth to round attack, balanced, fine tannins and silky, beautiful freshness.

CHATEAU CLIMENS

Winery

At the origin of this syrupy white wine, there is an exceptional soil, composed of pebbles on red sand and cracked limestone base associated with a special micro-climate. The work of men is added to it through drastic and particularly choices: small outputs, multiple sorting during the harvest and very neat winemaking. It is under the aegis of the Lurton family that the estate is a quality level that do not hesitate to compare itself with Château Yquem. This 30 hectare vineyard, the 35 year old vineyards on average, so some 30,000 bottles of the year. The longevity of Château Climens, premier crus Barsac, classified in 1855, with exceptional wine as them bear witness to the years 1928 and 1929, still majestically fruity.

At Beillard and SARL Blanleuil and sons are only one. Nicolas and Jérôme welcome visitors throughout the year for a visit to the distillery and wine cellars. The domain develops cognacs of a certain and even venerable age: VSOP, light and bright, with floral notes, fruity and vanilla, is a assemblage assemblage of the 90 s. The XO, powerful in mouth with spicy notes, dried fruits, nuts, exotic fruits, comes from the 80 s brandy. The cognac XO Special, distilled in 1970, round and harmonious in the mouth, exhaling floral notes, coffee and cocoa. Without forgetting the pineau of Charentes, a savant mixture of grape juice and cognac aged 2 years. The area, which includes a beautiful residential house covered with virgin vines, also houses two cottages (3 ears) for 6 and 8 people. DOMAINE LEDUC-FROUIN

Winery

Fourth generation of winemakers installed here on nearly 40 ha in one of the very first cave villages in the area. The Leduc family is produced under the "Terra Vitis" identifier which complies with a specification that is closest to respect for the ecosystem and the parsimonious use of phytosanitary products. Historically specialized in highly fruity rosé wines, tender, minerals and light, we do not renounce very mineral gestures at the wise prices and the coziness of fresh and acidulous coats that enjoy all palaces. The range is declined under pretty statements: Les Gourmandises, red in anjou and villages on beautiful molded tannins rich in black fruit, the Irresistibles, pink dresses like this rosé of loire that we love, fresh, lively and the notes acidulous of candy and tender, then a cabernet focused on the subtle sucrose of and mineral at once, the Subtils, in dry white chardonnay and chenine with a cuvée Alexine, spooky of the domain, the Seducers, in the sparkling catchments for 4 very different wines and some old vintages until 1970 and finally the Festifs, those of bubble bubbles. loire or saumur, decayed in raw, half-dry or rosé.

La Sapinière is an ancestral story. Its landscape is a picture of elegant buildings at the shade of a park, in the heart of a ten acres vineyard, facing the ramparts of Carcassonne. One immediately perceives the good manners and working spirit that characterises the domain. It produces a real Malepère AOC wine, with much attention, for a powerful and fleshy fruity result. The owners, Joëlle and Dominique Parayre, will tell you more about the estate, its strides and the wine warehouse, while discovering vintages. A real experience, an authentic and control approach of winegrowing.

DOMAINE OLIVIER HILLAIRE

Winery

The tasting cellar is located in the center of the village of Châteauneuf-du-Pape, in the hillside that leads to the church, next to the town hall, and another next to the Tourist Office. A nice little stop that we recommend. Olivier Hilaire also organizes every weekend in his vineyards, the most beautiful summer evenings of the region: unusual and on reservation!

AUX CRIEURS DE VIN

Wine Cellar Wine House

This cellar is named after the old public auction room that formerly existed at this address. Here, everything is only ode to wine, to the references selected and proposed for sale. No room on the terrace, and as soon as the lunch time rings, it's hard to drink only a drink… but we're good!

DOMAINE DU CHATEAU DE LA VIOLETTE

Winery

An amazing encounter for this Domaine de la Violette! First, we appreciate the park's park with these great hundred-year old cedars. All around the vineyards of Apremont and Des. Charles-Henri Gayet and his daughter Pauline took over this area. On 19 hectares, they produce all the vintages of Savoy: roussette, apremont, cavities. The work and quality of the wines in the area are often rewarded: proof of this, the three medals collected at the 2016 General Agricultural Competition.

DOMAINE ERIC MORGAT

Winery

His family grew the vine for more than 200 years, his parents were installed at the Breuil in Beaulieu on Layon. Eric has been immersed in the land and after a few escapades in the foreign vineyards, Eric has set its sights on a land of Savennières, as the passionné dry white white white. Here, he makes mainly wines from the chenin vine to develop different vintages of Savennières on the plots of the Paddock north of Epiré (22 months of rearing in drums of 400 liters), of Pierre Becherelle (near the Casting of Squeezing), of the Roche to the monks and of Clos Ferrard more south towards the Possonnières. Cuvée is high in drums for one year and refines its vinification in a tank to feed the lies and thus round up. No introduction of synthetic products in the soil or on the vine, a choice of rustic varieties adapted to the very schisteuses plots (which give this minéralité so special to savennières) and seedlings and enfouissement of grass from ranks for a natural fertilizer.
