A nice terrace with large umbrellas in a pleasant passage, wine cellar behind the counter and room with the current tones to offer us a map ready to satisfy all appetites, especially those - and they are many - lovers of tartars. La Brasserie de la Bourse offers the only "tartare bar" of the city with a dozen tartars on the menu. Quality meat for a tartar cut to the knife to savour according to its style: Lyonnais, Italian, Spicy, Japanese, Thai, Fresca (grapefruit, cucumber, green apple, dill, shallot and lemon juice: excellent), Tropical, Asian, South or Indian. There is even a tasting plate to taste a maximum. And that's why, one Sunday of balances opening, your favourite Petit Futé was sitting at a brasserie, one of the very few restaurants open in the sector with so wide opening hours! First good point, Midi Minuit has kept a large part of the superb decoration of the place by tastefully vegetating it. In addition, a small terrace sheltered from the passageway as a bonus. As for the service, we felt the intent to do well, some degree of efficiency and the attempts to smile behind a stained blouse, but let's say there is still room for improvement. The most amazing thing is undoubtedly the cuisine. A true short menu (problem, more salmon steak…) and dishes home cooked by a chef who holds up. Some snacks and flammekueches (that could be avoided), giant salads, but above all a lamb shoulder confit in its pearl juice, a duck breast and fig chips or a royal sea bream fillet in almond crumble. All is done at honest rates. Desserts slightly lower for the quality and slightly higher for the rates (a floating island with citruses a little bit tough at €7). In a nutshell, the address of République has pleasantly surprised us, even though some adjustments still need to be made.
