In 2018, he sublimates this cheese so atypical that is the artisanal cancoillotte and, recently, he turns his attention to the flower of salt. Since its creation in 1952, Maison Paillard Frères (and its Chalet Gourmand) has been a veritable institution in the region. Here you'll find the region's famous charcuterie. House specialties too, such as the award-winning black pudding. But that's not all. An extensive delicatessen section features a host of Franc-Comtois products, from Arbois and Jura wines to Rieme de Morteau syrup, honey from Haut-Doubs and spirits from Maison Guy in Pontarlier. Founded just over 70 years ago by Louis Vonin, then taken over by his three sons Michel, Denis and Bertrand, Aux produits du Saget is nestled in the heart of this Haut-Doubs village, close to the Swiss border. Their specialty? Cured meats based on family recipes. These include IGP and IGP Label Rouge Morteau sausages, IGP Montbéliard sausages and smoked cooked ham. Their 2,700 m² workshop is built around the tuyé, which enables products to be smoked in the same way as they were in the old days on Comtois farms.

Today, the estate has 7.5 hectares, which are farmed responsibly, i.e. without chemical fertilisers, weedkillers or pesticides. Chardonnay still reigns supreme in different cuvées: "Tradition", "Vieilles vignes". A little bit of red wine too with the reintroduction of Pinot noir. A spacious cellar is now available to welcome groups, especially for the "Bourru Day" in September. In any case, this "Moutherot" is an example of rural resurrection in a region where winegrowing is still only a trace.

This former cheese factory founded in 1818 now houses a museum and a shop. A visit allows you to see how Comté cheese is made, especially in the boiler room with its enormous copper vats. All this is accompanied by a short and very instructive film, which will appeal to even the youngest visitors. At the end of the visit, your cheese will be just right! And you'll appreciate the tasting of Comté cheese and Jura wine all the more. You will be able to buy, among other things, books on cheeses. La Ferme d'Esparnol is a farm located in Montfaucon, offering products from duck and pig farming. For 30 years, they have raised their ducks in the open air on grassed runs and force-fed them whole grain corn. The farm has an online store where you can buy fresh Porc Noir meat, such as blocks of duck foie gras, pâtés with duck liver pieces, and more. All their products are cooked according to traditional recipes, without additives or preservatives. The farm also invites visitors to discover their trades, products and terroir during a tour.

It is here, at the Garenne farm that Pauline Ciresa has been transforming her cows' milk into delicious organic farm products for four years now! With love and passion, she concocts a whole range of products from plain or flavored yogurts to butter, cream or fresh cheeses. At the Ferme des Chazeaux, we have been breeding snails of the Gros Gris variety for 25 years. Christophe Delacroix, a passionate snail farmer, ensures that the snails grow well and are transformed into delicious dishes. In the workshop, they are prepared according to several recipes. The traditional Bourguignonne snails with their shells, but also in a crispy fromentine shell with various fillings; as appetizers, as mousses to spread, in cassolettes or in jars to cook. The Fruitière à Comté des villages réunis was born from the merger of the cheese factories of the villages of Passonfontaine and Avoudrey: 33 producers from 7 villages of the Haut-Doubs make up the cooperative. A modern production workshop ensures the production of Comté cheese and a store offers its sale as well as a wide range of other cheeses and regional products: honey, cold cuts and cured meats, drinks (aperitifs, wines, beers, lemonades, syrups).

Authentic products from the Haut-Doubs! Cheeses, charcuterie, honey, groceries, wines and liquors are available at the Relais du Terroir. From generation to generation, the Napiot family, in the eponymous cheese factory of Bians-les-Usiers, works to make quality cheeses: 500 tons of Comté produced per year and 600 tons of Mont d'Or, to take only these two, make the house an important player in its sector. In the center of the village of Guyans-Vennes, overlooking the beautiful Dessoubre valley, you will not miss the dairy cooperative. Its cheesemaker and the 15 members who form it offer the symbolic cheese of Franche-Comté but also an excellent Gruyère de France IGP. It regularly obtains medals at the Concours général agricole des fromages. In her store you will find two kinds of Comté (Arnaud-Juraflore ripening), the famous Gruyère and small goat cheeses from Mont de Fuans as well as butter and an incredible raw cream.

This brewery is unique because of its location. Jérôme Gloriot and Isabelle Banfi welcome you to the ground floor of their home to present their rather typical beers, up to 8.2° for the triple. The people of Bisont are familiar with the Pintadier beer, but despite its deliberately modest size, it has made a name for itself far beyond. Sales are made directly, without advertising. Only word-of-mouth. It can be found at various events organised by local associations and can be tasted in a few local bars.

He welcomes you with his wife Stéphanie in their shop/grocery store with the philosophy of promoting short circuits, reducing intermediaries, and obviously the quality of the products, most often organic. Yoann Bride's background makes him a highly recognized coffee specialist. He created La Brûlerie Comtoise, an artisanal roasting factory in Doloise, in 2019. In this cheese factory in Tarcenay, you will find typical products of the region, such as morbier and its ashy line, as well as gruyère. Gruyere cheese? Of course, it will have the well-ripened taste of Comté, but the appellation d'origine contrôlée is strict: Comté is named like this when the milk comes from several producers in the region.
