Since 1996, the 7th generation of Callot has been at the helm, with the youngest of his four sons, Thierry, now managing the family business. The company is still committed to traditional winemaking in its Grand Cru terroir. It produces a range of wines divided between Grands Crus and Premiers Crus. The "Clos Jacquin" cuvée, a locality in Avize, is aged for a year on lees in wooden vats. Today, Vincent Laval is in charge of the family business created by his father Georges in 1971. On this estate, all the vines are grown according to the principles of organic agriculture. The different cuvées are patiently aged for 2 to 4 years in beautiful vaulted cellars that can be visited. Special mention goes to Les Hautes Chèvres, an organic Brut Nature 2013, made from old meunier vines with very low yields. A marvel to be enjoyed with warm apple foie gras. Cheers!
