According to Michel Loriot, a music lover at heart, music also gives the vine a better resistance to diseases and helps it to flourish. The vintages are available under the signature Apollonis Champagne Michel Loriot. A masterful favorite for Palmyre Brut Nature and Monodie, a Meunier Vieilles Vignes 2010 dosed in Extra-Brut. This 15 hectare vineyard is mainly made up of vines located on the Côte des Blancs, in the crus of Mesnil-sur-Oger, Oger, Sézanne, Glannes, Mancy and Cuis. The selection of the best plots of land allows us to elaborate champagnes of character where the typicity of each terroir is expressed. The culture is done in reasoned viticulture, with ageing in cellar from 2 to 8 years. The estate produces 130,000 bottles per year, most of which are sold abroad.

Here's a house that has made a brilliant bet on accommodating wine tourists as much as on winegrowing. On the production side, the estate's 12 hectares are planted with Pinot Noir, Meunier and Chardonnay grapes, and vinified in oak barrels. Vinification takes place in oak barrels. The range includes 4 magnificent cuvées: Brut Réserve, Espiègle Brut or Brut Rosé, and the more-than-affordable Millésime 2005 Blanc de blancs. The 8.5-hectare vineyard is made up of old vines, mostly south-facing, grown using sustainable viticulture methods. This beautiful estate was born of the union of Gérard Beurton and Marinette Vincent, who combined their vineyards and know-how to develop the business with great passion. On a daily basis, Katy and Benjamin Beurton do an excellent job both in the vineyard and in the winery. The domaine offers few cuvées, but they are of the highest quality.

For 4 generations, this family-run, HVE-certified operation has worked its 11 ha of vines with respect for the environment. The vast majority of production is concentrated on the Valley's emblematic grape variety: meunier. The House pays great attention to the elaboration of its champagnes, notably by extending cellar ageing times, but also by minimizing dosage. Our favorite is the Cuvée Blanc de Noirs Brut Nature with its clay minerality.

A family business whose origins go back a long way, since it was during the French Revolution that our ancestor Basle Penet bought his first plots of vines, selling his harvest to merchants who owned a wine press. These pure and well-crafted wines are accessible to all budgets. The Brut Rosé^1er Cru, the Brut Nature Absolu, the Brut Blanc de Noirs, and the iconic Clos du Moulin are among our favorites.

Established for three generations on terroirs classified as Grands Crus, it is a remarkable estate that offers a champagne of character. For several years, biodynamic farming has been used, as well as animal traction, for old vines. What characterizes the De Sousa champagnes, the brilliant results on the traditional vintages as well as on the particular vintages, in particular this rosé of bleeding associated with the rosé of assembly, or the cuvée 3A (for Avize, Aÿ, Ambonnay). Finally, the Umami cuvée, from the most beautiful terroirs classified as Grand Cru.

On the prestigious Bouzy vineyard, Philippe Secondé, fifth generation of the Barnaut family, is a winemaker who pays great respect to the rhythms of the vine and careful vinification. The domaine produces a wide range of champagnes offering excellent value for money. The Grande Réserve Brut, made exclusively from the Grand Cru de Bouzy, and the rosé de saignée, an extra-brut champagne made from 90% pinot noir and 10% chardonnay, are particularly appealing, as is their excellent bouzy rosé. The history of this family begins in Damery in 1857 but today it is David and Cécile who run the business. The 11 ha vineyard is planted with the 3 traditional grape varieties to favor judicious blends. Here, malolactic fermentation is not practiced in order not to modify the organoleptic profile of the wines. We have chosen the Cuvée Cécile, a very fruity 100% meunier that will be a delight with mature cheeses.

An estate that is constantly progressing without conceding a single parcel of... its commitment to quality! Today, Arnauld leads the estate, drawing on several generations of family experience. Tradition is respected, but that doesn't prevent the wines from keeping up with the times. The vines stretch over the terroirs of Dizy and Avenay in Premier Cru, and Aÿ in Grand Cru. The Cuvée Éminence, a voluptuous wine, and the Cuvée du Centenaire, a Brut Millésimé made from old vines, will remain in your memory.

The role of the Comité interprofessionnel du vin de Champagne or CIVC is multiple. A semi-public structure halfway between the private and public sectors, it is an inter-professional body created by the French legislator that represents winegrowers and Champagne houses and works in favour of their productions. It coordinates the activities and actions related to the cultivation of the vine, the vinification and the distribution of champagne throughout the world. He defends the profession, but also promotes Champagne wine for the whole planet. In addition to its action in the professional field, it is also very present to inform the general public, in particular via its website (www.champagne.fr) which tells us everything we need to know about production, appellations, terroir, viticulture and winemaking, as well as all aspects related to the consumption and tasting of champagne. The CIVC offers a selection of cellar visits and champagne tasting, classified either by winegrowers, or by houses or cooperatives. On the other hand, the Committee has selected five champagne routes, five major tourist routes, each with suggestions for visits or walks: Reims and its region, Epernay and its region, the Marne Valley, the Côte des bars and the Coteaux Vitryats. From the outset, this family home impresses with its original approach. If time permits, your hosts will take you to discover their 10 ha vineyard, certified HVE and VDC, in a 2CV. If at the end of your ride, you feel like perfecting your knowledge, you will be able to access the museum below the house, which tells the story of the vineyard through an impressive collection of tools. In the past, small independent producers from three neighboring communes cultivated the vines and sold their grapes to the trade. In 1961, three of them decided to acquire a common press. Then, little by little, others followed in their footsteps until they formed the Janvry group of producers. Driven by the same philosophy of quality, these winemakers created in 1975 the brand Ch. de l'Auche revealing to wine lovers all the beauty of the wine of the mountain of Reims. After a visit to this gourmet grocery store, you'll leave with 27 baskets of all kinds of goodies. Here, you will find the best of the region's products: local wines, artisanal beers, baskets of local vegetables, sweet and savory groceries, but also household products, cosmetics, in short, everything you might need. Are you having friends over for dinner? Think of the aperitif board! To be reserved the day before for the next day, 27 baskets will concoct for you a board richly filled with cheeses and homemade charcuterie.

In the heart of the Montagne de Reims, a beautiful property in a typical village with a rich religious history. The tradition is still very much alive in this house created in 1862 and the work, both in the vineyard and in the cellar, is marked by know-how and quality. A complete and very well worked range is to be discovered. We especially like the cuvée Jules Bonnet, a vintage blanc de noirs and the cuvée Spéciale brut millésimé, a blanc de blancs. On the spot, a guest room and a gite are also proposed to visitors and lovers of the land.

Anchored in the heart of the prestigious Côte des Blancs, the Nicolas Feuillatte estate brings together, in a unique cooperative model, 4,500 winegrowers with incomparable know-how and invites you to an extraordinary visit that will charm the senses. The tour plunges visitors into the heart of the stages of champagne production, with an impressive view of 200 vats lined up. The tour ends with a commented tasting of one to three champagnes from the range, depending on the formula chosen.

History: It is the oldest French biscuit factory. Founded in 1756, in Reims, it is known for producing the famous pink biscuit, its flagship product, developed by a baker from Reims in 1691. This biscuit was traditionally exported with champagne as a refined festive biscuit. Since then, other specialities have been added to the house's range: pastry biscuits (croquignoles, macaroons...), dry biscuits (Charles VII, Déjeuner de Reims...), puff pastry biscuits (Reims salted, chocolate puffs, palm trees).

Visit: The factory can be visited. To do this, you must book by phone (visit on Wednesday morning). You will discover the fabulous history of Fossier cookies by watching a very interesting documentary. Visitors are then invited to taste the house's creations. This is followed by a gourmet guided tour to learn about the secrets of manufacturing in accordance with tradition. The visitor can find the Fossier cookies in the factory store next to the cookie factory.

Products: We will focus on the pink biscuit always associated with champagne and festive symbol. Nowadays used in many recipes, it is appreciated for its pink colour, but also for its crunchy and melting texture. Be aware that the "real" pink biscuits, the emblems of Reims, weigh 100 g by the dozen. You can buy them in bundles, cans, collector's boxes and even in powder form in vending machines, such as sugar... The factory store allows you to stock up on cookies directly from the oven. Other pink shops, including one near the cathedral and one in the Mac Arthur Glen factory outlet centre in Reims.

Smart: with its collector pink box "Reims 1914-1918", Fossier supports the restoration of the city's cathedral (0.50 euros donated to each box sold).

News: In 2016, Maison Fossier celebrated its 260th anniversary and obtained the label "entrepreneurs plus engagés", in addition to the label "entrepris du patrimoine vivant" already obtained in 2008.

Located in Cormoyeux, these harvesters and handlers have been developing their terroir for 3 generations. Their philosophy? The constant search for the natural balance from the vine to the effervescence. With them, humans work in close collaboration with nature. 5 wines with very original names are to be discovered as well as a ratafia, a white coteaux and a red coteaux. We are sure to fall in love with Oriane, a luminous wine with a dominant chardonnay. Divine with a mesclun salad with sesame oil, fresh goat cheese and pine nuts. You'll see!

Assisted by Céline, it is now Benoît Hugot who lovingly perpetuates the Champagne traditions inherited from his father. Certified HVE, their 5.35 ha vineyard is managed in a respectful, healthy and natural way. Thanks to a soft and precise vinification, the duo gives birth each year to a confidential production. You will discover 3 vintages with beautiful dressings including the Brut Rosé. The domain also offers 2 guest rooms called Chez les Doyennes. You will find there all the necessary comfort and the decoration is really very neat.

From sweet to savory, from the grisettes of Montpellier to the waffles of the North, passing by the dry sausage of Corsica, the foie gras of the South-West and the unavoidable ham of Reims, this trip promises to be a gourmet one. Since 1982, the Fresne family has been cultivating its vines using sustainable methods. Gérard, Bernadette and Bruno are harvesters and handlers of nearly 8.5 hectares of vines, on which the three emblematic grape varieties of the Montagne de Reims flourish: meunier, pinot noir and chardonnay. For the tasting, you'll be welcomed in the house cellars. A range of 7 wines and a ratafia are on offer. Special mention goes to the Cuvée du Monastère. Made from old vines and aged for a year in oak barrels, 900 copies are produced.

Certified "Viticulture durable en Champagne" and "Haute Valeur Environnementale", the Coopérative de Champagne de Ville-Dommange is deeply concerned by environmental issues. The vineyards of this fine brand cover 30 hectares and give rise to a rich range: Pur Extra-brut, Audace Brut, Instinct Brut, Écrin Brut réserve, Nuance Brut rosé, Millésime, Privilège Brut, Parade Demi-Sec, Coffret Empreinte (aged in wood) and Ratafia Apéritif. The Person company founded by Jacky Person in 1974 offers a wide range of caffeinated drinks, a fine selection of great wines from Brazil, Colombia, Ethiopia, Guatemala, Nicaragua and Costa Rica. In addition to their renowned fish shop in Mardeuil, Dominique and Angélina Libra have opened their cannery in the City of Sacres to share with you their taste for good seafood and their expertise in salting salmon. Once inside the store, you can take a trip along the coast, from Boulogne-sur-Mer to Marseille, via the Breton islands and the Bay of Biscay, tasting delicious terrines with iodine flavors, rillettes with a marine aroma, monkfish liver, a very surprising "foie gras" from the sea, without forgetting the flagship product of the store: Label Rouge salmon smoked by the owners with beech wood.

After working alongside the famous pastry chef Eric Sonntag in his shop on rue de Mars, but also in Les Crayères, Bruno opened his own shop on rue de Neufchâtel. Founded in Aÿ in 1843, the company boasts a 25-hectare vineyard in the Marne Valley, the birthplace of the miller, as well as a network of winemaker-deliverers to supplement its need for quality grapes. A true symbol of the French art of living, the brand imposes its elegant, powerful style wherever it goes. Presented in a superb bottle evocative of the ^18th century, Champagne Bleu Brut Cuvée des Moines is the source of Besserat De Bellefon's renown.

Instilling without imposing. Founded in 1925 and currently managed by Thomas Lombard, this winegrowing house willingly shares its contemporary and timeless vision of Champagne wines with wine lovers around the world. For this neo-winemaker, the terroir is central. The 5.5 ha vineyard is currently in organic conversion. An inimitable style. Since 2003, Champagne Charles Mignon is one of the few family estates to be part of the Union des Maisons de Champagne, which is a real privilege. The Mignon family owns vineyards in Chouilly, a village classified as a Grand Cru, complemented by a family vineyard in the Marne Valley and benefits from supply contracts with winegrowers in the Côte des Blancs, the Montagne de Reims and the Marne Valley. Founded in 1785 by Florens-Louis Heidsieck, the house was absorbed in 1985 by the Rémy Martin group, which had already acquired Piper-Heidsieck a little earlier. This renowned brand owns Gallo-Roman chalk pits as well as a 25-hectare vineyard that covers only part of its grape needs. A favorite is the Blanc des Millénaires 1995, a legendary vintage made from the best Chardonnay grapes of the Côte des Blancs, which won the gold medal at the 2015 IWC!

Winemaker, cellar master and even salesman in his spare time, Arthur Bernard founded his own House in 1912. Today, Isabelle and Benoît Bernard are at the helm, working the finest terroirs of the Marne Valley in a natural way. Founded in 1915, Champagne AR Lenoble is one of the few champagne houses to remain entirely family-owned and independent. Today, the^4th generation, embodied by Anne and her brother Antoine, is at the helm. Guarantors of ever-improving but never-equalled quality, together they craft champagnes of the utmost precision from their 18-hectare vineyard on the appellation's finest slopes. A real favorite is the Brut Nature "dosage zéro mag", a very fresh and delicious wine to try with snacked fish.

Thanks to hard work, Alain Thiénot, a banker and broker by profession, has succeeded in becoming one of the great names in Champagne in less than 25 years. This brand belongs to the closed circle of great champagne houses. It was named in 1867 by its founder, Maître Daubresse, a prominent figure from Reims. Created by oenologist Laurent Fedou from selected crus from the Montagne de Reims, Vallée de la Marne and Côte des Blancs regions, the range comprises 3 wines: Cuvée de la Reine (Brut, Rosé and Brut Premier Cru), Cuvée de la Sommelière and Brut Passion d'une Reine. Founded in 1757, Maison Abelé 1757 was acquired by the Spanish Freixenet group in 1985. Thanks to its "maison-boutique" status, the brand is free to select the best terroirs owned by quality delivery partners for tailor-made vinification. Don't miss their remarkable range: Brut, Rosé, Blanc de blancs, Soirées Parisiennes, Brut Millésimé, Sourire de Reims Brut, Sourire de Reims Rosé. In 1925, Eugène Ralle, grandfather of the current generation, created his House through hard work. 30 years later, his grandson Pierre Arnould created his own brand. Joining forces, Pierre Arnould and Eugène Ralle Champagnes offer two distinct yet complementary ranges. The Cuvée Aurore, with its 6 years in the cellar, reveals a superb bouquet of spices. And what about the Brut Rosé? A generous, sunny 100% pinot noir!

Located in Tinqueux, on the outskirts of Reims, this second Cave et Terroirs shop offers more than 800 references of regional wines from the four corners of France, local champagnes including the famous Champagne Prestige des Sacres, but also spirits, rum, whisky, vodka, port, brandies and liqueurs, enough to seduce all lovers. RM since 1955, the House is committed to producing champagnes from the sole terroir of Vincelles. In 2015, this beautiful Domain obtained the HVE certification thanks to a drastic reduction of treatments, a zero herbicide policy and the use of organic practices. Independent winegrowers, the owners have launched into wine tourism and welcome you in a new and very original renovated space: the old village school! Richard and Véronique Petit cultivate with love 2 magnificent terroirs classified as Grands Crus and make their own wines with patience and high standards. The range is now composed of 3 great vintages: Nuit Blanche, Ambrosie and Nymphea. At the tasting, we had a weakness for the first one. Grand Cru de la Côte des Blancs born in 2009, this champagne is a 100% chardonnay with a nice nose. A pure, fine and clean wine that enlivens the palate of the amateurs and is discovered on refined iodized dishes such as a tartar with two salmon... wild of course!

This champagne is the result of the work done by disabled people in the vineyard. Located in the Champagne vineyards, the E.S.A.T. (Etablissement et Services d'Aide par le Travail) of Sézanne has focused part of its activity on the work of the vine and the wine of Champagne. The range consists of a Brut and a Rosé, with a high proportion of reserve wines (about 45%) which guarantees a constant quality. The Brut is an elegant accompaniment to savory dishes or a convivial aperitif. The Rosé will reveal itself with dishes of character.
