History: It is the oldest French biscuit factory. Founded in 1756, in Reims, it is known for producing the famous pink biscuit, its flagship product, developed by a baker from Reims in 1691. This biscuit was traditionally exported with champagne as a refined festive biscuit. Since then, other specialities have been added to the house's range: pastry biscuits (croquignoles, macaroons...), dry biscuits (Charles VII, Déjeuner de Reims...), puff pastry biscuits (Reims salted, chocolate puffs, palm trees).

Visit: The factory can be visited. To do this, you must book by phone (visit on Wednesday morning). You will discover the fabulous history of Fossier cookies by watching a very interesting documentary. Visitors are then invited to taste the house's creations. This is followed by a gourmet guided tour to learn about the secrets of manufacturing in accordance with tradition. The visitor can find the Fossier cookies in the factory store next to the cookie factory.

Products: We will focus on the pink biscuit always associated with champagne and festive symbol. Nowadays used in many recipes, it is appreciated for its pink colour, but also for its crunchy and melting texture. Be aware that the "real" pink biscuits, the emblems of Reims, weigh 100 g by the dozen. You can buy them in bundles, cans, collector's boxes and even in powder form in vending machines, such as sugar... The factory store allows you to stock up on cookies directly from the oven. Other pink shops, including one near the cathedral and one in the Mac Arthur Glen factory outlet centre in Reims.

Smart: with its collector pink box "Reims 1914-1918", Fossier supports the restoration of the city's cathedral (0.50 euros donated to each box sold).

News: In 2016, Maison Fossier celebrated its 260th anniversary and obtained the label "entrepreneurs plus engagés", in addition to the label "entrepris du patrimoine vivant" already obtained in 2008.

(Etablissement et Services d'Aide par le Travail) of Sézanne has focused part of its activity on the work of the vine and the wine of Champagne. The range consists of a Brut and a Rosé, with a high proportion of reserve wines (about 45%) which guarantees a constant quality.
