Clesles, a small town in the Champagne-Ardenne region, is home to SARL Au PARADIS du Porc, run by Annabelle Alusse since 1986. As a pig farmer, Annabelle Alusse emphasizes respect for the animal, limiting the use of antibiotics and using essential oils. With a herd of 3,000 Largewhite-Landrace x Pietrain cattle, the pigs are fed with local cereals and GMO-free feed from a local farmer. All the charcuterie on offer comes from their pigs and is processed without preservatives or chemical additives.
