In Epineuil, 20 kilometers from Chablis, the Domaine des Quatre Saisons is a family business where each generation has come to write a chapter in its great and beautiful history. It offers excellent red and rosé wines from the Tonnerrois region, made from the Pinot Noir grape variety, as well as white wines from the Chardonnay grape variety. It takes the appellations Petit-Chablis, Chablis, Chablis Premier Cru Vaucoupin and Bourgogne Tonnerre. To note also an excellent crémant de Bourgogne. Just a stone's throw from Montreal, follow the ducks along the road and you'll arrive at Croc Duck. This farm operated by Adeline and Emmanuel Hivert is dedicated to duck. Owner-harvesters from father to son, the Jollys work in the tradition of Burgundy vineyards. Denis Jolly and his wife cultivate 17.5 hectares and produce 3 appellations (Chablis^1er cru Fourchaume, Chablis and Petit Chablis) using sustainable agriculture. Several awards have been given to their production. Like a silver medal at the Concours Général Agricole and a burgondia gold medal for the Petit Chablis. Henri and Madeleine Laroche were at the origin of this beautiful estate. Since then, generations have succeeded one another and the Laroche family now cultivates 22 hectares of vines: 5 ha in the^1er cru Fourchaume, 1.30 ha in^1er cru Beauroy, 11 ha in Chablis and 4.50 ha in Petit Chablis. We particularly like the Chablis Saint-Pierre, named after the ^12th century church in Chablis, the Chablis^1er cru Troësmes, not to mention the Fourchaume, the Fourchaume "L'Homme mort" and the Fourchaume "Héritage". An excellent production recognized and distributed all over the world!

Fayyar is a microbrewery created in 2020 in the heart of one of the great wine villages of the Auxerrois. Simon, Romain and Élise offer you their organic and local beers. Do not hesitate to go and taste them; they are worth the detour! Above all, you can also visit the place and discover the work of these young and friendly brewers. By appointment, they will show you the raw materials used, but also all the stages of production along their beautiful cellars of the XIVth century. With a tasting at the end, of course!

Here you can find irancy and palotte palotte, a more careful, robust and powerful wine. These wines are not filtered during bottling. You can also buy rosé burgundy. Nice welcome.

Covering 16 hectares, the Cantin estate works with respect for nature and tradition. The harvest is done by hand, guaranteeing quality and richness of aromas. Their wines, Bourgogne Passetoutgrain, Bourgogne rosé and Irancy are found on the best tables. With the variety that can be had in Irancy: indeed, the recognized parcels are named on the label as the famous Palotte or the Grande Côte. Frédérique and Hervé, winemakers at Domaine Fillon in Saint-Bris-le-Vineux, invite you to discover their excellent production in a beautiful store located in the heart of Chablis. Wines from Chablis and Auxerrois (whites, reds and rosés from chardonnay, pinot noir, sauvignon and aligoté grapes), but also fruit juices always in season (with cherries, for example). Not to mention the local products from small local producers.

In Préhy, this estate produces Chardonnay for the Bourgogne and Chablis appellations, Sauvignon for the Saint-Bris AOC and Pinot Noir for Irancy, all with the HEV label. You can discover them (and taste local produce) in their Chablis cellar. In addition, 2 superb gîtes are available in Préhy. And soon, a beautiful hotel in the center of Chablis: the emblematic Hôtel Bergerand is being renovated and will soon be transformed into the Hôtel Gueguen!

Magali Bernard manages the 18 ha of the family estate. Red coulanges, but also rosé burgundy, white chardonnay, Passetoutgrain and Crémant. A cosy wine bar is also available. You will discover a selection of local products and will be able to savour planks of cooked meats and cheeses coming directly from the producers. Finally, tours are available. For more than 20 years, this family business has been offering a vast choice of wines and spirits. Marc Ragaine was elected best independent wine merchant in the world. He was a sommelier at the Tour d'Argent in Paris, but also^3rd best young sommelier in France and best young sommelier in Paris. He will be able to advise you and adapt to what suits you among his 700 references, for all budgets. In addition, there is a judicious choice of subtle nectars, and many gift ideas. An excellent address that we warmly recommend.

On the hillsides of Préhy, this estate extends over 12 hectares, below which flows the Tot river, which, according to legend, has miraculous virtues. Perhaps the secret of this wine's unique flavors? In any case, when he joined the family estate, Julien Brocard wanted to work the vines "the natural way". This was to be La Boissonneuse, and since then, these wines have entered the ranks of the greats. There are also some very attractive guest rooms on offer.

We come here first for the smell, the scent of roasted coffee that titillates us. And for the discovery! More than 15 coffees and 80 teas, enough to stimulate the desires of all coffee lovers! During our visit, we also let our eyes wander in this warm boutique, with a little corner to test the delicious products on the spot. At Co Thé Café, you will also find Miot jams, Bonnat chocolate bars and a nice offer of home-made biscuits. Without forgetting boxes, teapots and cups. A nice address.

At the exit of Saint-Bris-le-Vineux, near the cellars of Bailly, there is a goat farm that you must visit. Created by the very sympathetic Claire Genet, it proposes cheeses (100 % organic obviously, and made under our eyes!), but also a delicatessen composed of products coming from local producers. But you can also come and have a picnic, go for a walk with the goats, follow workshops (for example, on how to make goat's milk soaps). And animations are regularly organized for children (but not only!). A favorite.

If you pass by the shopping street "rue du Temple" and you see a queue in front of a small bakery, nothing is wrong: this is where you will certainly find the best breads in the city. And not only... Viennese pastries, tarts and pastries, sandwiches and other savory delights are just as excellent. Above all, when you enter here, you will discover the sweets concocted by Alexis Peuzin. A baker who, in January 2023, was awarded the Coupe de France de boulangerie at the SIRHA gastronomic show in Lyon!

A short while ago, Alexis and Vianney embarked on a crazy adventure: creating a microbrewery in Chablis from Burgundy malts. At the entrance to Chablis, the Domaine Long-Depaquit, its superb château and its vast park with century-old trees is an ideal place for a visit and a tasting. Property of the Bichot family, this is one of the most famous and oldest houses in Chablis. It covers a vineyard of 65 hectares, 10 of which are grands crus and 15 are premiers crus. "La Moutonne" (2.32 ha in grand cru) is its standard-bearer. If the weather is good, a ten-minute walk will allow you to admire a superb panorama of the vineyard.

Since 2019, Adrien de Loeuw and his partner Gaëlle have taken over the famous Marc Colin charcuterie, a must in Chablis. Rest assured, you will still find here the tasty andouillettes de Chablis certified AAAAA, (among the best in France, so!), but also a remarkable persillé with Chablis, a terrine with marc de Bourgogne, an excellent head cheese or even Chablis sausages. The House is also a caterer, and is present on the markets of Chablis and Auxerre as well as on the menu of many restaurants in the region.

This superb wine estate is located in the heart of the castle of Escolives. A building steeped in history that puts the wine of Coulanges in the spotlight. Here, the tasting and the visit of the superimposed cellars of the ^XVIIth century are to be savored. A pure pleasure! Good to know too: the Domain offers superb guest rooms (one of which includes a balneotherapy) as well as a gîte. And you can even rent bicycles or go on a wonderful tour with electric scooters. The Bersan estate has been renowned (not only in France!) for... 20 generations! Here you will discover magnificent cellars dating from the 11th and 13th centuries, and its 500 m² labyrinth. There, you will see bottles absolutely everywhere, and you will appreciate the incredible vaults that the family has cleared to honour this little known heritage. Many wines are on offer: Côte-d'Auxerre white, red and rosé, Saint-Bris, Irancy, Chablis, crémants and ratafias. A must-see!

L'Amour est dans le lait is a range of ice creams and sorbets made directly on the farm. In 500 ml or 1 liter pots, you can order local flavors such as Cerise crème fraîche and ratafia de Jussy, or any of the 30 available. All you have to do is pick them up at the farm, and see the 150 cows (280, if you count the youngest ones!) that produce the good milk that makes these delicacies. Note that L'Amour est dans le lait is also present on markets in the Yonne, and in many sales outlets in the region.

Do you know the Duché, the biscuit that you dip in Chablis and that does not crumble? Born more than 150 years ago from the imagination of the Chablisian pastry chef Duché, it can now be found everywhere. Like the "Anis de Flavigny" or the "Nougats de Montélimar". Except that it is here and nowhere else that this delicious biscuit is made. In short, this is an obligatory gourmet stopover during your Chablis escapade. Just to build up your stocks!

Here you'll find everything that has made his reputation: nougats, lollipops, berlingots, marshmallows, pralines, fine wafers, cookies... Everything here is made in the purest tradition. And it's all 100% local. To wrap up your treats, you can even treat yourself to pretty boxes bearing the city's logo! Impossible to resist this 100% nostalgic address, and therefore 100% pleasurable! Under the Clock Tower, you will find there the best coffees and teas (Mariage Frères, Le Palais des Thés), as well as a wide selection of products made in Burgundy. Thomas Bouriquet proposes, in this store located near the quays of the Yonne, all the great classics as well as some beautiful discoveries (regional, but not only!). Les vignes and Céline Côte is a family story, but not only: the young woman studied biotechnology, viticulture and oenology to feed her know-how. White, red or rosé, in the wines Céline offers (all 100% organic), we find grape varieties such as Chardonnay, Pinot Noir, Tonnerre wines and elegant épineuil. Of particular note is the Destrier 2017 cuvée, which was worked with the Comté mare Absynthe on an old vine. An authentic wine, "sincere and faithful" like the mare. In short, an estate to be discovered.

Entirely planted in the Auxerre vineyard, the Maltoff estate is respectful of the environment and concerned with extreme quality. Their wines, Bourgogne Coulanges-la-Vineuse red, rosé or white, Crémant de Bourgogne and Ratafia, can be tasted in their vaulted cellar. Also note that the Maltoff family (Jean-Pierre, Odile and their daughter Chloé) offer four beautiful guest rooms (3 épis) in their house of character where you can enjoy the spacious setting. This 12-hectare family estate is spread over 4 communes: Beines, La Chapelle-Vautepeigne, Lignorelles and Villy. Petit-Chablis, Chablis and Chablis^1er cru Fourchaume are the appellations you'll be able to taste here. Wines that have often won awards, such as Petit Chablis 2021, gold medal winner at the Concours Général Agricole de Paris and at the Grand Concours des Vins de Chablis in 2023. Founded before 1198 on the Epineuil finage, this estate depended on the Cistercian Abbey of Notre Dame de Quincy, and dominates the village. This major winegrowing dependency of the Cistercian order now has 27 hectares of vines, developed in organic farming and producing Chablis,^1er cru Montée de Tonnerre, AOC Epineuil in red and rosé, and Crémants de Bourgogne. A magnificent place, managed by a real enthusiast. Four beautiful guest rooms are also available.

Winegrowers since the 17th century, these vine lovers have 12 hectares, 10 of which are in the Côte-Saint-Jacques appellation. Harvested by hand, this vineyard has a south-south-east exposure. It leans against the plateau of the Pays d'Othe, and has a soil composed of clay with a high proportion of flint on a Turonian subsoil. This mixture gives it its characteristic flinty taste. You are particularly advised to try their Burgundy Côte Saint-Jacques Blanc, a unique wine (made from a blend of Pinot Blanc and Chardonnay) of which the Vignot family is the sole producer.

Tradition and quality are the key words of this estate, which offers vintage wines, appreciated by connoisseurs, and which can be found on the best tables in France. All the parcels of the estate are planted within a 2 km radius, in the heart of the historic appellation. The result is four Grands Crus (Les Clos, Vaudésir, Les Preuses and Les Blanchots) and four Premiers Crus (Montée de Tonnerre, Fourchaume, Mont de Milieu and Les Vaillons). The reputation of Sénon's beers extends beyond the borders of the département. Founded in 1996, this craft brewery markets its brands "Thomas Becket" (the authentic ones), "Alesia" (the organic ones), and "Burgundia" (the original ones). In 2023, the highly qualitative "Héritage" was added. Or when the hops of Sençon invite whisky! In 2022, the brewery won no less than 7 medals at the Concours général de Paris and the Concours général de Lyon. Tours are also available.

Dating back to the ^11th and ^12th centuries, these magnificent cellars are a must-see! A family pride perpetuated today by Jean-Louis and Jean-Christophe Bersan, who cultivate 22 ha of vines. They produce several appellations, including Côtes-d'Auxerre, Aligoté, Saint-Bris and Chablis for the whites, Côtes-d'Auxerre, Bourgogne and Irancy for the reds, as well as Crémant and Ratafia. Not forgetting, of course, old Marc de Bourgogne.
