André Giauffret has been growing quails since 1992 for his olives, which he transforms into oil, paste and table olives, all certified AOP de Nice. But at La Sirole, you can also put your feet under the table of the family restaurant to taste these local products directly. A qualified photographer, Bruno Debon chose to make his dream come true by becoming an organic farmer about ten years ago, and now a winegrower. In front of his house located at the bottom of a limestone canyon near the Chateaudouble gorges, he began by planting 2,500 apple trees of six varieties, whose production he sells at nearby markets and to local AMAPs. He then rehabilitated his 2 ha of old vines with 5 grape varieties, to produce a very personal wine, organic of course and without inputs. A still confidential domain and wines that are a favourite.

In 2010, Mélanie and Christophe moved to the village to grow saffron at an altitude of 1000 m. The farm, which also includes plots of vegetables and red fruits, is entirely organic. Their meticulous work allows them to harvest the precious pistils of this violet flower, which can be found on the finest tables in the region, such as the Louis XV in Monaco. They also offer fresh or dried mountain mushrooms (ceps, chanterelles, morels), fresh eggs and homemade jams.

A delicatessen nestled in the former chapel of the Château de Gourdon. Here, the family manages the production and sale of delicious local products: honey, "homemade" jams, goat's cheese, sausages, flavored oils, mustards and vinegars, terrines and aromatic herbs... Tétou was the nickname of the owner's grandfather, and she wanted to pay tribute to him. A return to her roots, the need to evolve in nature and in contact with animals. She opted to raise goats, a relatively rare choice in a valley dominated by cows and sheep. With her 70-head herd, she makes cheese from April to October at the Venanson vacherie. This mini-market in the heart of the village of Bouyon offers a wide range of services. Groceries, fresh produce and a wide choice of organic and local products. A real showcase for local producers! Vival is not only a local store, but also a place where people can meet and exchange ideas, strengthening social ties in rural communities. It's also possible to withdraw cash. In fact, it's the only place where you can do so in the Haute Pays, along with L'épicerie des Patous in Gréolières.

The authentic and gourmet address par excellence! Settled in Bras since 1977, Betrand Allais offers bread directly from the field to the mouth! Explanations: as a cereal grower, miller and baker, he takes care of the entire production chain himself. Domaine Saint-Jean was created in 2006 by Nathalie and Jean-Patrick Pacioselli, in the heart of the Bellet AOC, in the hills of western Nice. The couple runs a young farm certified in organic farming. The typical grape varieties of the Bellet appellation, such as rolle, folle noire and braquet, have recently been planted on the estate and produce rosé and red wines that regularly win awards at the Concours Général Agricole. A little anecdote: the wines of the estate have even been included in the Musée Masséna.

Bianca's desire to return to her family's passion for cheese (her grandmother was a cheese maker in Corsica) led her to embark on this wonderful adventure.
